Thanks! I tossed some into a scramble this morning, and it was lovely. Given the taste and texture, I'd say that any recipe that calls for O'Brien or home-fried potatoes would work.

Same with soups...I'll bet it would be lovely in a chowder or a steak & "potato" soup, once cubed and roasted! You could almost pass it off as gnocchi...

Hmm...now you got me thinkin'!

Chef Perry glad to see you back. I love delicata squash. I usually cook it in a high oven tossed in oil and agave. It is great I with almost anything. Any ideas on how to use it in other dishes like soups, pastas, or egg dishes?

good morning everyone. Got up early since I had a 9 a.m. appointment with my massage therapist. Oh it felt so good. What a great way to start the day. Had breakfast, thin bagel with 2 pieces of ultra thin cheddar cheese and an egg pattie. Also a great way to start off a day. High in protein and now its time for lunch, before heading out again for a game of mahj jong with friends. Have a great day everyone.

Up early!

Trying to be quiet (we have grandparents visiting) but I need my tea! :)

Tons to do on the website revamp today, plus planning the next set of cooking classes for the foster kids, and winter camps for Sparks of Hope...oy!

Thinking that a couple of eggs (1 yolk, 2 whites) scrambled with some of last nights roasted delicata squash and maybe a slice of smoked gouda (Iknow, I know...) would hit the ol' breakfast spot!

But first...my tea!
