I've had asparagus is restaurant a few times and loved it but never bought it as I didn't know how to cook it! This post has given me a few ideas and I think I'll pick some up when I go shopping this week.

It's so delicious!! I just had some last night - I marinated it in a little EVOO and some Tastefully Simple Seasoning Salt, then grilled it. It was amazing - I love it grilled!!

So many great ways to cook asparagus! Thanks for sharing! I usually grill it our roast it with garlic and olive oil, but saw some good changes. I do the same thing with brussel sprouts and then we dip them in a dip (greek yogurt, green onions and dill weed).

My favorite is grilled or roasted asparagus drizzled with a little olive oil and sprinkled with sea salt, parmesan cheese, and sometimes minced garlic. Love it!

I've made it many ways. One I really liked was I sautéed fresh garlic in a little bit of olive oil. added the asparagus and squeezed orange juice on top then sprinkled Mrs Dash table blend on it. It was soooo goooood!

I cut and saute my asparagus in EVOO too, add some Wasabi (Japanese Mustard) to give it some kick! We love it!

Roasted asparagus is one of my favorite ever foods! When they are done, sprinkle some lemon and a tiny bit of salt, and they are delicious!! I have some in my fridge for supper tonight:)

I just bought asparagus yesterday and wasn't sure what to do with it....I am thinking of roasting it too. I have never made it so I am taking notes on everyones cooking suggestions! ;)

I love asparagus!! Steamed, on the bbq, or broiled (put a little of fav olive oil with some sea salt broil 10 mins turn over 7 mins it is like asparagus fries my kids love them).

Loving Asparagus! I even got my 3 year old to eat it...Normal way to cook it= Little EVOO... saute.. 2 tbs of water to steam a little.. Then a splash of Soy Sauce. Now the other night I added some Honey Ginger Balsmaic Vinegar to make a glaze on it... It was the PERFECT vegetable.

We have been getting a good amount every night now for a week; YUM!!!! I enjoy it steamed or roasted with just a pinch of salt & pepper.

Catherine, I can't wait to buy some asparagus on Monday and try out your recipe. It sounds wonderful. I used to turn my nose up to asparagos but a friend of mine steamed it and added several spices and it was delicious. Since I joined SP a week ago, I have been searching for new side dish recipes because I am tired of eating the same old veggies.

I tried a new asparagus recipe yesterday.

Put 36 spears in a glass 9 x 13 pan. Mix 3 Tbsp lemon juice and 1 Tbsp olive oil. Pour over asparagus and toss to coat. Sprinkle with fresh pepper and a pinch of salt. Roast at 450F for 25 minutes or until tender crisp.

I really love it. I steam in in micro-wave for about 1.5 min and try to make the dressing as non caloric as possible, using nonfat miracle whip, and mustard. The grandkids like it raw and when they were little use to ask for the "tree" veggie because they thought it looked like a tree.

VYVIENN - how fun! I was just going to post that living in Germany makes asparagus a stable in my diet from April till June emoticon I love asparagus and would happily eat it every day in season, and will do so most days actually.

Asparagus is kind of unavoidable here in Germany when it is in season (April - June), though you usually get the white. We like that one cooked with ham, potatoes and a nice Hollandaise (there are wonderful light versions available). One of my favorites, actually, is a green asparagus salad with a fruity vinaigrette and fresh strawberries - fab!!

Glad you enjoyed it, and I'm happily surprised to see that so many people like it. Oh, and if you can get it canned, especially the white, it's great on homemade pizza, too!

I like to marinate it in light Italian dressing and grill it! Add whatever other veggies you like; onions, peppers, zucchini! Makes a nice vegetable medley. Eat alone, serve over rice or pasta! Enjoy

So much fun trying out new veggies! I also love asparagus in an omelet, with a bit of low-sodium cheese. Yum!

I bought kale for the first time this week (don't often find it here, for some reason) and am going to try it in some soup. I looks like it would stand up to the heat better than spinach.

I know.....not a huge deal. But It's something that I hadn't tried before and it happened to be on sale at the grocery store so I figured we'd try it as something new. Oven roasted it with olive oil, balsamic and salt and pepper..............YUMMY!
