Great thread! Love all the recipes & tips! I had no idea how yummy balsamic vinegar was til I started eating clean. And all of you here have really inspired me to start whipping up my own dressings. emoticon

Look out for the vinegars with sulfates (sp?, going with organic is probably the best way to do that.

I use it sometimes; no trouble finding it. Napa Valley has a good organic red wine vinegar.

Hospitals are terrific for traumatic care; for acute care. They do a really, really good job in saving lives when it's a sudden bleeding emergency. But in terms of chronic care, they're terrible; (that is) in terms of the illnesses that most people have, endure, that cost the most money, that last the longest and ultimately die from. -Dr. Andrew Saul

I like balsamic vinegar its wonderful. I really like red wine vinegar but for a long time now it has been hard to find in the stores. Anyone use red wine vinegar? Do you have trouble finding it?

Oh yummy 40doom! I love the idea of strawberries or blueberries and feta! I just got some from the farmers market (fresh goat feta) and I am going to try that. Thanks!

For those of you who are cutting down on calories and are concerned about them in dressings:
Remember that the calories come mainly from the fats and sugar in dressings. Most store-bought dressings have both of these. The so-called "low-fat" varieties simply add more gooeyfiers to make them feel thick in your mouth. Most all store-bought dressings have these gooeyfiers in them anyway 'cuz they really don't know how to make a good dressing and they want to make it as cheaply as possible.

So, use less oil and avoid sweeteners unless it's stevia or lo han. Never artificial sweeteners as they are toxic.

If you want thick and creamy make it in your blender or food processor. If you want to make enough to last a while stored in your refrigerator then you will have to make it mayonnaise-style which just means that you put the egg (or egg white) in the blender with the vinegar, (and other flavor stuff), turn the blender (or processor) on and drizzle the oil in in a fine stream to get the whole thing to emulsify. That way it will stay together (won't separate) longer and it will be thick.

You can add bleu cheese, salt, pepper, mustard, herbs; anything you might think of for flavor stuff.

Balsamic vinegar is very tasty. Unfortunately it has become popular and along with that there is a lot of junky balsamic vinegar being sold. Don't bother with cheap balsamic. (IMHO!) Save balsamic for special times and get the good stuff.

The healthiest and cleanest vinegar (and very tasty too!) is raw, unfiltered, organic apple cider vinegar. It will add to your health if you use it on a daily basis. Google it.

I make one of these salads almost EVERY single day. I get in about 4 or 5 servings of fruits and veggies just in this meal alone. I make a huge one! I even take it to parties where I need to bring a side dish. Note: This is an individual serving to be made fresh every day.

Dressing:
1 tbs Balsamic Vinegar (white or red)
1 tsp Extra Virgin Olive Oil (up to a tbs)
1 tsp Honey
1/2 tsp Dijon Mustard
1 crushed garlic clove
ground Oregano (couple of shakes)
Sea Salt (just a tiny bit) and Fresh Cracked Pepper

*Mix all ingredients in a small bowl and set aside

Salad (2 variations)
1) Put fresh strawberries (5), blueberries (1/4 cup), apple chunks (1 small), 1 oz. feta or goat cheese with mixed baby greens in large bowl. Pour dressing over it and toss.

2) (Greek Salad) Put artichoke hearts, hearts of palm, fresh bell peppers, cucumbers, grape tomatoes, thinly sliced red onion, olives, 1 oz. feta or goat cheese with mixed baby greens or romaine lettuce in large bowl. Pour dressing over it and toss.

I don't buy any bottled salad dressing anymore. I just mix Balsamic Vinegar with EVOO and a little dijon mustard, cut up some homegrown fresh herbs and some garlic and Voila!! Awesome stuff! If you like salt you can add a pinch of gray salt or if you like a little sweetness add a drizzle of honey. I never thought I would get my hubby off creamy fattening dressing until I made this and he is even a convert now. Would love to hear anyone elses homemade salad dressing recipes if you have them.

salad dressings or rather my addiction to creamy dressings like thousand island that is my down fall, any suggestions for a low cal low fat salad dressing. The balsamic and oil sound good

I don't know how I ever ate salads before without Balsamic Vinegar. Now that's all I use plus a little olive oil.

GREAT in salads. So much flavor. There are also lots of recipes that use it in dessets. It is reduced (cooked and boiled in a saucepan, until the liquid evaporates and it turns into a sweet syrup) and used in fruity desserts.
