PUMPKIN WITH PORK

This is pretty much a stir-fry, except that you have to use liquid to cook the pumpkin. Or maybe you could stir fry it. I haven't tried doing it that way. If you want to try it, skip the broth and add some oil or more bacon grease.

1 slice thick bacon, diced
2 c fresh, peeled and sliced pumpkin (pie pumpkin is best, other will do)
1 medium yellow onion, peeled and sliced
1/2 c chicken broth
1 pound pork butt or shoulder
1/2 t ground cumin
Salt and pepper to taste

Cut the pumpkin into pieces about 1/2" wide, about 2" long, and as deep as the pumpkin flesh is. Cut the pork into pieces about the same size. Think stir-fry size.

In a frying pan or wok, saute the bacon until it is transparent. Add the pumpkin and onion. Stir around in the rendered bacon fat. Add the broth. Cover and cook over medium heat until the pumpkin is tender, about 15 minutes. Remove the vegetables from the pan.

Reheat the pan and saute the pork until done, about 5 minutes. Add the vegetables to the pan and toss with the cumin, salt and pepper. Cover for just a minute so that the flavors develop.
