TUNA BITES
CUT 1 ENGLISH CUMCUMBER INTO 1 INCH ROUNDS. SCOOP OUT CENTERS WITH A SPOON TO FORM SHELLS. MIX 1 DRAINED 3 OUNCE CAN WATER PACKED TUNA, 1 TABLESPOON LOW-FAT MAYONNAISE, AND 1 CHOPPED SCALLION IN A CUP. SPOON INTO SHELLS. MAKES 6-7 BITES

BERRY SALSA
COURSLEY MASH 1 6 OUNCE CONTAINER FRESH RASPBERRIES. ADD 1 TABLESPOON CHOPPED RED ONION, 1 TABLESPOON CHOPPED FRESH CILANTTRO, ½ TEASPOON MINCE JALAPENO, AND ¼ TEASPOON CUMIN. SERVE WITH 12 LOW-FAT TORTILLA CHIPS. MAKES ONE CUP WITH CHIPS
