The baked beans and brown bread last night were delicious! They both take a few hours, but worth every minute!

Tonight is Mexican Pork Spaghetti. That one only takes an hour.

Today I made fried rice in the microwave...rice, peas, egg & soy sauce.

I became a team leader for Spread the Spark and needed to clean up the forums of it. I would have usually used my crockpot but the microwave did a good & fast job instead of having to wait all day.

Grilling a London broil, potatoes, onions and asparagus in foil, and a tossed salad with cucumber, tomatoes, cherries and kiwi.

Tonight I'm making baked beans and brown bread. The beans are soaking now, the dish has to go in the oven by 3. The brown bread goes into the pot to steam at 4. Hard to believe that little bread has to steam for two hours. Carb heavy but a good combo!

Due to my throat biopsy surgery yesterday I just had some mashed potatoes with eggs on top and some watermelon for supper. Needed to eat soft foods and that is what sounded good to me.

I'm having homemade lentil soup I had in the freezer. Quick and easy. Love batch cooking and freezing for later., especially if I'm pinched for time or don't feel like cooking.
I just bought a hand held gadget to make zucchini noodles. I can't wait to try them as I love to cook and try new things.

Last night I made spaghetti and meatballs. Of course, my hubby won't eat meatballs. If I take the same ground meat mixture and form it into a loaf, he'll eat it, but says he hates meatballs. He also won't eat homemade marinara sauce, it has to be bottled, and I won't have that crap in my house. I gave him spaghetti tossed with olive oil and parm cheese. All the leftovers go to my son, who will be very happy.

Hubby's away so I had egg whites, and steamed spinach that I added some V8 and chia seeds to. I would usually add lentils, but had a lot of fiber already. An orange for dessert.

Tonight I made cauliflower and potatoes with fried tofu cubes. I love deep fried tofu! There is no coating, and I keep the oil temp carefully at 375, so very little oil is absorbed. I combine it all together, then take it off the heat and add yogurt. Yummy!

I wish I were a spur of the moment cook. I have met people who can look through a pantry and come up with something fabulous. My creativity, alas, takes more time.

I remember a TV show about 15 years ago called, I think, Door Knock Dinners. The TV cooks would just knock and make something scrumptious out of whatever they found in the house. It didn't last long on TV, I guess too many people had nothing but junk in their pantries.

I don't make plans for my meals ahead of time because I never know how I will feel and how much cooking I will be able to do. I do try to plan for a new recipe or two during the week and make sure that I have everything I need on hand. I am a spur of the moment type cook.
