I found a great recipe for copycat Starbucks sous vide egg bites. They are super easy to make with an instant pot and reheat nicely. I like to make a bunch for grab and go breakfast during the week. eat-drink-love.com/instant-p

I try to meal prep on one of my days off. I'm usually only successful every other week. My first time I got very ambitious and made 4 different meals for all three of us in the house (husband, son and me). It took about 2 hours, but I feel like it was worth it to save 30 minutes in the morning. My son's favorite was the turkey pesto wrap (deli turkey, pesto, cream cheese, tomato and lettuce wrapped up in a garlic herb tortilla). Since I'm the only one working right now, meal prep was easy this week. I made Greek chicken bowls (chicken breast marinaded in olive oil, oregano, thyme, garlic and onion, farro, spinach, grilled zucchini with feta and yogurt cucumber dill sauce.

When I buy veggies I will cut them up and portion them into snack sized bags for easier lunch packing.
