With a pork loin that takes a couple of hours to stew, add chopped apples about a half hour before the end. I start with a touch of cinnamon and allspice when sweating the aromatics. Sauces can be made by pureeing whatever you want, including apples, with a stick blender. I love the combination of sweet and savory in the same bite.

Colder weather is back to roasted root vegetables. Citrus and apples are now back in season, and I use them in stews and sauces.
