I tweaked a recipe from You Are What You Eat...a sweet potato and butternut squash vegetarian shepherd's pie. It's so warm and sweet on a cold night, and right now is a great time to get the veggies I need!

Thanks for the tips on how to cook cranberries. I have never cooked fresh cranberries, so I am anxious to try! I have enjoyed making eggs for lunch this fall. I also like using sage and add it to soups and stews.

Lately I've been cooking steel cut oats with pumpkin and all the spices that make it like a pie. Stevia or agava for sweetness.
Something different for a snack I put a large tablespoon of cold pumpkin oatmeal on sugar free pudding with one gramcracker broken.

Also love it when fresh cranberries come on market. I cook them is stevia sweet water and two tablespoons of real maple syrup. Then I use this on oatmeal, pancake, or whatever I want sweet.

I'm making the cranberry salsa today to see how it goes on salmon.

I've never cooked much with tapioca ... but it sounds interesting, I'll have to learn how to use it more. I love cooking with V8 for sauces and stews. Does anyone know if they discontinued the high fiber V8? My spaghetti sauces are a little thin without it.

I love the cooler months! Being able to use the oven and stove-top (instead of the microwave or grill) brings such enticing aromas to the whole house. We eat a LOT of soups during the cool months. I reserve at least one weekend during October during which I prepare 8-10 different soups, chowders, etc., which I now prepare in a much healthier way (we do low-fat/low-sodium). I then store the various soups in 1-2 serving containers (or zip-lock baggies) and put them in the freezer. Then we just pull what we need from the freezer and reheat. This also works well when people want different kinds of soup at the same meal.

I also cook a lot of homemade multi-grain breads of various types. I use pumpkin and squash for almost anything--soups, salads, main dishes, desserts. I miss the fresh fruits and veggies of summer, but I also love the winter veggies and fruits--pumpkin, squash, turnips, apples, etc., etc.

Butternut squash - anything. I make soup, pie, cookies, pizza, and it is so yummy just baked. MMMMM!

We had applesauce with our dinner last night. Mmmmm....yummy.

Tonight I'm making blackened salmon filets for dinner and DH and I are going to share a baked sweet potato. We'll have a salad and some steamed broccoli to round it out. And there are 2 servings of that blueberry cobbler left. Won't be after tonight! LOL

Pumpkin pancakes, and baked apples...they are my fall favorites. I also make this sage sausage and squash chili that is so yummy.

It turned drastically colder here night before last and remains about 10 degrees below normal seasonal temperatures. I want a big pot of homemade chicken-noodle soup that's chock full of veggies.

I too love soups, stews. In the fall when the vegies are plentiful in my garden, I can a soup mix of the different vegies we like in our soups and then when we want soup, we just boil the chicken, add the vegies and soup is that much quicker - great time saver for busy week days!

Baking doesn't always have to involve breads and sweets, either.

Last night for dinner I made Parmesan Crusted Chicken and baked potatoes in the oven and put veggies and a salad along with it. It warmed up the house and smelled so good while it was cooking. Didn't taste too bad, either. It's a nice substitute for fried chicken when I get that craving.

I think the baking may be that it is a great way to warm up the house before you are ready to turn on the heat.

For some reason I also bake more in the fall than other times of the year. I love breads and cakes to share with friends at work.

While the weather is still warm: salads, BBQ chicken & veggies, cold sandwiches/wraps.

When the weather cools (and I'm still waiting): soups, stews, spaghetti, hot sandwiches, and roasted turkey.
