I've done some "Experiments" with the Butternut squash,( which I use often)... A fruit and vegetable punch, mixing cooked puree squash with Orange juice and topping off with Ginger-ale to give it a fizz. It keeps getting better each time I make. One day I be able to give specific quantities for making large quantities..

Yes, all kinds. As a child growing up my father was a farmer (you couldn't let him hear you say"I don't eat Or like anything that was cooked).As a adult I went through many likes and dislikes but has an appreciation for vegetables of any kind. I'll cook ,bake,bar-be-que,grill,liquefy/juice them in an effort to use as many as I can.

I love all kinds of squash! Glad you started this topic because now I am motivated to search out squash recipes. I would like to start eating alot more squash as it is good and low in calories. I am growing yellow squash in my garden now and can't wait till some is ready to pick. For some reason the zuchinni is not coming up so I will have to buy that this summer.

Didn't like it as a kid but eat it now.

Since dh passed away a couple of years ago I have been able to try things that he would not eat (he wasn't a vegetable man, lol) and squash has been one of them.

I have a squash casserole that I make and even the grandkids like it, though grandson is more like his Poppy and I have to kind of make him take some bites. I also chop them up with some red potatoes, onion, olive oil and some spices and bake them in the oven and it is great.

Yes, its yummy raw in a salad ...provides a different flavor from cucumbers!!

Also love it roasted with onions and peppers.

It s the last thing to go on top of tilapia that has been baked

I love it!!!! I make a squash recipe with zucchini, garlic, salsa and chunks of low fat cheese (combined all in pan and toss in the cheese just before serving) it is to die for...even my kids loved it served it with a Mexican meal...really good emoticon emoticon

No! The thought of zucchini makes me sick (unless it is baked in a quick bread with a lot of cinnamon!) I don't like squash, either. I do like pumpkin pie. I make a delicious pumpkin bread with cranberries and pecans.

Squash leaves me cold, although sometimes when someone else serves it, it seems better!
My Mother used to bake acorn squash with maple syrup, and I liked that. Here in the 'Burgh we find paper thin slices of zucchini in tempura batter delicious. It is the hallmark of a good Italian restaurant. Not too good for you, but really good to eat!

Yes! Squash is great...all of them. I think I have zucchini at least once a week...had it last night on shrimp kebobs! I've never roasted squash with applesauce. Sounds interesting. The butternut with goat cheese sounds very good too.

I don't like squash but will eat the acorn squash, baked. I fix it on occasion as my DH really loves it and I eat a little with him.

I love all squashes, steamed or roasted with soy sc. and balsamic vinegar. The spaghetti squash is excellent eaten like spaghetti with sc. on it. It is all good.

I love squash,and I am always on the hunt for new ways to prepare it. Butternut and acorn are my winter favorites and spaghetti squash is a great alternative for pasta too.

I love zucchini, but the only way my husband likes it is in zucchini bread, and I try to avoid that. So, I don't buy it often. I like roasted acorn squash occasionally, but not the work involved, so I buy it pre-cubed.

I LOVE squash. Especially Buttercup in the fall. It's flavor always reminds me of the cooler days and the crisp leaves. YUM!! I like to bake it and put some in individual servings in the freezer for lunches. It is ridiculously low in calories (until you add butter!) I have cut back a lot on the butter I add so it turns out to be a very healthy choice.

I emoticon LOVE Squash! If you take a look in my freezer right now you will see an abundance of frozen yellow summer squash and zucchini I personally grew myself this year. The whole family LOVES it and I try and prepare it in different ways or add it to other recipes. Last year I got introduced into growing Patty Pan squash which are the cutest little veggie that look like UFOs. What a great little surprise to try and get kids to try squash right?

As for winter squash, I grew butternut squash which when baked with cinnamon and maybe a sprinkling of brown sugar is emoticon and its texture and taste reminds us here in our family of pumpkin or sweet potato pie without any crusts involved.

I am currently looking into what I could possible grow as a winter crop here in NC and am interested in winter squash selections to incorporate into my family's repertoire of healthy veggie choices to get us out of ruts.

Whenever my husband buys it for me. I'm the only one in the family who likes it so if I don't request it, I don't get it. We did plant a garden for the first time in 20 years and we planted squash, so I should be able to have some from my own garden this year. I like acorn the best, but I am going to try some others, like butternut (which is one of the varieties that I have growing in my garden) soon. I have baked it and microwaved it. It's good either way.

Summer squash was the only fresh vegetable I remember having as a kid. It was my dad's favorite and we had it a lot. In the 90's we liked zucchini with onions. Baking the winter squash with applesauce sounds so good, but I haven't done it. I want to try the precut cubes of it the supermarkets sell, or bake it halved, just haven't done it yet.

How could I forget - I did have fresh corn, just not as often as the squash.

Summer squash and zucchini, yes. Winter squash, no (or not usually, as I don't really like it except baked with a little maple syrup).

Yes, I love squash! Unfortunately my husband doesn't so I don't have it often enough! Love both winter & summer squash and generally steam it but love it baked too, as you put here Carolyn!

Winter squash grows here in Africa where I live on the equator. Don't ask me why the people plant winter squash but not summer squash as we have year round summer weather here. Winter squash does has more calories than summer squash but they are still good for us. It is now the season to buy squash and I have had it a number of times. I usually just steam it.

One thing I've done with these huge squash is to cut it in two. Put it face down in a pan of about an inch of water and bake it. When it is baked, turn the two halves over and fill them with applesauce and top with cinnamon. Put back in the oven to heat the applesauce. Serve. Yum.

Do you eat Squash? What kind? How do you fix it? Will your kids eat it?
