Thanks for the tip - if there are any you've tried and especially like or dislike - so we can all learn rather than trial and error - that would be great.

One other link to check would be www.mayoclinic.org and click on health information. This will take you to a page where you can find recipies. They have recipies for heart health, general nutrition, low-sodium, and diabetes. Plus several others including gluten free diets. Happy hunting.

Amshark - maybe you should join me next Saturday as I play Vanna White at our local Heart Ball and silent auction! Thanks for your suggestions.

Almost forgot about the feta.

Sorry, but I LOVE feta, so I've never tried a substitute.
I imagine another light cheese might work - something without too much moisture like Parmesan or a romano.
Or what about tofu? It has a similar texture.

The recipes that I've shared here are available to anyone. You can visit the "Delicious Decisions" section of the AHA website to search the recipes they have posted:

www.americanheart.org/deliciousdecis
io
ns/jsp/home/home.jsp

If you are considering buying one of AHA's cookbooks, it's probably a good idea to check out some of the free recipes that they've posted on the web first. (If it's published in a cookbook too, I think they give you the title & a link where you can buy the full book).

AHA has a lot of other good information on their website too. It's a good place to go exploring - especially if you are interested in cardiac health.
I think it's a very impressive organization altogether. (I should start a fan club).

Thanks - I printed it, shared the other with a co-worker.
Are these all available on line - do I have to have a membership?

Also - have you substituted any thing for the Feta? - I'm not fond of that. I'll try and look and answer my own questions this weekend. I would be looking for cooking for one.

This is in the same AHA Cookbook. I've tried this recipe too & it was also very good & easy. (Though, not quite the staple of my diet that the Black Bean Tortilla Casserole has become).

AHA has a range of cook books. I tend towards the "One Dish Meals" and "Meals in Minutes" most of the time, but they also have a large, comprehensive cook book for people who are less... ummm *time pressed* lol

I've made something similar for years. Always a good, quick, filling meal. I also add brown rice to up the fiber. I call it Mexican Lasagna.

Sounds really good! It appears to be pretty versatile, too, in that you can change it up to appeal to different tastes.

Whoops! That makes a lot of sense, I should have thought about that! I apologize. Thank you for the heads up!

AMSHARK,

Thanks for noting about copyright infringements...that goes for all recipes. We cannot add recipes to the SparkRecipes if they are from another source (Cooking Light, Weight Watchers, AHA, etc), but you can include the nutritional info in your nutrition tracker and share it with other.

I didn't enter it in Spark Recipes, b/c I didn't know if there would be a copyright issue. (... but I feel like sharing the link should be ok).

I did enter it into my favorites in my Nutrition Tracker, and since I've shared my favorites, I think it should come up if you do a "user entered" search.
I believe you should find it by search the words "American Heart Black Bean Tortilla".

I've been a big fan of the American Heart Association (AHA) for years. I started find out more about AHA when my father had a heart attack about 7 years ago.
Here's a link to one of my favorite AHA recipes. It's in the "One Dish Favorites" cookbook, but I just found out that it's posted on-line too. www.americanheart.org/deliciousdecis
io
ns/jsp/catalog/recipeDetails.jsp?ideR>ntifier=3055008

It's so easy to make & so delicious. I wanted to share.
