When I do that he really doesn't get full. He will snack on junk if I do which further tempts me lol. His job is very active so he requires a lot more calories than I do. And honestly, the guy could stand to gain a few pounds. We started eating better and he lost weight (He is now down to about 157... I'm at 158) haha so I don't mind him eating a lot. Plus we use leftovers as lunches the next day or so.

Hi MissMe,

I bet if you served him less he would eat less.
Maybe that's worth a try?

I know I would have food plan trouble if I
served more than I could eat per meal.

I just started doing this yesterday but I made a TON! I'm cooking for two but I swear my BF eats the amount of 3 people. Yesterday I managed to whip up 3 turkey meatloaves (frozen in 1/2 meatloaves that way I can pull out a little or a lot depending on how hungry he is), 2 lb sloppy joes, 2 lb plain ground beef that is probably going to be tacos, BBQ turkey breast in the crockpot (LOVE that crockpot meals basically cook themselves), 3 heads of cauliflower pureed to replace mashed potatoes and made into 2 flavors, plain and garlic herb, finished off by making a large batch of quinoa :) I know it only takes about 20-25 min to make quinoa but it freezes well (I read) and that saves me 25 min of cooking :)

Tomorrow I'm planning on cooking italian beef in the crockpot as well. I was still getting dishes washed this morning haha.

Today I cooked brown rice for a few days and pasta with no tomato sauce. I used small pat of butter and homemade hot sauce instead. It was great. Yesterday I made homemade chicken and vegetable soup without any fillers. Trying to keep it simple.

My weekends tend to be too busy to be major cooking days. My method is to use my slow cooker on Sunday or Monday to cook up a large amount of food. Then I use that to make various meals during the week. For example, I'll make my Rosemary and olive oil chicken in the slow cooker and serve that over brown rice with vegetables Monday. Then Wednesday I'll make one batch of leftovers into chicken fried rice by just reheating it in a pan with a sauce. Then the second batch of leftovers might become a chicken salad.

I never have the time during the week so Sunday is my cooking day.

I make two big batched each Sunday and freeze half of them.
That way I have two different lunches to last me the whole week plus something frozen for those week when I have no money or no inspiration.

I make my menu for the week and then I cook each day.

I, too, prepare my meats and bulk veg on Sundays. I am preparing for just myself tho! I tend to put 2 or 3 servings together in each pkg. hoping that I can talk mom into a healthy option, but this doesn't usually work. Something that I have found helpful is to not prepare a gravy or sauce that I add pre-freeze to my meats. Sometimes by just par-cooking them it is easier to add them once I finish them cooking. This is just seeming like a babble, but just weanted to add some words....

Sundays are usually my cooking days for the week, although it's difficult for me to set a cooking day for weekly meals during this time of year because the DH umpires a lot in the evenings.

I haven't started any of that yet. I am working on meal planners but it is difficult as I never know when Gary will be here.

Hi all,

I have decided that Saturdays and Sundays are going to be my "Cooking days". I am planning menus out up to a month at a time and hit a big meat sale today. So I declared today a cooking day. I have made and froze 2 lbs sloppy joes, several pounds of plain ground beef, 2 lbs taco meat, marinade chicken breasts frozen in the marinade, etc. I also diced up pork and chicken for use in stews and various recipes. Basically anything to make meal prep easier on the day we have the meal. Tomorrow is spaghetti night here, so I have the meat already cooked and in the fridge. All we have to do is make the garlic bread, cook the pasta, and add the sauce and meat. Does anyone else here do this? Does anyone have suggestions on freezer friendly meals?
