Bean (I don't know your name)... I'm glad you liked the flax MIM's, I love them - and there are so many ways to change the flavor. Sometimes I'll add a dose of Fiber supplement to the batter, gives a little extra fiber boost. (I do have a bit of a problem with constipation on occasion).

I buy already ground flax (I like the texture better than grinding it myself) - I buy Bob's Red Mill and I get the dark flax, not the "golden flax" - I think the flavor is a little more mild. I take it out of the bag and put it into a fruit jar and store it in the refr., It can get rancid if you don't use it fast enough. While that doesn't hurt the nutrients, I think it deteriorates the flavor some...

I'm going to a brunch this morning! Wish me luck!! They have a big variety so it will probably be bacon, sausage, ham and eggs mostly...... This will be a real test for me because this place does all their own breads/pastries/rolls etc. I'm going to put my blinders on and go for what I can have!!! (on program).

I've loved flax minute muffins ever since "ewefluffy" introduced me to them, but I've always wondered whether the Omega 3 oils deteriorated with cooking. Decided to look it up today and found out it doesn't! I've also been storing my seeds in the freezer and grinding fresh when I make 'em. Found out that's not necessary either - the flax O3's seem to be pretty stable over time at room temp, even when seeds are already ground. That makes life much easier! - and leaves more room in the freezer too!

I think I'll have a maple/walnut flax minute muffin today for breakfast. They usually last me thru the day..

The veal sounds so good, it is so hard to find here at a decent price.
Yes Jo good for you! I can't even find a farmer's market open on the weekends (the one I can find is tailored to mobile seniors, I'm not independently mobile).

I have planned to make zucchini boats with ground meat
tomorrow and will just top with yoghurt. Today was a veal
schnitzel with broccoli and a Greek salad for lunch.
Dinner was consomme with some melba toast spread with
cottage cheese.

Hi All
I"m new to this group, but not to LC. Indeed - it seems I know many of you from LC50+.
I love to cook, love to find new LC inspiration.
I eat organic whenever I can, and am lucky to live in an area w/many organic farms and grass raised animals.
I'm not big on breakfast, per se - just not hungry.. but I do eat 3 meals per day -just starting a bit later in the day most times. I don't plan my meals in advance - I more see what mood strikes me when I get hungry.. Lately I've gone back to induction style eating - trying to keep net carbs less than 20 g/day since I hit a plateau when I went up to 30-35g.

Today I've had
Zucchini stuffed w/ground beef and italian sausage (browned), topped w/tomato sauce and sprinkle of mozzarella cheese.
1/2 avocado w/lime juice

Dinner will be
chicken roasted in OJ, ginger and soy sauce, w some sort of veggie stir fry (baby bok choi, broccoli, snow peas, cauliflower, cabbage, red bell pepper, mushrooms) Maybe throw in some almonds or cashews.
Yum - I'm getting hungry just writing about it!

Breakfast: Atkins Peanut Butter Granola bar + black coffee. 75g fresh raspberries
Snack: 28g lightly roasted peanuts
Lunch: Tilapia in Pesto sauce (homemade) with steamed broccoli. Jell-o Mousse
Snack: Laughing Cow wedge on 1 slice Julian's L/C bread
Dinner: Stir-fried veggies with tofu, and Shirataki noodles.

My chicken salad was really good for a change. I added some grapes, celery, chicken, apple, a TBSP grated unsweetened coconut - then mixed curry powder with some lite mayo and added a touch of sweetener. about 1T pecan pieces also. It was really good!!

Steak for dinner tonight I think - if I'm hungry, that salad was quite filling......

We had fast food, I just wasn't up to cooking. Tonight I'm going to do the chicken I've been planning for a few days. It's roasted like a beer can chicken, but we don't drink beer so I have an olive can instead. And I'm going to put cranberry juice in the can.

A lot of people have that objection but it seems kind of odd to me seeing that they won't eat the baby but will it's mother and father. LOL. I was a vegetarian in high school due to issues about eating meat and must say that it's a worthy cause in many ways as animals cause a lot of pollution and it is gruesome that animals have to die to satisfy our appetite for meat. But being a vegetarian was not all it was cracked up to be for me. I ended up sick with tons of vitamin deficiencies and had to take shots for years. I really screwed myself up and had to admit that I like meat and need it even if I don't like how it gets on my plate.

I like veal but haven't seen it in the grocery in years. Once while at a cafeteria, grandmother ask what kind of meat the chickfried steak was made out of. When they told her veal she passed it up. When I asked why she said it was "baby" beef.

I guess I'm just used to the stronger beefy (or gamier) flavors in meat. I know that veal is quite the delicasy (sp) guess I prefer stronger flavors, when I did have it, it didn't seem to have much taste - although I do remember it being VERY tender..

Good veal is tender and mild and almost melts in your mouth like butter. It's delicious.

I never thought that Veal had much flavor.... did I just get some that wasn't good, or is it really mild in flavors?? I'm used to regular beef and seems to me, it has a LOT more flavors?

I made osso bucco and just finished off the last of the leftovers
and I could've saved you some Morticia. I love veal too but we
rarely find it here. I love calve's liver, but you can't get it anymore.
