Made leftover sparerib veggie soup for lunch today and dinner last night. Delicious. I originally made the spareribs in crockpot and it makes the most lovely juice. This time I put chopped carrots, onion, peppers in the bottom of pot and just a squirt or two of bar-b-q sauce for flavor. the ribs make their own juice with a bit of water or chicken stock in bottom. I saved all the extra juice and after cooling in fridge, took off all the fat. Then it became the basis for the soup and the rest of the ribs went into it for the meat. Added potatoes and carrots and canned tomatoes and will take the rest into church today for lunch. Carol

Evan on vacation I tried to be good. Salad for lunch every day, limited carbs for dinner, lots of water.

Today had venison tenderloin wrapped in bacon (son in law was cooking) and it was sooooo good.

We ate Mexican last night. I veered off and the food wasn't worth veering off for. Back at it today. Have a lower fat recipe in crock pot today using round steak.

We've been having scrambled eggs (no butter) with chopped onion and sweet peppers almost every morning. We also have some fruit and sometimes a slice of toast. This is keeping me more satisfied for the morning.

I find sugar is my kryptonite so staying away from it is easier than indulging. That is how I quit smoking. When the urge hit me I just waited it out saying "you do you die" and the urge would leave.

July is marked by 3 potluck dinners. Last night the County Commissioners treated the Fair workers to Bar-b-Que and everyone else brought a dish. The desserts were incredible but much to my amazement I did not eat any. I had a small portion of beef, a great (and healthy) salad and grapes for dessert. I'm very proud of myself and don't feel the least deprived. My sugar detox is working magic.

Yesterday I made homemade broccoli cheese soup. It took an hour to chop and cook but worth the effort. I had a head of broccoli that was past the time for it to be steamed. And some leftover half and half. Made a nice creamy soup. Carol

I use the food processor, but HG author recommends not doing this. She recommends a blender. I find the food processor quick and easy and do small batches at a time. Storing uncooked cauliflower in a bag does not smell anything up. Try just serving your entrée on top of raw cauliflower and then heat up the whole thing before serving. I think not overcooking is a key to making it more ricelike. If cooked, store in something with a tight lid.

I cook the cauliflower very little (sometimes not at all as the heat of the food is often enough to warm it for me--like a little crunch to it). Sometimes, I even store it separately uncooked and add it at the time I reheat. Cauliflower tends to absorb flavors of what ever you cook it with.

I've tried to embrace cauliflower rice. I like it but the leftovers don't like the fridge. They start to smell. We have gotten to the point of not eating potatoes and rice in most cases anyway. I eat Daves Good Seeds bread in the mornings with either brie cheese or 2 eggs. I like the bread to be crunchy and it is the perfect size. That is about it for breads and carbs for the day in most cases. Carol

I made versions of the Simply 6 hungry girl recipes. One was cauliflower arros con pollo. Even though I added a can of green chilis to this recipe, it was still a bit on the bland side. I do like the concept and will bump up the spices next time. The other was a chicken and cauliflower rice type stir fry. I ended up making my own version as I really didn't want it to be sweet (I used the picture for inspiration more than anything). We enjoyed it very much and I will still try the other recipe at another time.

Have been tracking all week.
Tried a new recipe from the Fix it and Forget it Diabetic Cookbook. It was for an Herbed Beef Stew. Very good and good for us too. We have a bunch of round steaks in the freezer from the last side of beef so I have to get creative to use them and make them healthy.

I just had a bowl lunch--black olives, spring salad greens, low fat cottage cheese, shredded chicken topped with some walden farm Italian dressing (love walden farm Italian and Raspberry dressings--pricy but very low calorie). I also had a nectarine.

I did pick up some different ingredient's to try a few different recipes this week. I will be using the Simply 6 Hungry Girl cookbook. I also paged through a meal prepping cookbook.

We got a new crockpot and I made bread pudding with peaches for the church coffee this am. I sneaked a taste and it was good but I had shaved the sugar and had to add a bit more to it. However, for a breakfast, not being too sweet might be better. I find recipes call for too much sugar sometimes, this one was 1 1/2 cups but I had added more bread so should have kept it there. I make the same things over and over now. I'm in a big rut and will have to change that as I have added back in some not so good foods for variety because I am tired of all the same menus. I don't track either and I know I overdo the calories. It is more of a tired of the rut and lack of good motivation etc. I have some wonderful cookbooks for inspiration and it is a great time of the year to use them.

Hubby made ribs in our new crockpot last night. Delicious. I couldn't bear to throw out the juice collected so I cooked it down a bit and added a chopped tomato that needed to be used. It is now in the freezer and will likely go in the pot with the next meal of ribs. Or use it to marinate something, like chicken breasts. Carol

Berry, I would count that as a new recipe.

Today I changed the dry rub on the ribs. I thought they were good, but hubby likes the old recipe.

Neither part of the challenge works for me. -- Logging just isn't going to happen. Too time consuming & too inaccurate. (I always say that my body is NOT a human calculator. Too many other variables go into what determines how my body uses what I take in...)

Summer is not a time for me to try new recipes. I just go w/ whatever is fresh & easy.

emoticon Cod was on sale at the grocery store, so tonight it was cod marinated in butter w/ sliced onions & an herbal seasoning mix. Add to that, wild rice on a bed of spinach. Frozen raspberries w/ heavy whipped cream for dessert!

Guess it was "new" since I can't remember the last time I cooked it, and the seasoning mix was "new" to me as well! -- Should have added some riced cauliflower in with the butter & fish!

I tend to eat the same things, too. But I'm not losing, so thought I'd try to "lighten up" my recipes.

Part of the reason I eat the same things is it is easy. I know the numbers and how satisfying the food is. No surprises.
