LOLABRUG, Greek week sound yummy. I've never tried making my own pita, but I should once I have a new oven (the bottom element in mine is fried). I recently bought a tortilla press so I can start making my own tortillas.

I know some of you will laugh at me or roll your eyes when I say this, but it's sooooo cold in The Burg this morning. I woke up to 45F and for me that is just plain frigid! I live in The Sunshine State for a reason!

Sounds like everyone had a great Thanksgiving. I went traditional on Thanksgiving and throughout the weekend. I am flexitarian. I went back to PB yesterday. I was rather disappointed. All the food was great but I did not feel that it was all that special after giving up PB for the holiday. THAT is a good sign! PB is not all that difficult for me as I have dabbled with it on and off over the last few years. Today I decided it was 'Greek Week'. My meal prep was homemade Pita bread, homemade hummus, chickpea tuno salad and falafel (baked). I sampled all. Very good. I used oil in the hummus and did not find a real distinct difference compared to an oiless recipe so I will not use it next time. I used flax egg in my falafel and did spray some canola on it before I put it in the oven. I put dried cranberries and nuts in my tuno salad, had it on a bed of spring salad with apple slices, red onion, croutons and blue cheese dressing (didn't feel like making any from scratch). It was great and I calculated that all that food was around 5$ to prepare. Also, I am realizing more and more that meat is a vehicle for flavors and when those same flavors are used in a meatless recipe the meat is not missed. DH would not agree. I made him a small roast with potatoes and carrots, drowning in cream of mushroom soup and he was in heaven. I am interested in these studies you have been showing us but I need apple news to open them and then I can't find them. Any thoughts? .To those that have mentioned health problems of your own and your loved ones, I want you to know that I am thinking of you. I am wishing everyone a blessed holiday season. My holiday celebrations are over until New Years Eve so temptation is beyond my reach. Good luck to the rest of you towards clean eating and other health goals. Mrslivingwell, so true about our legislators. They should also try living on minimum wage for one year. Oh, and no nannies, they would have to take care of all of their own childrens' needs while working full-time for the year.

You are right about that, Spring! Eating below the poverty line is pretty unhealthy. There is just no room for much in the way of fresh fruits and vegetables because you have to be concerned about calorie density and most fresh food just doesn't have that. I geared my shopping towards protein and calories and that didn't leave much room for fresh healthy options. Beans and rice....lots and lots of beans and rice! It's probably going to be a really good thing that I live alone!

Sorry itís been quiet, but Iíve been reading posts. I canít imagine either estimated on $1.50 a day. I will save on groceries this week though. Weíve stocked up for hurricane season etc and now itís time to get into it. Also with just two of us I cook and put some in the freezer. So basically weíll be eating out of the pantry and freezer. I will need things like flour etc.

We havenít put up a Christmas tree since we retired to Florida. However we both decided weíd have one if and when we move back to the midwest. I do have lights and garland etc.

Holly, Love the cat pic, I'll bet he manages to get to quite a few of those balls!

I'd definitely read that blog. I can't imagine only eating $1.50 worth of food a day, that's not a whole lot of food, and not a lot of variety. And, I'm not sure, but I believe that the majority of people eating below the poverty line have very unhealthy diets for a variety of reasons.

Ican: good on you to take care of it early! Reminder to everyone to protect their lips. I need that reminder too, since I always wear a hat outdoors, but forget my lips.

Personally, I don't like those tofurky things or vegan "roasts". I just love all the sides from Thanksgiving and eat them all year long!

One thing that I have not been able to buy at either Krogers or Walmart is frozen corn on the cob. That is something we like fresh in season and frozen otherwise. Waaaa.

Where did everybody go? It's been very quiet in here.

Next week I'm going to take on a little experiment and attempt to eat below the poverty line for a week. I'm given to understand that, without supplemental government funding such as SNAP, that's about $1.50 a day ($10.50 for the week). I've never been much of a blogger, but I'll be blogging my progress here on spark if anyone is interested in seeing if I make it through the whole week without losing my mind due to lack of variety!

Yes, too many. I have a "thing" on my lip the dermatologist needs to look at. I have had skin cancer in the past. There is also a tooth with a fractured root, thus, the periodontist. The neurosurgeon is my regular check up after back surgery.

I am using Dr. Fuhrman's book for the Biggest Loser challenge.

About cats, I purchased the unbreakable ornaments. They don't break, but in past years we have found the occasional one on the floor underneath a piece of furniture.

Well, it is Monday morning and the last day of November and I am back to work. At home of course, but I've had the last 9 days off and oddly, getting back into the groove wasn't that difficult.
Yesterday I put up some Yule decorations outside the house. Decorating inside is pretty much impossible with 7 destructive cats!

Today I'm going to make the Thai Rice Salad Bowl from the Forks over Knives Fall 2019 magazine. I've decided that I haven't made enough use of the magazines and they have so many wonderful recipes in them, so this week I'm going to make something different from one of them every day. I'll try to remember to take pictures before I dive in at dinner time.

I drove downtown this morning and walked the bay then went to the Saturday Morning Market. I've spent most of the day cleaning though. With seven indoor cats in this tiny house, the cleaning never ends!

I cooked my Thanksgiving meal by making a dish and then sitting a while, then another, etc. It worked out. We did not overeat, either! Later in the day we had some friends over for pie. It was SO NICE to see them. I feel like a "shut in."

Doctor appt. was moved to next week. I have THREE doctor appts. next week, neurosurgeon, dermatologist and periodontist (the one I dread the most) I have a strange growth on my upper lip that needs checking out. I hope to fit in physical therapist in. I get tired if I do too much.

I hope each of your Thanksgivings were good. We live away from family but did communicate. I made a yummy dinner of stuffed acorn squash, green beans, apple salad and crustless pumpkin pie. I havenít been that stuffed in a long time. I had made a big pot of weight watcher cabbage soup. Itís an old recipe, easy, but basically itís all non starchy vegetables. Very low calorie and no fat. That was for supper if anyone wanted it. I was still full so passed.

NIGHT, I love the meet up idea! Once travel is safe again we should definitely pursue this. And I agree about Violife feta. It is the best! Greek salad just wasn't the same without feta.

ICANINSIGHT, good luck with the Biggest Loser Challenges. I used to do challenges with one of the BL groups, there are at least two different ones here on Spark, maybe more. I was on the Black Panthers team.

I hope it is not too soon, but I joined the Biggest Loser Challenge. I mean too soon for more exercise, since I get winded walking outside with the physical therapist. You can use whatever way of eating you want and I will stick with this one.

Linda Iím glad to hear your DH is encouraging you. Thatís a good sign. He may yet join the bandwagon. My DH is good with vegan for himself.

Bacon grease, yes mom saved it. As a child I dug up dandelions and she would wilt them with a little grease and some vinegar I think.

There are tortilla chips in the house. Too much fat for me, but I indulged. Iíll put them in the back bedroom and DH can get them when he wants.

Oh, so many wonderful recipes, so little time.

I like both Chao and Violife also, but am trying to get a little more away from packaged stuff. That may be my one New Year's resolution.

I just checked out Chandra's Chickpea Cutlets - will definitely be trying them, and also the homemade tofu feta.

And grilled avocado with nooch sounds delicious, I never thought of putting those two together!

I LOVE tyhose cutlets!!! so good and great thing to make when I happen to have enough chickpeas but do not want to make hummus.

Our family- as the kids got older very often like to have Thanksgiving at friends houseand we all tend to think of it more as a harvest dinner.

Later in Dec it is Solstice for us and celebrating the return of the sun.

I have yet to try the violife. Chao is ok- although I prefer a grilled avocado with some nooch put on top of the avo That and tomato soup- home made. Heaven.

I am so happy to have amazingly wonderful plant-based cheeses. Never thought I'd have a grilled cheese sandwich again until I tried Chao slices! And Violife Feta? Heaven.
That said, being vegan really broke my cheese addiction. Now I find I don't crave it at all. Time and a good path of healthful foods helps us with so much, yes? PS: Thanks for the recipe for feta, Mrs. It looks to be much more healthful than Violife.

This holiday season can be a hard one for so many. I have mixed feelings about it and so do what I can to honor and support Native American Nations - particularly, the Navajo Nation which did so much to Get Out the Vote in Arizona even though they are one of the hardest-hit areas in the country.

That said, I am going to make Isa Chandra's chickpea cutlets which are so, so yummy. Even the non-vegan in the family enjoys them.

Holly, I'm so sorry about your parents not being inclusive about plant-based food! Maybe one day it will be safe for us all to gather somewhere in the middle of the country and have a healthful meal together. Chicago?

For me cheese and dairy eggs were the first to go.
And although I belong to this team I am not 100% vegan- I will have fish maybe once a year or an egg once in awhile etc. Rare exceptions.- it is probably why DH is 99% vegan though. It works for us. He eats all kinds of great vegan food pretty much all week and then we make an exceptions on holidays- sometimes.. but sometimes we don't . He loves the mushroom loaf I have made for thanksgiving.

Mrs. L, I got a kick out of hummus toast.

Since I keep having teeth issues (among other things) this year, I thought out loud, to dh, "Do you think I should stick with vegan? Could it be causing my teeth problems?" He said, "Good grief, you are doing well on it, just stick with it!" I was not entirely serious, just thinking out loud.

Yes, we had the jar of bacon grease in the fridge too growing up until my mom became enlightened. Interesting tidbit, she was mostly a vegetarian when I was a kid. She had meat, but very little. Our main staples were beans and greens with cornbread. She cooked the meat for the rest of the family.

I was looking a cancer statistics yesterday, just curious. Denmark has the highest incidence, not because of cheese but because of drinking and smoking and getting all the sun they can when they can.

Bacon grease, ha. I remember my Mom always had a jar of bacon grease in the fridge to use for frying. Every time she cooked bacon the fresh stuff would just get poured on top of the old once it cooled. Yikes emoticon

Spring: You are right! I went back and fixed the recipe I posted. Firm tofu is the main ingredient, haha.

Holly: All that sounds delish for thanksgiving. There is no reason why Thanksgiving dishes can't be healthy and vegan. I saw what you posted you had for breakfast (Korean pancake with leeks and a ton of sriracha) How do you make those. It sounds good!

Also, regarding the amount of cheese you ate. I used to put it on everything! That's how I grew up. Once you really start examining, tracking what you eat you really get some insights. It's good to be accountable. I found out so many little things I was doing that added up to pounds and cholesterol: 1/2 and 1/2 in my coffee, too much daily caffeine, too much peanut butter and butter in general. I sauteed using bacon greese and chicken grease! Sheesh!

Springtime: I assume you are asking which tofu I use to make the feta? I live in the way-boonies so feel very priviledged to even FIND tofu. So I buy whatever firm tofu there is!

As for cheese alternatives - I don't buy them because they contain tons of oil to replace the dairy--and that is very unhealthy for my arteries and makes my cholesterol high. This is why I follow the plan by Dr. McDougall that is whole foods plant based no oil. That is why I make the tofu feta and also Jill McKeever's Game changer cheeze sauce. They do not contain any oil. OIl, by the way, also contains a lot of calories without nutrition. In other words, eat the olive, not the olive oil.

As for organic--I don't buy organic unless it is less than non organic I grow what I can organically but feel that the organic label is not sufficiently investigated and often is a license to charge more.

Last: even though I was put on a statin and gave up meat--it wasn't until I ditched dairy and cheese that my cholesterol dropped like a rock.

I'm going to my parent's for Thanksgiving, as always, which means I'll have to take almost all of my own food because they make no effort for me. I bought one of those little Field Roast celebration roasts that is stuffed and I'll take roasted carrots and potatoes (for everyone), shaved Brussel sprout salad with dried cherries and toasted pecans (for everyone), and the Daiya pumpkin spiced cheesecake.
Spring, your sweet potato latkes sound good. I've never used sweet potatoes to make them before.

Holly, 9 pounds - I'd say wow but I probably used to eat the same (I could eat an 8 ounce block of cheddar in a day and half). emoticon

I've been vegan since January, but have had a few cheese slips. The more replacements I find, the less I revert back to it.

Linda, your meal sounds yummy. I'll be having Vegan Apple Sausage Stuffing, Sweet Potato Latkes and Marinated Green Beans (all PCRM recipes). Then round it out with some garlicky spinach or kale.

Springtime69: I make a ziplock bag of the soy feta and store flat in the freezer. When I want some, I crack off some and defrost. I love it on my vegan gyros.

Vegan Feta Cheese
1/2 pkg firm tofu cubed
3 tblsp lemon juice
2 tablespoons apple cider vinegar
1 teaspoon onion powder
Ĺ teaspoon garlic powder
1 tsp dill or oregano
1Ĺ - 2 teaspoons salt , or to taste

This week I am creating the traditional Thanksgiving meal only vegan. The only thing not vegan is dh's turkey breast. So vegan dressing, potaotes, broccoli salad, green beans, rolls, pie, etc.

Sharon, I'm so sorry about your daughter's diagnosis. Hopefully her treatments won't be too difficult since it's in early stages. I will light a candle for her and keep her in my thoughts.

I agree with everything you guys are saying about cheese. I was that vegetarian for 13 years, always claiming that "I could never give up cheese". I had tried going vegan a couple of times, but it didn't last long. Giving up the eggs wasn't a problem, it was giving up the cheese that I, let's be honest, "wouldn't" do. In February of 2019 I decided to see how much cheese I was consuming in a month and I tracked it. I consumed over 9 pounds of cheese that month!! I was absolutely floored. That was the beginning of the end for me. It took a few of months to get past the slips, but I did. In the end, you can give up anything if you really want to.

My Mom stopped getting mammos in her 70s also. She is currently 89 and going strong.

New-Hope, Welcome. Sorry to hear you had such bad experiences with your mammos. Mine have generally been uncomfortable but not so painful. That being said, I do worry about the possibly unnecessary radiation.

I learned this past week that our daughter has breast cancer. Itís in itís early stages so she will do what is needed. She is 52. I advised her to give up dairy. Now I need to talk to her twin sister to see if sheís up on her mammos. Iím 74 and have opted to not have anymore. My primary would like me to have one last one though.

NEW-HOPE: Cheese was a very hard thing for me. I started out by only using it on the things I absolutely loved it (enchiladas, hamburgers). Then I only used a tiny bit of feta to get the taste, but less and less each time ( and switched to veg burgers and ground beef vegetable replacements). Eventually, I weaned myself off the feta and now don't miss it.

I have made vegan feta from tofu and like Jill McKeevers Game changing cheese sauce. I don't think it totally replaces the cheese in mac and cheese so I don't use it for that (just avoid Mac and cheese). But, I do love it on pizza!!

I think every vegetarian I've ever know has said they can't go vegan because of cheese. And most vegans I know say that cheese was the hardest to give up, even more so than the meat.

Popping quickly to report that the just egg version of potato /farina dumplings were a bust. It could have been my fault they disintegrated (but the dogs like the soupy remainders). I ran out to pick some vegetables from the garden and forgot to turn down the heat so they boiled away. They need to simmer. I'll try again though and report back. Enjoy your weekend!

NEWHOPE yes when I started this WOE, meal planning was the hardest. The plate always revolved around what meat you were having. Now I start with the vegetables then add a starch. For instance if itís stir fry veg, the starch might be rice or rice noodles. Donít worry about protein. If you eat enough youíll get plenty.

Yes I was a cheese-aholic too. Dr. Goldhamer refers to cheese as coagulated cow pus because the government allows a certain percent of pus in it. That did it for me. Ever tempted I think of that. Now I donít miss it.

I tend to look for recipes with beans and lentils as the main ingredient, that takes care of my protein for the meal. Then healthy starches as Osoniye has listed and round out the meal with some greens and other veggies.

it's the second post down. There are some very good vegan cheeses on the market now, but you won't get too much nutrition from them, and sometimes a lot of sodium. But they may be good to use in the beginning to help you get away from the real cheese. There are also fake meats on the market to help with protein but, again, you'll probably not want to use these too much since they are highly processed. Fresh, whole food is always best.

Personally, I start with the starch. That has made everything easier for me. I follow McDougall's plan, mostly. So the starch is usually oats, potatoes, whole wheat pasta +/- beans or lentils. I eat a lot of salsa and tomato sauce with the above, carrots and pumpkin in my oats. Tons of frozen vegetables that steam in the bag. Keeping it simple here. Though I enjoy watching YouTube for recipes, I have not tried a "cheese sauce" type of thing yet. I would go with foods more in their natural form for a while.
