They are a treat! Today I made Stir-fry and served it with brown rice made from Birds-eye Steamers. Frozen Brown Rice made in 4 1/2 minutes and it was decent! I will be getting more of that new timesaver.

Very true. I have enjoyed pumpkin butter on many things. There are plenty of brands, and of course you can always make your own puree. Just cook the pumpkin, and put it in the blender, food processor or whatever you have. Just make sure you are cooking a variety meant for pies. I used to think all pumpkins are created equal but...no.

you can use pumpkin butter for bread and pancakes in a pinch...it has a much more concentrated flavour...also look at unusual places for canned pumpkin...Huckleberry's sells organic brands and so does Fred Meyer in their 'Natural' department...doesn't always have to be Libby's...lol

To whom it may concern: I heard that there is a bit (not a drastic) of a shortage of canned pumpkin. So, I am not going to wait till the last minute to look for some. I may get mine while out this weekend!

Recipe for the relish please?
I'm learning to like it in a variety of ways. Brushing it with an oil based salad dressing like Italian or Caesar and then grilling or broiling is good.

It is amazing what you can do. We do have whole wheat pasta and it is pretty good in stir fry too.

I didn't have zucchini until after I got married and then my MIL breaded it but didn't we like it. Then I discovered zucchini bread and cocoa zucchini cake...and then I started making zucchini relish. We like it better than pickle relish so I usually can a bit of that to last the year out.

There's something about a gob of slimy overcooked mush that just really turns one off. I grew up the same way! Although, my "grown up" taste buds are much more adventursome than my child ones were. I grate it up now (after I peel it cause the others in the household won't touch it if they know it's there) and put it in spaghetti sause, taco meat, gonna add it to chili, sloppy joes etc. Great tip on the sweet potatoe - I'll have to try that. Grated carrots too hide well.
I tell the kids they have to give something an honest try. I don't like raw tomatoes. I try them every so often and I'm not as opposed to them but I still don't like them. So, it's OK to not like pumpkin!

Hey I do like roasted pumpkin seeds. I draw better than I carve, is drawing with sharpie's legal.

I actually found a pumpkin flax bar I liked at Costco, but they quit carrying it. I keep trying pumpkin and zucchini breads, but just don't like them. I love baby zucchini that are lightly threatend in a saucepan! I thought I didn't like it growing up when they were the size of ships and then cooked to death!

With your onion/zucchini/marinara combo you could also cook up a bit of whole wheat pasta and throw it over that, or some scrambled egg whites!

That sounds yummy! What a great idea. For dinner I chopped up a Walla Walla sweet onion and a zucchini from the garden and sauteed them in a little bit of olive oil and then added marinara sauce. My husband and I thought that was quite good and a nice change from plain old sauce. I like your idea!

Here is a sneaky/healthy way to incorporate yams/sweet potatoes into a meal. Ever notice how reddish-orange spaghetti sauce is? Think anyone would ever suspect it having yams in it? Nope, me neither! Thats why I do it! I cook them up and mash them up and mix them in!

I have found that my cat likes it as did his predecessor!

There are lots of ways to use pumpkin. Would you believe brownies? Hm...haven't had them but have had pumpkin scones.

I'll check that out! I like pumpkin - it's high in fiber and really an unlooked at food. If it's not pie it's a jack-o-lantern it seems.
It's also good if your dog gets diarrhea. They like it well enough and it helps to stop the problem...

On the Libby's Pumpkin site there are a lot of extra ways to use pumpkin in recipes including soups, shepherds Pie, and various other tips...may check some out because that adds a bit more to a meal and the health idea of that is good. I am interested in new recipes most anytime!

We had Qudoba delivered for lunch today - the build your own taco bar thingy. One of my favorites! I don't go to the restraunt cause I don't want all the rice. Very happy tummy now.

Sounds good. I don't like coleslaw but have seen people put it in the sandwich and you are right it looks goopy! I had taco salad last night and think chicken is today's choice.

I don't know if I would want a traditional cole slaw with it, too goopy at that point for me. Shredded cabbage would be OK or maybe slaw on the side.
We bbq'd chicken last night, I had enough for a san today and then I think the beef roast is going in the crock pot tomorrow. The thing is huge! I'm gonna have to cut it in 1/2 to fit it in. I might have to do bbq beef with the left overs this weekend. hmmm.

Oh my that sounds great. Thanks for sharing. We do like Yoshida too! It sounds pretty easy. I have heard of people eating them with coleslaw too. I am not a big fan of coleslaw but my husband is. The sandwich thins would be very good thanks for the reminder as I have a supply in the freezer.

CROCK POT!!!! Only way to go. I got 3 when I got married, kept and used them all. Easiest thing in the world. Find a marinade you like and dump about 1/2 to 3/4 a bottle in with your roast, fire that puppy up and when you get home presto - dinner is ready! Pull the chunks out and shred with a couple of forks. I like to reserve some of the marinade for putting on the san since it can be kinda runny in the pot and if there's any left overs.
It all depends on what kind of flavor I'm feeling like. I've used bbq sauce, Lawry's has some nice marinades, World Harbor. Since it's pork you can do just about anything really. World Harbor has a lovely Cheriayki which DH likes and he doesn't like teriayki. Oh - Yoshida's is good. With that I like to serve it w/pineapple and red onions. omg. Mouth is pouring right now! Some nice cheese maybe and lettuce. The Orowheat sandwich thins should hold up to it or a pita pocket.

I just had my pita chips and hummus...whole grain crackers would have been better...but...I have these and need to use them up.

I have a pork roast in the freezer and plan to make pulled pork sandwiches soon...for my first time. How do you make yours?

I picked up the herb flavored ones as well, haven't tried them yet. Didn't want their flavor to interfere w/my hummus afterall... emoticon
Got a great deal on pork shoulder roast at Winco yesterday. $7 and there were two in the package. Good size ones! That was Winco in Moscow, haven't been to the one in Spokane yet. We'll do pulled pork sand's for dinner one of these nights.

Glad it worked out on timing! I was running out the door when I posted that to an appt today. I had it for breakfast which made me think of you.
I found Multi Grain crackers today - not great, not bad. Kind of bland but great with hummus. Actually, anything up to and including a spoon is a great vehicle for hummus for me. Costco had the Meza brand in, they don't always. Anyway, the crackers were 19 carb but 5 fiber!

I think it was this chat that we were taling about yogurt - anyway, I found the Yoplait Cinnamon Roll again, got it at Rosauers. It's the Light Thick and Creamy, 100 cal Fat Free. Has a blue label w/a big red and tan banner across the front. Really good. Tastes like the frosting off a cinnamon roll, just not as heavy.

I saw the most revolting thing in a magazine recently. It wasn't a recent copy, I think it was from Feb but it was a recipe for toasted marshmellow chocolate sandwichs. Like you do a grilled cheese only with chocolate chips and marshmellow fluff on white bread no less. geh!

I like the Sandwich thins for other sandwiches too. I am thinking of trying it for panini's and using my contact grill for the panini press. It is a George Foreman Clone and I think they look so much like the panini presses!

Yes it was! My Mom and aunt tried them and liked them as well. Some of the other thin sliced breads etc just don't hold up or yes, taste weird. These had good texture all the way around I thought.

Those are the Sandwich Thins. I like them too and was surprised how well they held up. I had been waiting for them to get to Spokane. I saw them on another website ages ago under the 'Arnold' label, which looks exactly like the Oroweat label but only the names are different. They have been popular because they = 1 point for Weight Watchers. Can't remember the exact nutrition info either because I took them out of the wrapper and stuffed them in a Ziploc. The flavor is good too, not like the cellulose flavor in lots of low calorie bread. Good find isn't it!

I just tried the Orowheat ones that look like really flat hamburger buns and they're pretty good. Can't remember what the cal/carb count is off hand but I liked 'em and they held up to a burger w/lots of veggies on it. By and large I don't eat a lot of bread anymore. I'll buy it and put some in the freezer and then when I go to get it's been in there for so long it's freeze dried! DH doesn't eat a lot of it either.

I think its is also Franz that makes a bread for diabetics. 2 slices is one serving (something like 80 cals for the 2 combined).

Not sure if I posted this or not yet, but we have started buying the Franz Premium Bread from the bakery outlet on Monroe. This bread has no High Fructose Corn Syrup in it. Their price is 3 for $5 if there is none on the day old rack. I just found out they have a referral program for $5 off your next purchase for a referral. They gave me some coupons to give out, but I told her I was doing it online and didn't think it would work so well.

The tortillas sound like they would be a good experiment. I may try some too.

I saw that too - the watermelon and cantalope. I like to use plain or vanilla yogurt in smoothies w/fruit so that might be a good one to try.
The chips are a bit dry, but with salsa they'ld be fine I think. There's so many different herbs and spices to use too! I ran out of tortillas...

Tortilla chips do sound good!

The yogurt I think I saw was lite n fit, but I am not sure. I saw some brand is going to have canteloupe and watermelon as new flavors.

Saw what?
I'm making baked tortilla chips today. So far so good. I took some tortillas, brushed them w/olive oil and sea salt and baked them for about 5 mins on 350. Not bad, a little dry but that's OK. The batch that's in now I sprinkled with chili seasonings.

Oh boy. It could be. I try and get the light, but it could have been Delight. It's been awhile since I had that one. I know I got it at Rosauers in Colfax which doesn't stock a huge selection of things like the big stores up in Spokane.

I had to drive to Portland once in the pick up full of camping gear (with a canopy) and find the hotel my husband was at. I usually drive an Escort. I definatley had new grey hairs after that experience! And, was rather creative in my vocalizations I'm afraid.

That sounds way better than commuting in a larger area. When we visited California I thought the stop and go rush hour traffic was horrible. We are lucky here for sure.

I love books on tape! They are a big help for long drives. The funny thing is, it takes me about as long to get to work as when I lived only 5 miles from the office. No traffic where I'm at now except for combines and grain trucks right now. And, I get to see a pretty big variety of critters on my way in. I'm fortunate to live where I do and I count that in my blessings daily.

Indeed. With all these things mentioned I just know I shouldn't complain. Today feels pretty good and I know we can use this break from the heat.

Driving 20+ miles to work is a long commute. When I have a long drive I can easily listen to a good book on CD or great music. It helps keep my mind off of that.

I remember well when Mt St Helen's blew her top. I'll take that over hurricane, tornado, drought, flood/mud slides, major earthquakes... We do have the occasional minor tremors but nothing like Cali for instance.
And yeah, our winters have been really mellow in recent years which as someone who has to drive 20+ miles to get to work, I'm good with that. Don't need the snow fall I remember when I was a kid...

When I lived in southern California for 11 yrs, I cam to the conclusion that the four seasons there were:

Flood, Fire, Earthquake and Riot!

Being there for 11 yrs, I saw plenty!

psst...that is why I moved back home when I got pregnant with my daughter. Did NOT want to raise her in that madness!

We had Mount St. Helen's erupt, and Ice Storm but those were very unusual. Sure we had a hard winter, but we live in the Northwest where mild winters are exceptional. I guess it depends on perspective too.
