My all time favorite is a veggie sandwich on flatbread, you could do a pasta dish with corn black beans and salsa(served chilled or at room temp), or spice up a bowl of salad with taco seasoning or any other seasoning of choice instead of fatty dressings. Those are the few things off the top of my head if I think of more I'll post again.

My 12 year old has decided to be a vegetarian. I'm not a vegetarian but I used to be a long time ago. I am going to be one again after I clean up the pantry and freezer because I don't want to be wasteful of food and money. So I'll be phasing it out soon. I am fine making meatless meals at home for dinner. I am struggling with what to make him for school lunches. He has an option to get a PB & J at school but I don't want him eating that everyday. I have got the cheese pizza lunchables but that's so much sodium.
They don't have microwave access. Any ideas are greatly appreciated!
