My goals are to be more organized about lunch and dinner. I have fallen into the bad habit of not having things that I want to eat for lunch (I am so over sandwiches right now) and being unprepared for dinner. I want to sit down evey week and plan things out so that I can go shopping once and precook some meals for lunches.

I already plan at least a week of meals at a time; I begin by taking inventory of my freezer and using that first, then filling in at the grocery store. I also try to shop the outside of the store, and avoid as much as possible the inner aisles. My goal here is to find more interesting healthy meals as we've become stuck in a rut. And, I'd like to learn how to cook healthier "comfort" foods during this cold cold weather.

I want to cook more often, and eat planned overs. Now I cook rarely and eat a lot of packaged food. I planned my meals for two weeks and bought groceries to cook. I prepare for dinner when I make breakfast. To make sure I take it out so no excuses

I already plan my evening meals, and breakfast is the same everyday (spinach and mushroom fritatta). Lunch depends on what's left over from dinner. My goal is to try one new recipe each week and find ways to tweak my current recipes to add extra fiber or protein.

We already eat most meals at home and I menu plan supper (sort of).
My goals are to be more aware of what we're eating (good and bad), make some of our standard meals healthier or faze them out for healthier meals my family likes just as well, plan what I'm going to eat for the rest of the day (not just supper) so I'm eating a more balanced diet, and to stick with making at least 1 new recipe a week instead of making two or three new ones close together and then not trying anything else new for over a month. Also I want to keep my refrigerator clean and organized so my family and I can quickly find the produce and leftovers and not let them go to waste.

I cook fairly healthily already, but I always feel there's something I can do better, so I'm upping my game joining this challenge and changing the 'I can do better' into 'I've done better already'!! I'm looking forward to including at least two NEW healthy recipes in my meal planner each week and trying out some new ideas to boost my nutrition.

my goals are to make more healthy meals that have leftovers. My DH and I work different shifts and never get to eat together during the week. I need to make meals for me at night that he can take the leftovers the next night for his supper. It's so easy to just fix something quick for me, and that leaves him with cold sandwiches most of the time.

I joined this group to learn to cook healthy. I would like to learn portion size and new recipes that I will actually use. I work two jobs and take care of my grand daughter while my daughter is in school so I will probably have to cook more meals at a time. My goal is to write out my shopping list and stick to it. Ok so I made the whole bread yesterday, turned out very well. Really like it, used olive oil instead of vegetable oil and added a couple of tablespoons of wheat germ to it. Tried something new today, roasted beets, ummm still hate them.

Since I live alone, it always seemed like too much trouble to actually sit down & plan my meals for the week. It's just been easier to eat whatever is handy or stop off for fast food. I really like to cook, so I joined the challenge to get in the habit of cooking for me like I would for someone else that I cared about. It will be a challenge, but I'm really looking forward to it.

I joined this challenge because I want to improve my healthy cooking skills. I'm sure I will get lots of information here to help me in this area. I recently got my hours cut at work and I have more time to plan meals, exercise and of course SPARK. I made a total lifestyle change in August 2009 but know that I can still make improvements. About 4 years ago, my husband was diagnosed with type 2 diabetes, and we changed our diets substantially. Since he retired, we have the luxury of time, and we both enjoy cooking. Most of the tips in this week's articles are things we do already. For example, the bread machine gets a work-out so that I can control the ingredients, and I make whole wheat pasta from scratch. It's recreational cooking. This "old dog" joined this challenge to "learn new tricks" since there is always something to learn. Best Wishes to all.

Hi everyone. I just found out I am going to be a grammy again. This will be my 4th grandbaby...due 2 days before my birthday. emoticon

I made a new recipe for breakfast yesterday out of my new Biggest Loser Cookbook...Apple-Cinnamon Muffin Oatmeal. Don't worry it doesn't have a muffin and I think it should be called Baked Apple-Cinnamon Oatmeal...caused that's what it tastes like to me. If you want to try it...

Prepare 1 serving Old-Fashioned Oatmeal ( while that's cooking:
Saute 1 chopped apple, 0.75 teaspoon cinnamon, 1 pkt stevia (or your sugar substitute), 0.5 teaspoon vanilla, 2 tablespoons water...until apple is softened.
Blend oatmeal and apple mixtures with 1 tablespoon ground Flax and 0.5 nonfat milk. It is soooo good. Cal. 291; Fat 5g; Carbs 52; Prot. 12

I carry my own lunch to work (I only work 2 or 3 days a week), and cook our breakfasts and dinners. Hello, I just signed up for the Healthy cooking challenge. My goal is to lose 40 - 50 pounds. My healthy cooking goal for week one is to try and bake all my own bread. I really enjoy cooking and baking especially when I am stressed out. I don't even need to eat it just cook it. I was on a banana cream pie/coconut cream pie kick for a while. All homemade. My son is in Afghanistan which is extremely stressful so I am having a hard time losing weight because of stress. Anyway, last week I made white bread today I am going to make whole wheat bread, went to the grocery store and bought all the "good" ingredients for it. Hope it turns out ok.

hey there,
i'm new to sprakpeople, but i'm really impressed so far. I've always eaten pretty healthy,but my portions have been to big, or maybe its my love of red wine...anyways, my goals for this challenge are pretty straight forward...
1) i want to dedicate more of my time to the food i put into my body. eg. preparing non-processed meals from whole foods and thinking about my calorie intake.
2) learn to monitor my portions and calorie intake.
3) transfer the recipes that live in my head onto paper and analyze them with the recipe calculator tool to help with my nutrition tracker.
4) create a cookbook on sparkrecipes.com for myself and other sparkpeople to use if they want healthy whole food ideas. the cook book is called 'WildfireWench's Easy Ono Meals' and I've got a few ideas in there already.

that's it...and in the process, try not to eat out more then once a week and pack my lunch for work every day!

HI everyone,

I'm SHER and I am 60 years young. Married, two grown kids, 5 grandchildren and one great-grandchild. A Lung Cancer Survivor of 6 yrs this March, my husband is a 5 yr heart attack survivor. Now I need to loose this weight so I can be healthy.
Goal 1: Loose 50 pounds.
Goal 2: Get into a cute little dress and heals and go out dancing.
Goal 3: I love healthy foods,and I feel good when I eat right, but I keep going back to fattening foods.that make me misserable after I eat it.
Goal 4: I hardly ever go out to eat so cooking healthy would be no problem for me.
Goal 5: I finally got a job, now I will be moving around instead ofsitting on that coutch.
Goal 6: That's it, eat healthy, loose that weight, get into a cute dress & heals, cook better foods and stay away from fattening foods, breath better when I loose the weight. I had my right lung removed from cancer so I have a hard time breathing. When I loose this weight I will be able to breat better.
Goal 7: so here I go, I already lost 10 pounds in two weeks. I'm going to do better. emoticon

My goals are:
1. Use every single fruit and vegetable in my CSA (community supported agriculture) box -- I let a couple beautiful heads of kale turn to slime before I finally found a simple delicious recipe online (even my corn-and-potatoes-are-the-only-good-vegeta
bles husband loved it!) The box gets me to use things I've never heard of but I need to make the most of it. A secondary goal would be to get to the point where we move up to the next size box.
2. Eat one meal a week at the table together instead of in front of the TV. (I know, doesn't sound like much but...baby steps!)
3. Try one new healthy food each week -- this week: quinoa! (at least I know I like the name; I found myself last night, after buying it, saying "Quinoa! Quinoa!" to myself as I cleaned up the kitchen...thankfully, no one but the cat could hear me.)
4. To reorganize my pantry yet again -- we have a teeny kitchen and a microscopic pantry so I keep trying new configurations to make it work better. I have a new idea now involving slide-out baskets.
5. To try at least one new healthy recipe a week. Maybe I can find one involving quinoa. (Quinoa! Quinoa!)

I work in a pizza restaurant so on crazy nights pizza becomes the go to meal. I need to learn quick techniques for healthy cooking.

My main goals are:
1. cook more vegetables. I'm sure there are more enjoyable veggies than salads and steamed broccoli.
2. Rely on convenience foods less. This will be hard with weird schedules and teenagers.

My main goal is to cook vegetables in a way that I will enjoy. One of my worst habits is to buy bagged salad on grocery day, stick it in the crisper and forget about it until it's a brown, soggy mess. So I know I'm not a salad person but I need to incorporate as many veggies in as many meals as possible. Another goal is to come up with as many go-to recipes as possible that comprise ingredients I always have on hand. I don't want to be stuck eating canned chili because I didn't have enough cannellini beans to make homemade.

I have been a Spark member for a while, so I have been cooking healthy for a while. I thought this would be an easy challenge. I can already tell it will not be. I don't look to SP to lose weight, but get healthy. So, this healthy cooking challenge will be very much about my messy and filthy kitchen finally meeting some health standards. :)

1. I work 10 hour shifts 4-5 nights a week. So, my first goal is to cook the weeks worth of dinner on Thursdays, so I don't have to at 2 am when I come home.
2. Clean my kitchen and keep it clean. I am notorious for "I'll wash that tomorrow." Then, tomorrow doesn't come for like 2 weeks. Yeah, I know...super gross.
3. Organize my spices. I am constantly buying more spices because I can't find the ones I already own. Which leads to expired crap.
4. Throw out expired stuff. Enough said. :)
5. Organize all of my kitchen from dishes to appliances to pantry items.
6. Donate all the kitchen equipment/utensils that I never use. I don't know why I hold on to it all.
7. Clean and organize my fridge. I am a little concerned about what might be in the tinfoil wrapped bowl. ;)

I'm trying to find more inventive ways to incorporate vegatables into my diet while eliminating tomatoes, potatoes, and peppers (nightshade plants) which aggrevate my psoriasis. This change in menu is a big step for me, and I've been a little stuck as to what to fix instead. I'm not at all used to menu planning since I knew all my favorites and just filled the pantry with everything to cook any of them. I feel like a beginner again, so maybe meal planning will take this problem away. I'm always looking for information about what is good for you and I've been practicing many of them for a long time, but I know there's always more to learn.

my goal is to make food more healthier, my husband is a potato eater, so I will cut down my portion,I have some brown rice in the cuboard but never used it, I will give it a go

Update old favorites to make them more healthier. I also would like to find more recipes that everyone will like (we are all picky eaters) so I am not having to make more then one meal if possible or the same thing over and over again.

My goal is to be consistent. I'm a fairly healthy cook with the exception of carbs, we still prefer white rice and pasta. I feel validated when my family enjoys the food I prepare for them, so I regularly find my self cooking with the pastas and rices used in restaurants instead of healthier alternatives. I buy them and hardly use them.

I joined this team in hopes that it will give me more cooking ideas...I've always have had a bad relationship when it came to eating because no matter how healthy or unhealthy I ate losing weight is very difficult for me. I always think that food is the enemy. Although I do tend to eat a lot I do eat healthy most of the time. I don't buy junk food when I do my grocery shopping (chips, cookies, ice cream) but I'm pretty sure I have a lot of unhealthy choices lurking around my kitchen (processed, white and full fat items)

So my goals are...

1)To get rid of all unhealthy foods in my Kitchen and replace them with healthy ones.
2)Start reading the Nutritional information Labels
3)Add more Veggies and Fruits to my meals and snacks.
4)Eat whole grain foods at least 3 times a week(brown rice, breads and pasta's)
