POPCKETFUL, I've heard tell that you can also get "chicken cracklins" locally if you're in the Southeast and online otherwise. They might work for both of you. Always meant to try them.

That sounds fab, we bread chicken with just parm/mayo. DH is disgusted by pork rinds so I will have to try it when when he is away.

I bake my chicken dipped in mayo and then a mixture of crushed pork rinds and parmesan cheese. I don't think I'd ever want to go back to using bread crumbs!! Yum!!!

Ooh, that does look good. My DH found a recipe for pork chops similar to that. The mayo really seals in the moisture - they're so tender!

I made this low carb by replacing the bread crumbs with about a teaspoon of Italian seasoning, it was awesome! I used about 1 pound of chicken breast, it only took about 25 minutes to bake.
