Blueberry-Ricotta Squares

Not quite cheescake, but VERY yummy
80 Minutes to Prepare and Cook


Ingredients

1 cup flour
3/4 cup sugar
1-1/4 tsp baking powder
1/4 tsp salt

1/3 cup nonfat milk
1/4 cup shortening
1 egg
1/2 tsp vanilla extract

1-1/2 cups fresh blueberries (you can substitute partially thawed frozen blueberries)

2 eggs
1-1/4 cups part skim ricotta cheese
1/3 cup sugar
1/4 tsp vanilla extract


Directions

In a small bowl combine first four ingredients (flour - salt). Add next four (milk - vanilla). Beat with an electric mixer on low speed until combined. Beat on medium speed one minute. Pour into greased 9x9x2 pan; spread evenly. Sprinkle blueberries over batter.
In a medium bowl mix remaining 2 eggs with a fork. Add ricotta, sugar and vanilla, beat until combined. Pour over blueberries and spread evenly.
Bake at 350 for 55 to 60 minutes, or until a knife inserted near the center comes out clean. Cool and cut into 16 squares. Store, covered, in the refrigerator. Good warm; extra-yummy cold!
I have never tried substituting Splenda for sugar or egg whites instead or whole eggs, but I am betting it could easily be done in this recipe!

It may be a New England thing because I beleive most of the fiddleheads are harvested right in your backyard in Maine.

Looks like no one took the challenge of 1 hour in the tub??? That would be a tough one, especially for a mom with little kids! Although it would be heavenly... You may end up looking like a prune at the end of it though!

I challenge you to make the smoothie recipe.

Here's my recipe:

1 C. Frozen Berries (whatever you like)

1/2 C. Frozen Peaches

1 6 oz. Container Yogurt (flavor of your choice)

1/4 C. orange juice or milk

1 t. Sugar, if desired

This is the recipe I use over & over again. I like frozen cherries, blueberries, mixed berries, etc.

What a great challenge! I waited a few hours to see if anyone else would snatch it because I don't want to hog all the points! lol But no one did so I will!

Okay... so I'm a couple of weeks behind...

I accept your challenge to do 25 back extensions,

and I challenge you to 20 Bridge-Ups reps

CHALLENGE POINTS 10 emoticon

1. Begin seated on floor, knees bent, feet flat, arms bent with hands on floor below shoulders.

2. EXHALE: Straighten arms (don't lock elbows), allowing butt/hips to rise off of ground until your body from your head to your knees is in a straight line parallel to the floor. Hold for 2 counts.

INHALE: Return to starting position for one rep.

3. Keep glutes squeezed and tailbone tucked in. Tighten abs to help straighten body. At highest position, knees should be bent at 90 degrees.

Muscles Worked: Abs, Lower back, Shoulders
