I will no longer be contributing to this thread. All recipes Including smoothie recipes will be shared above in the GREEN SMOOTHIES & OTHER RECIPES thread in the general discussion.

Still there is many great recipes contained under here that are worthy of checking out, but please do not add any more here add them in the area in general discussion.

I wish there was an easy way to move all recipes to that. Sorry there is not. Also no way of deleting the actual thread so as to clean up the forums. (something I think spark people should work on a way that we can do this to help keep teams more clean, tidy and organised) Just my thoughts though.

A quick 1 from Nigella

quick, maybe not too healthy

Ingredients
2 x 15ml tbsp garlic oil
150g pancetta cubes
150g frozen petits pois
250g orzo pasta
625ml boiling water
salt, (to taste)
1 x 15ml, tbsp (15g) soft unsalted butter
2 x 15ml tbsp grated parmesan
pepper (to taste)

Instructions
Warm the oil in a heavy-based pan that will take everything
later; a casserole or saucepan of 22cm diameter should be plenty big enough.

Cook the pancetta, stirring, until it becomes
crisp and bronzed, then add the peas and
stir for a minute or so until the frozen look leaves them.

Add the pasta and turn it about in the pance a and peas
then pour in theboiling water;
I use cup measures – 2 1/2 cups – for ease.
Add salt (cautiously, especially if this is for children –
the pancetta is salty, as is the Parmesan later);
then turn down the heat and leave to simmer for 10 minutes,
though
check on it a couple of times and give a
stir or two, to stop it from sticking and to see
if you need to add a little more water from the kettle.

When it’s ready, the pasta should be so
and starchy and the water absorbed.
Beat the butter and parmesan into the pan,
check the seasoning and serve immediately
into warm waiting bowls

I do the same type of thing with bacon and egg mini pies sometimes when I want to take a plate to share for a BBQ or lunch somewhere make them in muffin pans. It works really well and people always like them.

THAI CHICKEN PIES



These are a great little treat for parties, lunch or as a snack. They have a lovely flavour and the pastry to filling ratio makes them very decadent.

You can use green curry paste if you prefer or even an Indian paste for something different.

Ingredients

½ onion, diced
2 cloves garlic, crushed
1 chicken breast, shredded (we used BBQ chicken)
1 tsp. fish sauce
½ cup chicken stock, salt reduced
2 tsp. Thai Red or Penang curry paste
165ml (small can) coconut milk, light
¼ red capsicum, diced
½ cup frozen peas
3 frozen puff pastry sheets, thawed
1 tbsp. olive oil
Cooking spray

Method

In a non-stick frypan heat your olive oil and on medium heat sauté the onion and red capsicum for a few minutes or until soft.

Add garlic and curry paste, stirring for 30 seconds until aroma has been released. Add coconut milk fish sauce, chicken stock and chicken. Simmer for a few minutes, stirring occasionally.

Add frozen peas, season with cracked pepper and when the peas have cooked take off heat to cool slightly.

Meanwhile layout your sheets of pastry on bench to thaw. We used a muffin tin, which we sprayed with cooking spray. Cut circles out for base of pie and top of pie. Press base pastry in so it moulds the muffin area then spoon some of the mixture into each base. Place the top of the pie, pinching the two pastry’s together then fold over so there is no overhang. Option to glaze with either milk or egg wash. Slot a knife into the centre of each pie for the steam to escape.

Bake for 15-18 minutes or until top is golden brown.

THE SUMMER GLOW SALAD
Serves 1

2 cups baby spinach
1 ½ cups fresh organic berries (strawberries, blackberries, blueberries…)
3 tablespoons raw pumpkin seeds
2 tablespoons hemp seeds
2 tablespoons chopped hazelnuts
½ bulb fennel, sliced thin
1 small avocado, diced

METHOD:
In a large bowl combine all salad ingredients. Drizzle with lemon tahini dressing (recipe below) and mix to completely cover. Devour & get glowing!

HONEY TAHINI DRESSING:
Juice of ½ lemon
1 tablespoon tahini
1 tablespoon olive oil
1 teaspoon raw honey
Pink Himalayan sea salt
Freshly ground pepper

METHOD:
In a small jar add in lemon juice, tahini, olive oil, raw honey, sea salt, and freshly ground pepper. Close lid tightly and shake well to combine. Add more ground pepper and sea salt to taste, if necessary.

NOURISHING NOTES
-Other delicious additions to this summer glow salad include cooked quinoa, beans, or lentils, a piece of wild fish, a big scoop of kimchi or sauerkraut for the promotion of good bacteria, and any other fresh vegetables you can find seasonally in your area!

Nutrition: 440.5 calories, 32.4 g fat (5.25 g saturated fat), 314.5 mg sodium, 31.4 g carbs, 11 g fiber, 12.45 g sugar, 12 g protein (calculated with 1/3 avocado and 1/4 teaspoon of sea salt)

This recipe calls for pork mince but as I follow the "Blood type Diet" Pork is not on my blood group so I'll be substituting beef mince instead.

Spicy pork mince & lettuce cups

1 tbsp olive oil
large piece fresh root ginger , peeled and grated
2 garlic cloves , crushed
2 red chillies , deseeded and finely sliced
500g minced pork
85g light brown sugar
2 tbsp fish sauce
juice 1 lime
small bunch Coriander leaves

TO SERVE

mix of iceberg lettuce , Little Gem and cos leaves
large handful mint and coriander leaves, very roughly chopped
2 shallots , finely sliced into rings
1 lime , cut into wedges

Nutritional Info
Fat: 18.3g
Carbohydrates: 1.2g
Calories: 221.8
Protein: 11.3g

1.Heat the oil in a large frying pan. Fry the ginger, garlic and chillies for 1 min. Add the mince, then cook on a high heat until golden brown, breaking it up with a wooden spoon as you go. Sprinkle over the brown sugar, fish sauce, lime juice , then cook everything down until sticky.

2.Tip the mince into a serving bowl, then serve with a bowl of lettuce leaves for wrapping the mince in; the herbs, shallots are for scattering over; and the lime wedges for squeezing.

Per serving 253 kcalories, protein 29g, carbohydrate 23g, fat 6 g, saturated fat 1g, fibre 0g, sugar 22g, salt 1.73 g

Paula's Cauliflower Rice

Nutritional Info

Servings Per Recipe: 2

Introduction

Great to add to vegetables or as a side dish. Can be used on the side instead of potatoes or rice when making a stew or casserole.

Minutes to Prepare: 5
Minutes to Cook: 7

Ingredients

6 clove Garlic
3 sprigs Parsley
1 tbsp Extra Virgin Olive Oil
2 cup Cauliflower, raw

Directions

Wash parsley and cauliflower then put into a food processor with garlic and process until it is like a rice consistency.

Add 1 tablespoon of extra virgin cold pressed olive oil to a frying pan.

When hot add all ingredients from the food processor and cook until lightly browned remembering to stir quite frequently so as not to burn it.

There was a recent Spark article regarding Diabetes Friendly Breakfast Recipes. One of them was for a grain-free banana nut waffle recipe. We have had it twice now and are enjoying it. We have used the batter to make pancakes instead of waffles, since I was unable to get the waffle iron to cooperate.

We like it so much, I'll likely be using it as a base and tweaking the recipe. I used to make things like carrot pancakes. I can see using berries as well. But, until last week, I'd not had a pancake or waffle since I became aware that the grains were giving my body so much grief, which means it has been years! It's nice to have an alternative.

I am going back to making my smoothie in the mornings or at lunch time. Have decided this is doable for me now that we are back following our blood type diets.

My smoothie recipe will consist of:

1 thick slice of fresh pineapple diced.

1 cup of organic unsweetened pineapple juice

1 small piece of ginger

1 tablespoon of hemp seeds

1 tablespoon of ground up in my coffee grinder flax seeds (grinding them up apparently removes the lectins? at least i hope I read this right when I researched how to remove lectins from flax seeds properly)

! stick of organic celery

1 good sprig of parsley from the garden

A few mint leaves from the garden

Blended together with ice in our blender.

It tastes pretty nice you may wish to try it sometime.

Thanks for the link Richard it's awesome I've seen it before and it helps a lot. Also he recommends EDEN BRAND TINS e.g. Kindey Beans etc.... apparently that brand has already been defused of lectins.

Trying to find it in Australia actually and have found a few places in Brisbane that say they stock it but when you ring up or go there they don't seem to have it anymore still have a few more places up my sleeve to try if I want to be bothered. Maybe I can just avoid them.

The bread recipes are good. emoticon

As a grain oats still contain starch
Whilst the soluble fibre in oats can slow down the digestion of starch, starch is still broken down to sugars and can invoke an insulin response.
Insulin is a culprit in adding to and maintaining fat storage.
You will find if you can avoid starches, grains and sugar that will help.
I suggest having beans a couple of times a week as a substitute for carbs.
They still contain some minimal carbs, protein and fibre, but because of the structure of the bean the starch is digested very slowly and helps to avoid insulin spikes.

Easy Low Carb Bread Recipe – Almond Flour Bread (Paleo, Gluten-free)

for me though having to avoid coconut I might substitute apple sauce or grapeseed oil instead of coconut oil. Up to you what you do if you decide to make it sometime.

Looking for bread alternative recipes that don't contain oats. While my oat bread is apparently fine according to the naturopath. If you are really into gluten free then oats possibly contain gluten. My stomach is still not overly going down even with the significant change in the diet, so I'm thinking it could be the oat bread. So going to eliminate it for a few weeks and see how I go.

I could just buy gluten free bread in Woolworths or Coles or my health food store but then it most likely has things like Maize starch (corn) or Tapioca in it, which are both things I have to avoid also.

I dislike paying several dollars for a jar of sauce to have as part of a dish.

A reliable quick and easy recipe for some of my favorite sauces would be great.

The ones I can think of would include
1. sweet and sour
2. satay nobody was even forthcoming on my spark cooking team for this 1
3. Thai green curry
To know these bases would then mean that they could be prepared with a varying meat or fish dishes

I made a smoothie for lunch yesterday just thought I would share what I put into it in case anyone else wanted to try it.

It all seemed to combine well which I thought with fruit in it that it would not but it did. anyhow here's what I put into my blender all were organic ingredients:

parsley
1 cup of baby spinach
chia seeds
linseeds
1 stalk of celery
hemp seeds
banana (kid sized)
1 cup of pure juiced pineapple juice

because I had carrot and ginger in my breakfast juice I made I did not add it to this smoothie. The smoothie was delicious, filling and healthy.
