I did not meet my goal of 12 lbs that I set in week one but I did lose 9.8 lbs so I'm not going to beat myself up too badly. A pound and a half per week would be a wonderful achievement if I can continue to do it consistently.

I stuck to my exercise goal, but MAN it was hard! 5 emoticon 's

My goal at the beginning of the challenge was to exercise regularly and to lose 2 pounds per week. I have met the exercise more regularly, but I fell short of the 2 pounds per week. With my anticipated loss tomorrow, I'll probably hit 10 pounds. I'm happy with that, though, and I'll keep on pushing! 5 emoticon 's

That gets me the bonus. emoticon

I stuck to my goal that I set the first week of the challenge. I said I wanted to lose 10-15 pounds and as of today, I have lost 14.9 pounds. I am feeling good about that. I didn't meet my exercise goal for the week as I ended up in ER yesterday with a migraine and I have it still today, so I have been in bed all day. I never got the Leslie Sansone Videos in like I had planned. That's 2 goals I didn't meet. I missed out on the fast food challenge too, so I don't get the extra 25 flowers. I'm pretty bummed because I worked so hard to meet all the goals and they got me in the end. I am pretty rummy today since they gave me a shot of morphine and then gave me prednisone and zofran by mouth and gave me a prescription of 6 percocet to take home to help with the headache today. I am glad I don't get the really bad headaches that often where I have to go get shots. Maybe 3-4 times a year. This has been fun working with all of you and I will talk to you all tomorrow at weigh-in!!

Sadly, I did not stick to my exercise goal this week. I just couldn't seem to get together the energy to do it, plus with family visiting and what-not, I never really felt like I had the time anyway.

This was the first of the mini challenges that I didn't complete. emoticon to everyone who did them all!

I ate within my calorie range Wednesday.

I stuck to my exercise plan which meant some adjusting because of the Holiday but I did it.

And.. I have participated in all of the mini challenges so an extra 25 for me.

I stayed in range and drank my water Wednesday. So 5 emoticon 's for me.

I'm especially proud of myself because I stayed in range yesterday! We went to Applebee's for dinner, and even though I was really (REALLY) tempted by a quesidilla burger, I ordered my strawberry and avocado sald instead!

Just have to quickly share my new favorite breakfast....hardly a recipe. But I cut up an entire apple and simmer it in a little water, then I had the 3/4 cup water called for and 1/4 cup steel cut oats. ( I have found a quick steel cut oats that only takes 5 minutes). Let it all cook, add cinnamon and a little brown sugar. Makes a great filling breakfast and with the entire apple, it makes a full bowl. It is 5 weight watchers points if I use a tablespoon of brown sugar or honey.

This is a journey, not a race!

Oh this is hard I have so many. I think one of my favorites is stuffed zucchini.

1 box of stove top mixed as package directions
6 small zucchini cut in half and middle removed
1/4 cup light cheddar cheese.

Fill the zucchini halves with stove top, sprinkle with cheese, bake for 25 minutes at 350 or until squash are tender my family loves squash and this is one of our favorite recipes we also just like it steamed with a little I can't believe it is not butter spray or spread.

One of my favorite healthy recipes is Chicken Tortilla Soup.

You can use canned chicken, but I've started buying and cooking chicken breasts in bulk, so I used shredded chicken.

2 shredded chicken breasts
1 can Rotel tomatoes (I like lime and cilantro, but you can use the kind with green chili's too)
1 can low sodium black beans
1 can low sodium whole kernel corn
2 cans lowfat cream of chicken soup
1 large carton reduced sodium chicken broth

Mix this all together in a large pot and heat to nearly boiling, then reduce heat and simmer for at least 15 minutes. This is delicious by itself, but you can serve it with tortilla chips. Some people also like to put a dollop of sour cream in.

Ben, My kids loved that when they little. They also put raisins on top of the peanut butter and called it "Ants on a log". LOL That's one of my fave quick snacks.

My Favorite Healthy Recipe:


Celery and Peanut Butter

1 stalk celery, medium
1 Tbsp Peanut Butter


Directions:

Take 1 Tbsp Peanut Butter, spread on 1 stalk Celery, using knife, spoon, tongue, etc. Enjoy!


Serving Size:

Makes 1 stalk





(Sorry. None of my other recipes are really what you could consider "healthy")

Cranberry Jello Salad

3 small boxes of raspberry jell-o
1 large can of crushed pineapple
1 can of jellied cranberry sauce
2 cup of boiling water
1 cup of diet 7up
8 oz of fat free cream cheese
8 oz of fat free whipped topping

Directions

Put in blender I can of cranberry sauce with 1 large can of crushed pineapple and blend. Dissolve 3 small packages of jell-p in 2 cups of boiling water and to to blended mix. Add ginger ale or 7-up and mix together. Pour in a 9 x 13 pan to set over night. Before serving, mix together one softened brick of fat free cream cheese with 1 container of fat free cool whip and spread over the top of the jello. Cut into 24 squares and serve.


Serving Size: Makes 24 2 1/4 inch pieces


This is a family favorite especially around Thanksgiving and Christmas, but I love it year round. You can't tell it has pineapple in it, so we've fed it to people who say they hate pineapple and they love it. It also only has 1 Weight Watcher's point per serving. The original recipe calls for sliced almonds over the top as well, so you can add them if you are so inclined. I love nuts, so I put them on mine. I hope you will try this sometime. It is really good!!

Berry Feta Salad
supposed to serve 4 but hubby and I usually divide this between us and make a meal out of it

Ingredients
1 5oz pkg mixed baby greens or baby spinach
1 cup fresh sliced strawberries
1 cup fresh blueberries
1/2 cup dried cranberries (unsweetened)
1/2-1 cup feta cheese
3-4 Tblsp. chopped walnuts or slivered almonds- toasted

Mix all together. This is great served with a Raspberry Balsamic Vinaigrette

Fresh Raspberry Balsamic Vinaigrette Dressing
1 cup fresh raspberries- quartered
1 tablespoon white sugar
2/3 cup balsamic vinegar
1/4 cup olive oil
1 tablespoon honey
1/2 teaspoon salt

Mix raspberries and sugar together in a bowl; set aside until mixture is juicy, about 10 minutes. Mash berries using a fork until liquefied. Pour berry mixture into a jar with a lid; add balsamic vinegar, olive oil, honey, and salt. Cover jar with lid and shake until dressing is mixed well. Store in refrigerator. ** NOTE: You may use a food processor or blender if desired to make the dressing very smooth.

hmmm so many.. but I would have to say my farro and lentil salad

cook farro according to directions

1 box farro
2 cups of cooked or steamed lentils, (I buy the maries steamed lentils) rinse them very well
1/2 red onion chopped
1/4 cup of parsley chopped
2 to 3 tbs of your favorite low cal Italian dressing

when faro cools put 1 1/2 cup in mixing bowl add the rinsed steamed lentils
onion, and parsley and dressing..if too dry add a bit more dressing.. stir up cover with plastic and put in frig for about 2 hours.. serve cold.. it is soooooooo good

if you don't like farro which is a grain.. you can use brown rice.. which I have and it is just as good.. the only thing I would not use is bugular wheat.. that is too fine to use..

Francie, I hope you get the leg feeling better soon. As for the exercise, don't fret over not being able to do as much as usual. As long as you are doing something, you're doing more than nothing. And that's something!

Sorry, but I failed the fast food challenge. I was out running errands all day and picked up something while I was out for dinner. No flowers for me.

My exercise plan for next week is to walk at least 20 minutes 5 days out of the week. That is doable for me because I am always running errands and getting out and walking around. I am also going to try to add Leslie Sansone's WATP at least 2 times during the week and do at least a mile each time. That should be easy enough for me anymore. I haven't tried it since I could only do 1/2 a mile and then I would have to stop the DVD and take breaks about 2 or 3 times because I couldn't keep up with her. I've come a long way since then. It should be a good test. 5 emoticon 's please!

It doesn't look promising for the exercise this coming week. My leg muscle has decided to kick up again and worse than before. It is hurting all way down the front part of leg plus around the knee. Best I can do will be to do 15-20 minutes of chair exercises each day.

I walked for 1 hour today. Not a real fast pace as I was shopping at Costco, but there was a lot of lifting, bending and stretching too. I hope that equates to at least 15 minutes of exercise. 5 emoticon 's please!

Did the weigh in and lost 1.4 --- on the right track.

Goals for the next two weeks. Stay with the exercise and track EVERYTHING --- stop the little bits of this or that and not counting it.....all those littles add up. Get better with getting in some dairy and the recommended daily oils

Howdy, Thunder Stormers!

Weighed in with a 1.2 pound loss this week. Had a bit of setback over the weekend. I kind of wonder if running the tiller in Heather's flower beds caused me a bit of sore-muscle water retention. I was down 2.7 Saturday morning. Why does weigh in have to be after the weekend? Weekends are the devil!

My goals for the last 2 weeks of the challenge:
1) More exercise
2) Better control of my boredom snacking
3) Boost my water intake, 8+ per day
4) More self control on the weekends (which are the devil!)

Hey Laurie ! I am right there with you..except I'm only down 0.5lbs.. ya know its all good! Its still a move in the right direction! You are dealing with a lot of stress.. and have come sooo far.. its gonna get better!!

I've been around too many lazy people and I let it rub off on me. I can easily say the only reason I am not showing a gain is the ridiculous lawn I have to mow! I think I sweat off 2lbs each time and it wasn't even hot! Plus I indulged in bday cake and some extra snacks..

So my goal the next two weeks is on workdays to go alone if I have to and walk at least 1 mile. At least 5 days a week to do the Wii fit. .. been doing that the last 2 days .. I like the Yoga for the strength exercises.... but wonder if I'm anywhere near correct on the form. Well as long as I keep moving right! Have not been keeping my water intake up so that is a priority these next two weeks. In the next two weeks Id like to loose another 4 lbs..

Hi Everyone!

I was down a whole whopping .1 pound! a tenth of a pound~LOL!! Oh well, it was better than a gain I suppose. Considering the extreme emotional stress I am under right now, I will take it. I just wish I could get my personal affairs in order. I have only been in 2 long term relationships before like this and one we were on bad terms by this point and fighting all the time and the other was my ex husband and we were talking through counseling so at least there was a mediator to help us navigate the rocky roads. In this case, Lonnie says he loves me and he doesn't want to break up and I'm the one that thinks the relationship is over and thinks we should move on and feels used. I wonder if I asked him to go to counseling if he would go? I'd have to call my old counselor and see if she would see us as a couple.
My goals for the last 2 weeks of the challenge are to start watching what I am eating more and no more sweets like I have indulged in this past week. I think that was why I didn't lose. I also want to add more activity to my routine and also eat breakfast every morning. I will go to Costco and buy a package of sliced apples and eat a package a day.

Well the scale is moving down.. I lost the 2lbs that I gained last week, but I had weighed my self on Friday and it was down 3 so today it is up 1 from Friday but down 2 from last week..
and this is what I deal with all the time down 3 up 1 .. up 2 down 1.. I mean it is a little frustrating.. but I am rolling with it ..

Saturday.. Challenge try a new recipe..

I made this before and it is new to me I made again this weekend it is a
cleansing water drink what you need is :

1 qt water pitcher
1 lemon
1 small cucumber
small bunch of mint leaves
fresh ginger grated to 2 tsps.

Peal cucumber and slice in 1/2 inch slices
slice lemon in 1/2 inch slices
place lemon, and cumber and mint in pitcher add water and set in frig for one hour.
after the hour drink water through out the day.

I make this on Thursday night and drank the 1qt all day Friday then filled it again with water and drank it all day Saturday, don't let it go over 3 days..

Hawaiian Crockpot Chicken

1 C. pineapple juice
1/2 C. packed brown sugar
1/3 C. light soy sauce
2 pounds of chicken breast tenderloins

Put all ingredients in the crockpot on low for 6-8 hours and the chicken should be falling apart when it is done. This is so yummy served with brown rice or with yakisoba and stir fry vegetables. Takes less than 5 minutes to make and you have a yummy dinner to eat. I actually will even cook when it comes to making this!!

I had for lunch portobello mushrooms with cheese and tomato

take the mushroom and brush with olive oil
cook for 12 minutes flipping every 4 min.
on the last flip put cut up tomatoes and cheese
cook til cheese melts.

ok somehow I posted to the wrong thread today I am making black bean soup. Using a variation of the recipe here on sparkpeople theirs calls for canned beans, I am using fresh so hence some changes:

1 cup black beans soaked overnight
2 cups water
1 low sodium chicken bouillon
1 cup salsa
Crock pot low for 6 hours, we shall see

New Recipe made for our Graduate supper tomorrow night at church. Chilling in fridge. I had a taste. YUMMY!! 10 emoticon

Fruit Salad
1 (29 ounce) can peach slices (in juice- not syrup)
1 (20 ounce) can pineapple chunks (juice pack)
1 (3 1/8 ounce) box dry vanilla sugar free/fat free instant pudding mix
1 lb strawberry, (quartered)- 2-3 cups
1 banana, (sliced)
1/2 pint blueberries
1 bunch -about 2 cups- grapes

Directions:
In a large bowl, combine peaches, pineapples, and vanilla pudding mix. This includes the juices from the cans. Mix well until pudding is dissolved. Stir in strawberries, banana, blueberries, and grapes Chill.

My something new I did is I have started doing exercises using kettle bells. That will give you a full body workout for sure.

Something positive about myself.....hmmm....if I had to pick my best quality I would say it's that I have a big heart. I tend to take in strays of all sorts (people and animals). I love to help people UNTIL I feel I'm being taken advantage of and then the tune changes.....but I keep taking in strays hoping one day someone/thing will show appreciation! :) Also, I'm smart too. :P

For Wednesday I tried a new type of cookie that I got at the meat market. Now I know I shouldn't be eating cookies, but they looked really good and I wanted something sweet, so I tried the cranberry oatmeal cookies. They are really yummy!! Now I have to figure out what to do with the other 4 cookies.........

I made pizza using microwaved shredded cheese at the crust with pepperoni and hotsauce. It was delicious!

OK, this is going to sound like a weird one. My something new for today was...

Wait for it...


TUNA FISH. On a cracker.


Now,now; let me explain... I have never liked Tuna fish. Not from the very first time I got even just a smell of it. Not no way, not no how. So, after reading all of the wonderful things Tuna has going for it, like the "good source of protein", and the "Omega-3", and the blah blah blah. I've been thinking that maybe it's time I put my childhood dislikes to rest, and learn to like something that's good for me,

I made a new dessert tonight. It was sugar free cherry jello, sugar free chocolate pudding, and fat free cool whip. I modified it from a dreamsicle pudding recipe, and it turned out fabulous! I was having some serious chocolate craving, so this was just the thing!
