Pumpkin mousse/sauce
Ok, so I have to share this recipe! Super easy! All you need is
a vitamix or nutraninja or similar high speed blender
15 oz. of raw cooked pumpkin purée
A whole medium banana
Ceylon cinnamon, a few good shakes, or about 3/4 of a tsp.
A pinch of allspice
A pinch of nutmeg
A pinch of ginger
2 packets of stevia in the raw
Put all ingredients in the vitamix or other quality high speed blender. Work the blender up to high speed. Let work until thouroughly mixed.
So good!
Makes 2-1 cup servings



For dinner tonight I had some delicious pepper soup without the rice. It consisted of:
2 large cans diced tomatoes
2 cups chicken stock
1 can tomato paste
1 medium onion diced
1 green pepper diced
1 red bell pepper diced
2 garlic cloves minced
Browned ground beef 3/4 lb
1 tsp. Himalayan salt
Pepper to taste
Cumin- a few big pinches
Parsley- about 2 tablespoons
Cayenne pepper-a good sized pinch
1 tsp Paprika
1 tsp onion powder
1 tsp garlic powder
1/2 tsp. Of turmeric
Put all ingredients in a medium-large sized pot and mix the spices in. Cover with a lid on about 4 and let it boil for 30 minutes. Delicious.
You will have leftovers if it's just you eating it. Otherwise this makes enough for 3 people to have about 1-4 cup serving each.

So this Paprika Chicken turned out pretty good:

I made a few minor adjustments to the spices. I didn't have Rosemary but I added Marjoram instead, and I added in about a tsp of tumeric and a tsp of allspice.

Only I used Mexican cheese instead of pepper jack and added some chopped swiss chard to the cauliflower. Even the husband approved of this one!
