Amy, that sounds good. Pop it in the toaster oven to melt the cheese a bit. Yum.

Transformation Tuesday - Share an old recipe that can be transformed to make it healthier.

I made some vegetable soup and used cauliflower stems cut up in place of potatoes. Not quite the same, but not bad.

I think I'm in the mood for spaghetti. I'll make a nice tomato based meat sauce to serve over zucchini noodles. Of course I'm making shredded chicken. I have been making open faced chicken sandwiches for lunch lately. I love the small campari tomatoes along with a little mayo, spices and a green onion for the sandwich.

I could have sworn I did Sat and Sunday. Sorry I missed them. That brings us back to Monday.

Market Monday - Plan your shopping list for the week.

We have dinners planned for the retreat, but breakfast and lunch will be fix your own. I'm taking salad fixins for lunches, and yogurt and fruit for breakfast. The exercise may be a bit of a problem, but will work out something.

Carol, I have used bread crumbs, crackers, cereal, Parmesan cheese, nuts, and combinations of the above to crust chicken, pork chops and fish. Gotta use what you got, and none of them were bad.

Marge that makes sense. Amy, sounds delicious! We had chicken last night rubbed with mayo and dusted with potato chips. Trying to use what I had. Hubby's mother used to bake it like this. The only Aldi's I have ever been in was in Swindon, England last year when we went to visit. None around here. Too many Walmarts all over. Since we are leaving on Friday for two weeks our larder is bare and no shopping in sight. Carol

Linda, I do so miss having a Kroger. They had the best meat market.

Marge, they also shrink the size of the sections and change what they carry.

Amy, we use the same marinade! Love it. Sure wish we had an Aldi's near me. There is one near my mom and I shop there when we visit.

Workout Wednesday - Find a new exercise to spice up your week.

I have got to get back to my weights. Hubby keeps a weight under the coffee table and uses it while watching TV. I need to do the same

I agree with the grocery store reset conversation. Not all Aldi stores are set up the same way. Yesterday, I shopped at one closest to my house, but not my regular one. It is very different from the other ones and they have reset set the store a few times since they remodeled it. They won yesterday....I did buy extra things! I have been wanting garden boots for some time now and I found a pair there! I did buy healthy groceries. Besides shredded chicken, I made Easy Balsamic Chicken.

Marinate chicken for 1-4 hours before grilling.
4 boneless skinless chicken breast halves lightly pounded to about 1/2 inch thickness
1/4 cup balsamic vinegar (I use a bit more)
1/4 cup olive oil (I use less)
3 cloves garlic, minced (I use a good amount of granulated onion and granulated garlic)
1/4 tsp salt (I skip this)
1/4 tsp of crushed red pepper (sometimes I skip and other times I use white pepper)

Mix marinade ingredients together and marinade for 1-4 hours (I marinade 4 hours) before grilling.

Grocery stores reset because people get set in their ways and go in and know just where things are, grab what they want and leave. They reset so people have to look around for an item, hoping you will grab more than you came in for as you look around. One of their marketing ploys. It is very frustrating. One of our stores recently did it as well.

I wonder why grocery stores do that? I will be cooking dinner tonight but not sure what we are having. Will probably take out some chicken to bake. Will probably try to clean out the fridge of what will spoil while we will be gone. Carol

The Kroger store about 15 miles away did a reset since I'd been there last. I got lots of extra steps trying to find things. But, I only bought good for us food! Had to take granddaughter Maddie to track practice so I used that opportunity to go there as this is busy season and I barely have time to go to the local store and pick up odds and ends as I need them. Unfortunately, their produce department is absolutely horrible so I was happy to get to go to the Kroger store. Bonus to shuttling grands around.

The grocery store is doing a reset, so had to look for some things. And as luck would have it, they now stock tahani! Had to get some and made hummus when I got home.

We do very few carry-outs. Pizza is the main one but that is certainly not on the diet plan. The closest thing I would say would be to have some cooked frozen chicken strips available and use those with salad fixings or make chicken fajitas (peppers, onions and tortillas top with a few drops of hot sauce).

I think Fried rice from a Thai restaurant is fairly healthy. And if you share one, it is a good portion size. They use minimal oil to stir fry it and it has pork or chicken, onions, bits of carrot and of course rice. It usually comes with cucumber and tomato sliced. Nix the fried egg rolls. Carol

I used to make lasagna all the time and have made spinach before. I like to thicken things with a grated potato rather than flour or cornstarch. Makes a good soup. I've tried those no cook lasagna noodles and they are ok. Carol

Cornstarch is typically used instead of flour in gluten free cooking. There is a ratio to do that as it takes much less cornstarch than flour to thicken something. The flavor is a little different.

We have made lasagna with zucchini noodles. To do that, you cut slices along the length of a larger zucchini. The slices are then sweated by sprinkling them with salt on paper towel and then you dry them (wipe off the sweat). After they are sweated, you layer them like regular lasagna noodles. Don't overbake it and lasagna made this way with or without meat is delicious.

Bev, I don't know why the gluten free lasagna wouldn't work. The lasagna noodles are such a "small" part of that recipe. Of course that might be because I doubled the spinach called for. Also, the recipe list calls for fresh spinach, which our little grocery store didn't have. So I used frozen and thawed and drained it. Funny thing when you read the directions, they're using frozen spinach! Next time I won't add the water on the edges that they called for before baking. Still not sure what that was for. I might add 1/4 cup but 1 cup was too much.

Tip for staying on track--plan ahead (I can't seem to get that done) :(

Linda, I enjoy meatless meals, too. I bought a spaghetti squash and plan to have it tomorrow. Wonder how the lasagna would be with gluten free noodles? I have some in the pantry, may try it.

I tried the 15 minute office work out, but my hip did not like it, so just walked today.

Don't know if there'll be time for a new exercise but I'll try.

Bev, we finished the low fat spinach lasagna and hubby remarked that he could eat that everyday. I'm not going to go that far but I will keep it in the rotation. Good to have a meal that's meatless once in a while.

I just thought of an idea in one of my cookbooks to share. Use a hard cooked egg as a shell for a mini sandwich instead of bread. Put a filling with meat in the scooped out egg yolk hole and have it extend onto the white. Top with other fixings such as lettuce, tomato, onion. Place the other half of the egg white (or include the yolk) on top and hold together with a toothpick. These looked very cute in the picture that came with the recipe.

Very good link Bev. My newer cookbooks make single servings easier by rolling the ingredients like a pinwheel in a noodle rather than layering. It is nice to have a group of options. I bet you could also freeze single size portions.

We really don't go to many pot lucks, but I do like to freeze portions of larger recipes.

No, the scrubbies are made of yarn and crochets into a circle of sorts. Looks easy. We have a club meeting at 4:00 and not sure about dinner today. They have mongolian bar-b-que afterward but we are so fed up with the club right now, we dont want to stay for it. May end up going somewhere else with friends. Carol, is the scrubbie made with tulle? I think people are amazing the way they work together when they are challenged as a group. I'm glad your church is doing that.

Today I got in 60 minutes of walking. Took a few tries to do it, but I did it. Hubby and the boys cut up limbs and burned them, so I had to avoid the smoke, but still managed to get in my walk. It also helped my stay awake since I'm still on the benadryl.

What am I proud of this week? I think it would be the effort I have put into sewing for the Arts and Crafts sale at the church. I keep looking for small things to make and yesterday I found a cute scrubbie that you crochet. I could do those at night and they would be cute to sell. Also the church effort I have made. Since our pastor left in August, the members have come together with more fellowship. We didn't realize how much of a strict hand he had on things. There is more freedom it seems and more people contributing. Carol

We got pork fried rice from a Thai restaurant last week. Got one order, ate two dinners from it and hubby had one lunch from leftovers. My Phillipine friend made lumpia and we now bake them in the oven instead of frying them. Carol

I know it is not new, but I will try to get a walk in on the treadmill today.

Yesterday, I did fry some cabbage. I use a small amount of olive oil in a nonstick pan to lighten the calorie count. I don't use bacon (love the flavor--but not in my diet plan).

I love my Jazzercise so much it would be hard for me to find one to spice up my routine. My daughter is getting certified to also teach Barre and I am looking forward to trying it. It's kind of like Pilates.

We eat out way too much. That is my demise. But when I was in BLE in earnest, I could go out to eat and choose wisely. Just choose not to now. Tonight is soup night at church and I'm taking spicy sausage and lentil soup ala Winn-Dixie. They had a soup mix there that I made last month and it was quite tasty and spicy. Carol

We do our grocery shopping and meal planning on the weekends too. This week we had a Chicken Enchilada Verde Casserole Sunday, Slow Cooker Beef Stroganoff Monday, Leftovers tonight, Grilled Pork Chops and Grilled Asparagus tomorrow, Burgers on Thursday, Grilled Chicken and Grilled Asparagus (I didn't realize I already had a bunch and bought another one) on Friday, and then the shower is Saturday, so leftovers from that for Saturday dinner.

Lunch this week is either a sandwich with 2 oz ham + 1 oz swiss + mustard and grape tomatoes or a chef's salad. And desserts are sliced strawberries or honeydew melon.

We did our grocery shopping on Sunday.

We love salmon cooked in the air fryer. It is so good and even better than grilled (never had a problem with grilled). Usually just takes about 12 minutes @ 390 degrees. Rub with a little olive oil and season before cooking. Steaks are great in there also.

We shop mostly on Saturday, but I can say some of the things that we bought.
Salmon (baked and portions now frozen for lunches or dinners); spring greens (salads), baby cucumbers, tomatoes, grapes, pineapple, apples, grapefruit, cottage cheese and a cheese blend, boneless skinless chicken breast (now shredded and in fridge), cauliflower and carrots (some of this has also been steamed now). This is a very typical shopping for us.

*Nice group of themes this month Bev. I know I'm going to enjoy them.
