Whole grain thin spaghetti with tomato and vegetables

Take three tomatoes and blend in the nutribullet. Pour in a pot and let it boil for a few minutes. Add green, red, and yellow peppers, onions, fresh oregano and cilantro. Let it simmer for a while until it thickens a bit. Add pasta and toss. Enjoy.

Mango breakfast smoothie

1/2 cup mango
1/2 cup pineapple
3/4 cup coconut water
1 scoop vegan protein powder

Put everything in a blender till smooth.

Enjoy

Sunny I think I am going to try that recipe you wrote. Sounds pretty easy and delicious. Wonder about the grapes too. I usually don't mix sweet with salty. I will try it this way though. Just one question does it have to be this kind of couscous or any kind will do. Never bought that before.

Patricia, I think the raisins are petty common in Moroccan dishes.

I think the black beans would be good with the Couscous too.

We do like Cilantro so will try this soon. Thanks Wilma.

This is awesome Sunny. Great idea. Never had Couscous. Here is the one that I came up with today:

Quinoa with black beans



3 cups cooked Quinoa
1 cup chopped peppers (red, green, yellow)
1/2 cup chopped onions
1 can of black beans
3 galic cloves
1 tablespoon olive oil
salt and pepper to taste
1/2 cup fresh cilantro

In sauce pan add 1 tablespoon olive oil and garlic. Let it cook for about a minute then add the peppers and the onions. Again cook for several minutes until they are tender. Add black beans and sauté for several minutes. Add the three cups of cooked quinoa and salt and pepper to taste. Mix it well then add the fresh cilantro. Enjoy!

I got this one today from Cooking.com

Vegetable and Chickpea Couscous

Inspired by a Moroccan tagine, this quick vegetarian dish features potatoes and carrots, but sweet potato or cauliflower would work nicely as well

ingredients
2 tablespoons oil
1 cup diced onions
2 garlic cloves, minced
1 cup small-diced carrot
1 cup small-diced waxy potato, such as fingerling
1 teaspoon ground cumin
1 1/3 cups Israeli couscous
3 cups vegetable stock
1 cup golden raisins
1 1/2 teaspoons salt, or to taste
Freshly ground black pepper to taste
directions
Heat a large skillet or saute pan over medium heat. Add oil and onions to the hot pan and stir for a couple of minutes to soften. Add garlic and cook 30 seconds longer.
Add carrot, potato and cumin and continue cooking for 2-3 minutes. Add couscous and stir for 2 minutes.
Add stock, raisins and salt and continue cooking for 10-12 minutes, stirring regularly, until couscous and veggies are almost fully cooked. Lower heat to low setting, cover and let sit for 2 minutes or until couscous and veggies are done.
Add pepper and adjust seasonings to taste preference. Serve immediately.
