Great thread! My Mom used to spread cream cheese on a slice of ham, roll it around a green onion, and slice them up into appetizer pinwheels. Today I was looking at ham at the grocery store, but the ones I saw had sugar in them, so I can't have it. (In induction phase.)

I do have some beef slices, so will make those up. Love the pepperoni idea, too.

Deviled eggs would be good, too.

Low Carb is working for me!

One of my favorite Atkins snacks is pepperoni chips. I basically microwave some sliced pepperoni for less than a minute and they become like chips when you cool them. Very crispy and awesome! I too liked the roast beef and cream cheese idea. I'm going to try that...

I like to put about 1/2 cup of cottage cheese on some jello in a bowl and add a little chopped walnuts on top. Nice snack.

Oddly enough, the reason this diet is working for me is probably a combination of factors - first, the whole scientific thing of carbs raising blood sugar, etc, etc, etc, the second is because I hate cheese (except melted in grilled cheese or melted mozzarella), and I am not a big fan of meat either. I'll eat meat at meals, but the rest of the time, I don't.

So, I eat nuts - natural peanut butter, walnuts and almonds. I think you are supposed to avoid them on induction, but I count out my portions carefully, anyway.

I also eat jello. I have a measuring cup that I use to make the package of jello and just keep it filled in the refrigerator. I have that with some whipped cream.

Another staple for me is Pepperidge farm low carb bread (5g net carbs per slice). I'll make half a grilled cheese sandwich, half a peanut butter sandwich, or I'll just toast a slice and butter it.

I use Ricotta cheese. Put in Stevia and any extract like almond, or lemon juice. Or cocoa powder and vanilla....a great dessert!!

I bought some Okra pickles the other day. The label stated "Crisp." They were really good. Basically no carbs.

Cream cheese is a great snack. I add all kinds of thinigs to it. It is good with a bit of sugar free jello powder mixed in it. Or cocoa powder and some splenda, of peanut butter and splenda. That one may not be induction friendly. I sometimes put some sour cream in with these too to make them a bit softer or fluffier. You could also make them savory with smoked salmon or olivers or whatever else you might want in it.

Wow! Thanks for all the great suggestions, y'all! I'll for sure try some of these.

I especially love the roast beef/cream cheese roll-up idea. It's like lunchmeat sushi!! Oh man. We make these roll-ups with corned beef or ham spread with cream cheese with a bit of horseradish, rolled around a pickle. As I found out dill pickles are OK (count them like cucumbers, woo! but make sure they don't have any sugar) this is a great idea, and one that never would have occured to me on my own. ;) Will also try with the pepperonicinis, and with green onion, maybe some strips of red pepper... What an excellent idea!

I wonder how many carbs are in sushi nori... Maybe I could make riceless sushi...

What you listed sounds better than anything I eat.

Salami flat with a thin slice of tomato, a small chunk of cream cheese and a hint of pepper ... a plate of 5 to 7 ... one of my favorite snacks.

thick sliced deli roast beef rolled up around some luscious cream cheese ... with a couple sliced pepperoncinis or sliced olives

crispy bacon strips dipped in mustard

celerey stuffed with tuna salad

tuna on pork rinds

ATKINS ALL THE WAY!

Nuts, seeds, hard boiled eggs, avocado, beef jerky. Gosh. I eat low carb peanut butter cookies and low carb sandwich bread and low carb pasta. All homemade. I stay under 50 total grams of carb per day.

I keep lots of hard-boiled eggs on hand - peel one and put mayo on it as a snack.

I need some ideas for good, easy snacks, preferably with some good fat in them (olive oil, other oils, butter, mayo is OK). I donít always get as much fat in as I should, and sometimes struggle to get all my 12-15 net carbs of foundation veggies.

Hereís what Iíve got so far:
-Chicken salad (chicken, mayo, spices) on celery and red pepper strips
-Crap dip (on what? Eat it with a spoon? Maybe better for dinner, on fish or something)
-Celery, red pepper strips, green onions, daikon radish, cucumberÖ in Atkins recipe low carb garlic ranch dressing

Trying to incorporate some fats and protein in there as well as the best veggies.

Anyone got any great suggestions?
