Great job, everyone! This has been a fun couple of weeks!

Dee, for suggestions here's my 2 cents worth:

1. I don't think we need jobs. The team captains are doing fantastic!
2. I really like the challenges, but would like to see different ones each week.
3. I do sometimes feel as though the teams are not as close - each of us working seperately on the challenges. The days we work on the challenges together are the best.

Brenda and I would like to hear from you! We're not looking for pats-on-the-back (although those are always nice too).

We'd like to know what everyone thought of the challenges. Too easy, too hard, just right? Too many or not enough? Would you like jobs, like cheerleader, water person, nutritionist again?

What kind of games would you like to play? This info will help Laura and the next Captains. Remember the challenges are all about you!!!

High Fiber Apple Cheddar Turnover

1 low carb whole wheat tortilla
1/4 small Granny Smith apple
1 packet raw sugar crystals
12 oz. finely shredded sharp cheddar cheese

Make as many thin apple slices as you can. Layer them over the middle of the tortilla. Sprinkle packet of sugar crystals (you can substitute Splenda but it isn't as gooey good) over layered apples. Sprinkle cheese over this. Overlap sides over center and fasten in place with toothpick. Microwave for 30 seconds to 1 minute. Allow to cool for two minutes before biting into it - filling will be HOT!

1 Serving; Calories 178; Fat 6.8 g; Carbs 22 g; Protein 6 g

I have a tendency to pick up some "junk food" to hold me over... This time, I decided to walk past the chips and chocolate, and picked up these organic rice cakes with a yogurt coating. Really good, and around 80cal per serving. Makes for a good snack. - 3pts

emoticon Awhile ago I discovered PB2 which is powdered peanut butter. You just add water and you have peanut butter without all of the oils. A nice serving can make a PB sandwich for under 100 calories. The makers of PB2 now has a powdered peanut butter with chocolate. serving = approx 50-60 calories. While I just tried this plain, I think next time I will spread it on a low fat graham cracker for a bit more flavor. PB flavor is strong, but not much of the chocolate flavor. Just a hint. I think that spread on a graham, it would make a great little treat when you crave something nutty and sweet.



10. Do 25 jumping jacks OR modified jumping jacks in addition to your regular workout. (4 pts)

Done -No milk, put had some great cheese and my calcium pills!

HELP!!! WOULD SOMEONE PLEASE STOP ME???

I have eaten everything that doesn't move and probably a few things that were still moving. I know that I've probably shoved over 6000 calories down my throat and I'm still wanting to eat more! It has been a sugar filled day -- pastries, candy, ice cream, soda, double cheeseburgers, etc. I'd chew off my arm if I didn't need it to type with.

okay...I'm feeling better...thanks for the notes.

Almost done my challenges. let's see, I need to do hip flexors when I get the milk to drink with supper; and then dance & do jumping jacks to a silly song. That's doable!!

Pumpkin Dreamies

Filling:
2 c whole wheat, white enriched flour
2 t baking powder
1 t baking soda
1 c splenda
1/2 c splenda brown sugar
1 1/4 t pumpkin pie spice
1/3 c soft margarine
1 c eggbeaters
1 can pumpkin pie filling (15 oz)
1/2 c carrot, finely grated

ICING:
4 oz low fat cream cheese, softened
1/4 c splenda
2 T non fat milk
Makes 48 squares

In large bowl: Beat Splenda, margarine, and Splenda brown sugar until crumbly. Fold in eggbeaters, pumpkin pie filling, and carrots. Mix until well blended.
In separate bowl: mix flour, baking soda, baking powder, and pumpkin pie spice. Add this mixture to previous ingredients. Mix well.
Preheat oven to 350 degrees F.

Make icing.
In small bowl: mix together cream cheese, milk, and sugar until well blended.
Spread filling mix onto greased jelly roll pan. Spread icing over filling.
Bake for 25 to 30 minutes or until toothpick inserted in center comes out clean.
Cool completely and cut into squares. Makes up to 48 servings.
cals: 62.9 fat: 1.9 g protein: 1.6 g carbs: 9.5 g fiber: 0.9 g

My fall recipe:

Veggie Soup

2 Tbsp Olive Oil
1 large onion, chopped
2 carrots, chopped
2 celery stalks, chopped
3 ~ 14.5 oz cans low-sodium chicken broth
lb potatoes cut into 1 chunks
1 tsp dried thyme
tsp salt
1 ~ 14.5 can diced tomatoes
lb green beans cut into 1 pieces
1 cup chopped broccoli
Grated parmesan cheese


Heat oil in sauce pan over medium-high heat. Add onion, carrots, and celery and cook until softened but not browned, about 5 minutes. Add broth, 1 cup water, potatoes, thyme, and salt. Bring to a boil, then reduce heat, partially cover and simmer 15 minutes. Add tomatoes, green beans, and broccoli. Return to a simmer and cook until veggies are tender, about 5 to 10 minutes. Serve sprinkled with parmesan cheese.

Options: add a 15 oz can of cannellini beans, drained and a handful of macaroni when adding potatoes.

I actually got ALL of the challenges done this week!!!! HOORAY!!!! KITTIES RULE!!!! We bad.....we bad......we bad!!!! LOL LOL!!!! I would LOVE to see this same team challenge their same team with the same kind of challenges next month!!!! This has been the most fun EVER!!!!

I can hardly move today after yesterday!!!! I was even doing some of the exercises at the MD office!! LOL LOL!!!! Wallies & calf raises!! They thought I was crazy!!!! Well...........LOL LOL!!!!

Every Fall I fix the best Potato Soup you ever ate!!
It is hard for me to give my recipe to someone, because I don't measure anything!!!! I cook like my Grandmother, by taste:
chicken broth
cubed potatoes
onions
carrot, shaved
Cook potatoes & mash some with the back of a spoon or potato masher as it cooks
(after cooking for a while.....add another cubed potato or 2)
After potatoes cooked, add WHITE american cheese
Once cheese is melted, add milk til desired thickness/taste is obtained
ENJOY!!!! We do!!!!
