Meatloaf Low-Carb and Gluten-Free

I tried the recipe Blue and used passata. Turns out great as well.
I always wrap bacon rashers individually and freeze and then when
I need to use them, it is so much easier to cut off all the fat.

I buy theHeinz Reduced Sugar Ketchup all the time. I think they also have some low carb ketchup by Waldon Farms at Kroger in the special food section. They have other low carb stuff too by Walden farms.

I am so happy to hear that because it's one of the things I miss the most. Don't know how I missed it in the ketchup aisle, but I will be looking for it the next time I go shopping. Thank-you.

Heinz makes low carb ketchup with 1gm per serving or you can make your own.

Where do you find low carb ketchup?

I'm glad you liked it. I won't use my candied tomato topping on this recipe again, next time I'm going to make a gravy...

That candied topping tastes great with the original non low carb recipe I grew up with.

I have made it with pine nuts and that is very good indeed!

Hi Blue, I tried your meatloaf last night and I thought it was very good. I used a little more of the cheese than called for and forgot about the bacon and put low carb catsup on top instead of the tomato sauce. I cut it into 10 slices and counted 1 carb for each slice. It may have been less carbs but I would rather be a little high than to low. Thanks for such a great recipe. Hugs, Amie

Bacon chopping is best done when frozen!

I cannot wait ot try the meatloaf. I love pinenuts too and I don't know whether I will worry about the topping - maybe I am lazy...

More on topping:

You could use a beef bouillon cube and or it's juices, water, and Xanthan Gum
to make a gravy instead of the cheese or candied tomato topping.

Another thing that's good in it is pine nuts, but they are way too expensive now!

Re the tomato sauce...

Next time I make this I'm going to use tomato paste and liquid splenda mixed for the topping. It doesn't candie without brown sugar... so I'm sure that will work better.

Many like it with a melted cheese topping... But I like the top candied because that's what I grew up with.

Also you can use the dry shaker cheeses for coating zucchini you want to fry or chicken instead of the crushed pork rinds.

Great recipe. As a kid I ate a lot of meatloaf. It was one of my mom's go to dishes.

2 lb ground beef
8 or 4 -oz can tomato sauce (with 8 half goes in and half save half to mix with sweetener for the topping. BUT Next I will use a 4 oz can of sauce for into the mixture and paste for topping, see below)
3 or 4 tbsp tamari sauce-
*soy is fine, if you are not avoiding gluten
1 tbsp onion powder or chopped fresh onion
1 tbsp dried parsley
salt & pepper to taste
3 or 4 cloves garlic, minced very fine
2 eggs, slightly beaten
1/2 to 3/4 cup Parmesan, Romano, or other shaker-style cheese, combine if you wish
1 slice uncooked bacon, finely chopped

Mix and bake 325 - 350 approx 1 hour
Yes it's the cheeses that replace the crackers or oatmeal or breadcrumbs or whatever you used before.

I have always topped mine with tomato sauce mix with brown sugar, it makes the top slightly 'candied'.

You can top with cheese or add a 0 cal sweetener to the tomato sauce, I have not been able to get that to candie as it does with brown sugar. So next time I'll use "tomato paste" and add liquid splenda, that stuff is pretty thick so I think it will be better for how I like it.

Play with it as you wish!

*I have never calculated this recipes stats, so I don't know calories and so on.
