One of my healthy foods today was a delicious nectarine. I also plan on having a cup of sugar-free cherry jello with sugar-free cool whip. One of my favorite healthy desserts.

My daughters and I made fruit smoothies last night, instead of going for ice cream. Mine had blueberries with raspberry greek yogurt and a little lemon juice. It was delicious!! emoticon

My healthy meal for today was seasoned tilapia with a side of rice pilaf. I ate very little rice even though I used basmati and two bags of mixed veggies. Still very filling and satisfyingly!

I had a wonderful Chinese chicken salad with napa cabbage and mixed greens red bell pepper grilled chicken almonds mandarin oranges and a sesame dressing! It was so good!!!!

I combined bbq sauce and orange marmalade to top my chicken and veggies to make a sort of "orange chicken". (If anyone can think of a healthy fat to add to the meal, feel free to let me know!)

Today I am sharing one of my meals to help me get the G in our Bingo Challenge. Here is what I ate today for lunch: 1/2 of a whole wheat pita, 1/2 cup of baby spinach and arugula mix, 2 oz. low sodium canned chicken breast, 1 and 1/2 tbsp. of Honey Mustard, 4 grape tomatoes, 16 oz. of water, 1 cup of fat free milk, 1 c. sliced strawberries and 1/2 c. of Vanilla light and fit nonfat Dannon yogurt. Total calories for this meal was 416.

I had my favorite snack today. Oikos Zero Greek yogurt and fresh blueberries. That helps me meet my protein and fiber goals for the day. It's my go-to snack quite often.

Worked with the Bingo card so I cooked some healthy meals and tried to get in more veggies. I cooked brussel sprouts for the first time in over a year. Cooked some Vidalia onions and fresh mushrooms to go with my bunless burger.

I love all the food posts!

During summer I replace coleslaw and macaroni salad with lentil salad or a Mediterranean quinoa salad.

Today I made a marinated lentil salad with olive oil, balsamic vinegar, minced garlic, scallions, celery, green pepper, grape tomatoes, crumbled feta and fresh parsley.

I love lentils. They are super-packed with nutrients, but if they are not your thing think about sprouting them and put in ordinary salad. You get the nutrients without too much of the lentil taste. Lentils are very easy to sprout just make sure they are organic.

I'm sharing my healthy food. Microwaved mushrooms. I love mushrooms and they are low calorie and a source of protein and antioxidants. Microwaving is so quick and easy, with no greasy frying pan or extra calories from the oil.

My recipe is a simple lunch I like Mama Lupa low-carb tortilla and turkey wrapped tight for a turkey wrap. I love these for a quick lunch and sometimes I'll put a piece of cheese with it but not always.

My "recipe" isn't actually a recipe. It's more a quick, throw-together lunch. Boca Original Griller with a slice of Go Veggie cheese on a "bun" of lettuce and a little mustard. With a side of 1% cottage cheese. Very yummy!

I had a small veggie salad for lunch then got a few shrimp and 1 piece of fish with green beans. II did get a little spoon of dessert that was sugar free.

I make my own homemade fruit yogurt:
1/4 cup frozen fruit (mango chunks, raspberries, blueberries, strawberries, etc.)
1 scoop Chia seeds
1/2 cup plain Greek yogurt

Let it sit until the fruit has thawed. If you use berries, they will start to leak juice, which mixes up nicely into the yogurt. So good!

My mother in law brought us over a gallon of fresh blackberries Tuesday and they are so good!
I love them with cottage cheese and they're pretty darn good with ice cream, too. But my favorite way is just to eat them fresh.

Sharing my healthy snack: I've recently discovered what is called a "loaded tea" from a local health store. It's sugar free, low carb, only 24 calories. It's full of vitamins, antioxidants, aloe for digestion, guarana and ginseng for mental focus and hunger control and they are absolutely delicious! I drink one every morning and it honestly gives me energy through out the day and I'm not nearly as hungry as I usually am.

All green on my Versa, achieved my steps per hour goal and had 15,740 steps yesterday. After a gym rest day today it's back into the gym for Biceps/Triceps and 20 min cardio on machine of choice.

Sharing a healthy food: I had salad with roasted beets, walnuts, and spicy blackened chicken, with a balsamic vinaigrette dressing. It could've used some goat cheese or feta but I didn't have any. It was good though!

BLUEBERRY CHIA OVERNIGHT OATS Makes 1 Serving

cup old-fashioned
rolled oats
Tbsp chia seeds
cup unsweetened
almond milk
cup plain Greek
yogurt
cup fresh
blueberries
Stevia and cinnamon
(to taste)
1 ( pint) jar or bowl

Place the oats, chia seeds, milk, yogurt,and stevia (to taste) in a large bowl.
Stir together until combined and add tojar or bowl.
Cover and store in the fridge overnight.
In the morning, stir in cup blueberries and add a sprinkle of cinnamon for taste.

Calories 236 Fat 6 g Sodium 114 mg carbs 40 g Fiber 7 g Protein 7 g

Great way to start the day!!
