I am currently reading 3 books by Dr. Fuhrman at the same time which really isn't the least confusing way to learn more (LOL).

I am trying to figure out just what he means when he places an emphasis on leafy greens and says 'a HUGE salad' which is the main dish. How many leafy greens does he want us to eat? Do you happen to know?

I am now looking at the salad recipes in 'Eat for Health', my thought is that they may give me an idea.
The 'Apple Bok Choy salad' has 1.5 cup bok choy per person.
The 'Black bean mango salad' has 1.5 cup of romaine lettuce per person.
The 'Citrus salad with... ' has 2.5 cups of baby lettuce mix per person.
The 'Greek chickpea salad' has 2.5 cups of mixed salad greens pp.
The 'Greens and Berries salad with...' has 3 cups of romaine lettuce and 2.5 cups of baby spinach per person.
The 'Southerns style mixed greens salad' has 3.5 cups of mixed salad greens pp
The 'Spinach and garbanzo beans salad' has 3 ounces (about 90 grams) of baby spinach pp.
The 'Walnut pear green salad' has 2.5 cups of mixed greens pp.

So my guess is that he would want us to have 2-3 cups or so per salad... In fact that is not as much as I thought, given that he speaks of 'huge' salads. I suppose they are 'huge' in comparison to the small amount of greens that the SAD has...?
