Richard, thanks again for you experience and knowledge - I liked it better after chilled - so will keep on, keepin' on.

Breakfast this morning was chopped carrots, radish and onion sauted and two eggs - used coconut oil to cook and light drizzle of hemp seed oil over the top after cooled on plate a bit. Really working at getting more healthy oils in and less commercial dressings - found a "keto-Ranch dressing today that I want to try - will share the recipe if it turns out.

Tomorrow I will start sharing lunch menu instead of breakfast - hope others will join me.

An original strain of Kefir I had came from soy-milk.
It was fairly active to begin with.
Non-dairy milks usually have sugars of some sort in them.
These are usually quicker and easier for the Kefir microbes to ferment. Hence the foaming you experienced.
Also a quick or more complete fermentation can lead to a more pungent, acid, separated drink.
They are still ok.
There maybe different flavours also due to non-dairy milk being used

Actually this is the first time I have eaten jicama them in several years - they do not grow locally nd are a bit pricey in produce area - I miss the crunching on them as I did when I still had teeth but will continue to try some different ways to enjoy them cooked - repeated the omelett idea for breakfast today - still have several of those lovely farm eggs we were gifted last week so am enjoying!!!

My kefir made with coconut milk really foamed up --- never have had that happen before - also the grains looked a bit weird - more stringy-like - any comments?? tasted ok ---a bit more fermented taste to it.

Finally tried my jicama - was disappointed that part was not good - but chopped 3 ounces finely and sauted with a bit of onion as base of omelet - quite tasty! Enjoyed iced coffee and protein powder Mocha for travel snack to church.

Was gifted 4 dozen farm fresh free range eggs last night when we picked up some farm grown ground beef and soup bones ... so will be overdoing the eggs here for a while.

Breakfast: three eggs, scrambled with coconut oil, radishes grated nd cooked like hashbrowns, tiny swirl of ketchup to make 'em pretty. 4 ounces kombucha - wow- got a bit too sparkly!!! had to dilute it down!!!

Awe...Saturday breakfast and is one of the last leisurely Saturday mornings as Market Saturdays we are out the door at 6:30 am so probably the first weekend in June that begins.

Coconut oil, onion, bok choy, spinach in egg scramble with 5 spice mix. Warm lemon water

Enjoying "GOOD GIRL MOONSHINE" which is one quart of tea of your choice - I have been enjoying one bag ginger root tea and one bag of orange spice remove the tea bags after steeping and then add 2 TCSP apple cider vinegar with the mother, 1 tsp of extract of your choice - I love vanilla so usually use it, and 1 tsp honey or packet of stevia sweetener. Our it over ice cubes and sip all day.

We have a service organisation here in Australia clled The Lions, it is similar to Rotary.
At Christmas they sell Christmas puddings and Christmas cakes as fund-raisers.

Friday - a fasting to 500 calorie day so I started with Protein powder/coffee iced mocha ---
118 calories 11carbs 2fats 16pro 7fiber
mmmm good and seems good for me - had 45 minute workout with physical therapy and he is very pleased with the progress I have made - insurance is still covering many more visits and since we are spacing them out to one per week I will have his encouragement for much of the summer!!! Hard work but I am walking better and so thankful for putting out the effort.

Richard - tell me more about your fruit cake ....it is a favorite at Christmas time for me made with variety of dried fruits... very dense in calories so wondering if you have a lighter version.

Breakfast : coconut oil fresh spinach two eggs curry and Dash
shredded carrots with touch of coconut oil and pineapple juice whirred in food processor.
Juice of lemon In pint of warm water with tsp of molasses for sweetener - new taste but kind of like it - will try it again - I could use a boost of iron from the molasses if I like it.

1 of the thickest ones around.

For those with a sugar addiction have you tried having fruit salad?
You can vary this daily depending on ingredients available.
The fibre present leads to a smaller insulin/hunger/appetite response

Ken, thanks for the encouragement to LEAVE THAT SUGAR ALONE!!! Yes, I know it is a trigger for me.

Monday is fasting day down to 500 calories so breakfast was experiment of protein powder, unsweetened coconut flakes and coffee al mixed like a little pudding or dessert - delicious, started my day good and felt almost like I was cheating but all good things - I have just one serving of chocolate and/or coffee and hour after my thyroid supplement to try to give me a bit of a kick start. 200cal. 19carbs 7 fats 17 prot 8 fibers

I hope it makes a difference. Sometimes you need to experiment to see what causes the inflammation. I find cutting out processed sugar helps me more than anything.

Amazing how one day you feel great, the next you feel so stiff.

Sunday morning omelette Coconut oil into the pan - home grown chopped and frozen onions sauted lightly - handful of local spinach from the farmer's market. I have a fairly standard breakfast
Item 1 is fruit salad with yoghurt and trail mix, alternate between bought and homemade yoghurt.

Item 2 in a large mug 1 tablespoon each of instant coffee, gelatin, torula yeast(previously glutamine), sachet of diet shake, 2 coffee pods, topped up with hot water and milk

later on may have a smoothie with kefir and garlic, ginger and tumeric powders

May 1 [ Weight 207.5#] Breakfast for a fasting day for me
My one cup of coffee for the day with one scoop of pea based protein powder.

Quinoa with cooked apples (a little cinnamon) and coconut milk. It's my daily breakfast -- I love it. It has replaced oatmeal with brown sugar and milk and I feel SO much better for it.

I love my breakfast! Under 350 calories.

Spicy Hot LS V8 - 1cup

Blueberries 100g
Cacao nibs (unsweetened) 10g
Pepitas 28g (or other nuts, combine to 28g)
Cinnamon 1/8-1/4 tsp
Cacao powder (unsweetened) 1/8-1/4 tsp
Chocolate balsamic vinegar (artisan made, unsweetened)
Grating of fresh ginger
I mix it up to moisten the powders with balsamic vinegar to make a chocolate syrup

Multivitamin
Calcium supplement
Vitamin D
Inner-Eco probiotic

I just joined this group yesterday and haven't had time to really read much yet. So my foods may not be the best for anti inflammatory. But here is what I ate this morning
chobani yogurt, organic blueberries, almonds and flax. I also had some warm water with the juice of a half of a large lemon, a Tablespoon of organic apple cider vinegar, and a touch of cinnamon and cayenne pepper. The drink is new to me. A friend told me she starts every day with this drink, so I thought I would give it a try. And coffee.

August and going to try a month without tracking every food, but am counting Water, green tea, fruits and veggies in 75gm servings protein and LOW-Fat dairy, and pedometer steps.

Soooo back to concentrating on more fruits and veggies for breakfast
Today Onion, Avocado, Zucchini chopped fine and added lime juice and 1 boiled egg
So it was kind of like a guacamole scrumptious!!! With side of 150gm cantaloupe

Three kinds of melon ripe in the garden now so easy eating!!!

I feel like breakfast is in good control for portions and foods so am going to move on to concentrating on anti-inflammatory foods in lunch and dinner which are basically the same foods for me - I often fix two meals at once and have today's lunch for tomorrow's supper type of routine so will try to record lunches in detail in June.

Another new week so will start a new set of breakfast menus
Each morning between midnight and 6am ...16 oz water
1/3c cottage cheese and 1Tbsp Chia seed for fiber,
stability of Blood sugar end regularity of bowels
Sip on 8oz Water while preparing breakfast around 6am
Sunday .egg +white into omellett with
. .Sautéed onion and zucchini
. .cheddar cheese
. .hot blueberry/green tea with spot of honey
Monday .same as yesterday +small serving of pinto beans over the top of the omelett
Tues thru Sat - breakfast remains a good meal for me daily - in good portion control and anti-inflammatory foods - then I loose control in the midst of researching and meeting needs of husband...Needing to get a routine of some kind... I will keep trying - I will keep healthy if I am willing to work hard at it.

. .Fresh apple grated and microwave with sprinkle of cinnamon
. .1 cup Hot blueberry/green tea with spot of honey
Tuesday Chicken breast chopped fine
. .Grated fresh cucmber sour cream onion powder
. .1/2 grapefruit I ate it naked! I was raised always putting sugar on it!
. .3 cups of leisure this morning! Hot Ginger/lemon green tea
Wednes. .1 cup homemade Chicken broth strong on onion and garlic
. .Egg Drop soup of 1 egg+1white [whisk together an' drizzle into boiling chicken broth]
. .Pinapple chunks 1/2 orange
. .1 cup plain green tea...nope still don't like it Gatta have a fruitflavor with it.
Thur. .same as yesterday ... I just love my eggs for breakfast is some form!!!
. .Will keep trying to rotate with other meats
Friday .egg+white Onion and sweet green pepper Cheddar cheese omelette
. .1/2 orange 5 bean salad
. .2 cups green and mint medley tea with local honey
Saturday .same as yesterday

5/08/12 I egg scrabbled with petite peas, 1/2 Banana=50g. 1/2 orange=100g
grated yam=50g sprinkles of curry and cinnamon and LiteSalt 1tspcoconut oil
Hot Fusion Green and white tea with spot of local raw honey
5/09. egg plus one white omelett w/mixed veggies and chopped onion
. .sprinkle of cheddar cheese
. .hot green tea with blueberries with spot of honey
5/10 Egg plus one white with onion=50gm & grating of ginger root
. .banana = 50 gm 4oz navy beans
. .hot green/lemon/ginger tea with spot of local honey
5/11. .Grated Yam=100gm sauté in coconut oil Tucked into center of pan
. .Grated apple w/pealing around the circle - sprinkle of cinnamon and curry
. .cracked one egg white and one egg into center +sprinkle of onion powder and LiteSalt and put the lid on tight so poached the egg. Slid whole thing on to plate and sprinkle of Parmesan cheese I loved it - DH not impressed but I will enjoy this for lunch in the future
. .Last of my white/green fusion tea Hot for breakfast, iced for lunch
5/12. .Some of my grated 4 veggie salad sauted in olive oil
. .then swirled in egg and white and curry and chopped onion
. .1/2 orange Hot blueberry/green tea with honey

GEMINISUE - I enjoy a bit of juice in Iced tea but not in Hot tea - It just begs for plain sweet and savor the tea flavor. Thanks for reminding about the juice for iced tea though cause hot weather will come to our valley sometime

.I notice you include the amounts of your liquid intake - maybe it would encourage others
16 oz of water between midnight and 6am when up to the potty
Sip on 8 oz water while preparing our breakfast

Breakfast was a bit of sausage [actually fresh ground pork and i add my own spices to avoid the nitrates of commercial sausage]
Bowl of Hm-cooked Pinto beans - tried a doppup of Hm-made mayo to avoid the ketchup but think I need to learn to enjoy them "naked".
1/2 banana
16 oz hot blueberry green tea .

Linda, if you want you can try some fruit juice, as a sweetener for tea and see if you like the taste and it is satisfies the sweetness you desire.

Sauted oniion with egg scramble then forgot and topped it with my favorite finely chopped tomato - having trouble giving them up - especally since my DH grows them for Farmer's markets!!! Going to get some sweet potatoes this week and try to use them more often to replace the tomato and potato.

Really enjoying berries - had blackberries with coconut milk on them - Nummmmmy!

Hot tea sure is good - gradually learning to wean myself away from adding sweetners. Tiny bit of local honey goes a long way for luxery and can enjoy stevia and zylitol but they are pricy!! I just really llike a bit of sweet in it though can tolerate it plain now.

If you look at my tracker, I have either cottage cheese or yogurt and chia seed when up during the night to keep blood sugar even and keep the chia seed away from pills as it tends to bind to them and take them on out same as metamucil when I use it as added fiber. I count those two foods in with my breakfast.

Boiled Egg [fixed Dh as deviled egg just put a tiny squirt of mustard on my cut open one
Grated cucumber with the peal and grated carrot salad w/vinegar/fat free ranch dressing
dash of parm.cheese for flavor

Breakfast daily month of May
24 ounces of cold water
24 ounces of black coffee
5/2/12---2 egg whites with seasoning and herbs, pan sprayed with PAM
5/3/12-- 5 oz chicken breast,no skin,cubed and cooked in pam on stove w 1/2 cup french style
cut green beans+liquid above & diet pepsi
5/4/12 same as 5/2/12 see above
5/5/12 cooked 2 egg whites, scrambled, but only ate one, the other flew off my plate and onto the floor, oh my what a mess, lol (lost 5 since Tues morning)
5/6/12 2 sunny side up eggs w/seasoning & 1/2 slice of brownberry 12 grain bread toasted, dry. same liquids
5/7/12 no breakfast (not a good idea to miss breakfast, I felt hungry)
5/8/12 no breakfast again- not good
5/9/12 2 egg, 1 sl 12 grain toast dry
5/10/12 2 eggs,2 sl 12 grain toast dry(ate one with eggs, was going to give 2nd to birds but
ate half of it without even knowing it, then finished it just because ugh!
5/11/12 day out with son, so first meal was lunch

Might I suggest a month's challenge of sharing what we are eating one meal a day?
Suggest Breakfast for the month of May?

5/2 1egg+1egg white scrabbled with 1/2c chopped sweet onion and 1/4tsp curry spice
100 gm fresh orange pealed and chopped
1 cup green/white tea with tiny bit of honey [ I use a demitase spoon = less than tsp ]
