It has been hot and humid here in Mississippi too. With the heat index, it is sometimes 108 degrees. This does not happen to me very often, but my appetite is not what it usually is. I find I don't want to get too full. I don't sleep as well as a result.

All these are great suggestions. I finally went out and bought hubby a sub. I bought a already baked chicken and some cut up fruit. I have stuff already prepared in the freezer, just have lost cooking or heating motivation. Tonight, I did cook some stir fry. Maybe my low motivation is over...lol

We are about 90 today and then drops back to the high 70s tomorrow. We haven't even put our window fans in yet. Yesterday morning we had to wear our sweatshirts. We did go watch little 9 year olds play baseball in the tri city area in Washington and it got to mid 90s. It was heating up pretty good. That is how that area is anyway. I like to do fruit and salads along with sandwiches in the summer anyway. My husband will eat anything I put in front of him.

I live in southern Arizona where it's extremely from May/June until October. It's even too hot to barbecue!

I also don't feel like cooking much, so I bring out my crockpot. Early morning, I can put a healthy meal together that cooks all day and doesn't heat up the house. Salads are a staple at my house, but I need something more substantial for my husband (he doesn't care for "rabbit food").

I often cook in bulk so I have items prepared to make a quick dinner without too much fuss; so I keep cooked, crumbled, ground beef, baked meatballs, chili, spaghetti sauce, etc. in meal-sized packages in the freezer. I'll make a pot roast using a lean top round or eye round in the crockpot & when the meat is cold, slice it into meal-sized packages. This week I'm making stuffed shells, but I won't bake them. I cook the shells, stuff them, put them on a cookie sheet & freeze. When the weather cools off and I'm ready to use the oven again, I'll thaw some, thaw some spaghetti sauce & ground beef, put it all together in the oven - and there's my dinner, plus a salad and veggies.

Keep some hard boiled eggs in the fridge to toss onto a salad, make deviled eggs, or an egg salad.

Make sure you drink lots of plain water - Crystal Light & other artificially sweetenen drinks make me more thirsty. I keep a pitcher of water in the fridge so I always have cold water ready to drink, and to fill my refillable water bottle when I go out to run errands.

Because of heat extremes in summer, I focus on cold meals based on salads and fresh, cold fruit. They are healthy and delicious and don't heat up the house.

Where I live we get triple digit heat all summer long.
so if you want something done outside, it done in the early morning or not at all.
Have you tried cold soups (Gaspacho)??
Or shrimp salad with a chilled artichoke?
loaded with omega3's and fiber:)
So cool and refreshing.
Lots of recipes in Sparkrecipes just type in cold soup:)
Drinking extra water is a big help too. emoticon

I agree with you, I seem to have lost my motivation in this heat. The computer I use for SparkPeople and other sites is in a room that doesn't get much of the air conditioner. The fan is just blowing warm air around. I'm not ready for fall just want this 100 degree weather to STOP! At least I am drinking plenty of water! We need to be eating more Fruits. We can do it!

It has been so scorching hot, I haven't been eating right. I don't feel like eating and then I eat something cold and not good. It is so hot outside, that even inside it is warm. The heat index yesterday was 123 and I don't know about today as I didn't look. I will be glad to see fall!
