A few of my go to workday breakfasts are:

- Hard boiled eggs with sausage (or fruit or toast). I will make 6 or 8 eggs and cook up some sausage or bacon at the beginning of the week for grab and go during the week. Usually the breakfast meat doesn't last more than 2 days in the fridge with my 13 year old boy.
- Smoothies. I always keep greek yogurt, spinach and frozen fruit on hand.
- Copycat sous vide egg bites. There are a bunch of recipes on Pinterest. I'll make a bunch over the weekend and the reheat nicely.
- Cottage cheese and fruit.

I saw this recipe on YouTube:

Tortilla Breakfast:

1 flour tortilla
2 eggs
shredded cheese.

In the middle of the tortilla, crack 2 eggs.
Sprinkle cheese all over.
Microwave 2 minutes.

Voila!

I love sweet potatoes diced up with homemade turkey sausage (basically, I cook ground turkey with my favorite spices- sage, ground mustard, turmeric and red pepper flakes). Its easy to make a big batch and heat it up all week long.

Mug French Toast

2 pieces of bead in bottom of a coffee cup.
Mix 1 egg, vanilla, a little milk and cinnamon then stir and pour over bread.
Microwave for 2 minutes.

Voila!

Serve with butter and syrup!

I got some prepared Tobbouli at Trader Joes (it comes in a small tupperware near the chicken salads), apparently s/b spelled Tabbouleh and I mixed it with canned tuna. Then I put a spread of it on half a bagel. Under 300 calories altogether.

Great ideas! Love the english muffin idea :) I haven't tried smoothies with fat free milk...I'm slowly transitioning lol. But maybe in something like that it wouldn't seem as "off" I usually drink 1% or 2% depending on where I'm shopping as Aldi's doesn't have 1% in the gallon jugs (yet). But FF in a smoothie would probably be totally yummy!

Hi,
Lately about one or two times a week I have an english muffin toasted, a fried egg (pam cooking spray), Lite Ham 1/2 slice and 1/2 slice of cheese that melts on contact with english muffin and hot egg. Very good, no condiments. My husband puts ketsup on his.
I figured with the products I use it's 300 calories.

Also if you can make your own smoothies:
1 cup any fruit (can mix fruits still measure 1 cup), 1 cup Fat Free Milk, 8 ice cubes, Blend and drink with a straw - Takes a long time to drink!!!

On those lines I discovered blending chocolate Fat Free Milk with 1 banana is the same as a slim fast shake regarding nutrients and calories.

I Looked and looked for a way to have a fast, yet healthy breakfast in the morning. Oatmeal would be a good option, but by the time I get done adding sugar and even fruit and such, it can get pretty calorie heavy. I try to stick with eggs and then I happened upon this little hint somewhere online.

Make Mini Omelettes! Tried it this weekend and it's awesome! Here is my recipe

6 eggs-scrambled
1/2 green pepper, diced
1/4 onion, diced
1/4 c. cheddar cheese
4-5 pieces of crumbled bacon
4-5 baby bella mushrooms

combine all ingredients and spoon into greased muffin tins, bake at 350 until firm. I used Pam to grease the muffin tins but I'm thinking next time I'll just use butter. The Pam cause a little bit of a crispy, bitter outside that I would like to avoid for next time. They turned out pretty darn tasty other than the very outside edges which are still way edible. Let them cool and place in the fridge. Whenever you want one, just pop in the microwave for 20-30 seconds and you are good to go! Plus they are portable and only about the size of a muffin :) this recipe made 9 mini omelettes.
