Made a 5 gallon pail of very red applesauce from one of my favorite trees yesterday, put 20 quarts of applesauce in the freezer, plus saved some for breakfasts!

Also finished stuffing 5 lbs of hot Italian sausage. Pork has been very cheap lately, 99 cents a lb, so I bought two roast, ground them up and made 5 lbs of breakfast sausage, and 5 lbs hot Italian sausage. So much better then the ones in the store now.

I pick up apples off the ground down the road from us, making sure there are no punctures on any that I collect.
All along I have been making pies, crisps,and bread with them for eating and the freezer, until today when I made and processed 7 pts of spiced apple preserves.

I went to the flea market early this morning...I got another bushel of roma tomatoes emoticon to make more spaghetti sauce later this week....the last batch I made was fantastic! thick, flavorful and very tasty...

6 quarts of thin tomato sauce done
i was going to do juice but i boiled it and it becaue thicker then juice but i think it was thinner then store bought sauce. i will eventually used it for marinera so it should get thicker.

today i cooked down some tomatoes and canned juice - 1 pint and 3 quarts. i still have more in my freezer but i had a counterfull and i did not want to plug in the other freezer to store more tomatoes.

today i did frozen corn. rmy dh helped but otherwise did it by myself. normally i do it with my mom. i helped her and my sister last weekend do applesauce. i may try making my own in a couple weeks

Yesterday I put up 16 pts of my own bbq sauce.
So far this season this is the only thing I have canned. My garden is only two small boxes of salad like veggies for the two of us.
I have frozen some things but that's it.

Last night I finished 30 pints of double strength chicken broth curtsey of the 7 roosters I was sent instead of pullets. They were quite large, I vacuum packed the breasts, and cut up the rest for the stock pot. There was also a couple packages of chicken feet from the big Cornish cross from last summer, I know a lot of people will say ewww, but they make the best flavor stock, and scrubbed up are really no different then other parts of the chicken.

After going through all the onions from my garden I decided to go ahead and make French onion soup. I peeled and cut up a pile of onions that resulted in 12 lbs of onion slices. I spent quite a while one day slowly caramelizing the onions in small batches, while I deboned 3 huge 3 gallon pots of chicken. So it was easy to finish up the onion soup while the chicken stock was pressure canning. The broth part of the onion soup was 16 cups of my homemade bone beef stock, along with 2 cups of red wind and spices. I simmered the stock and other ingredients separately and filled the jars with 1 cup of heated caramelized onions then topped with the broth. I ended up with 2 pressure canner loads 14 quarts all together. 75 minutes is a long time to pressure can, luckily it was only 2 batches. One jar didnít seal so I had half the jar for lunch, it is delicious!

I still need to work on my onion stock, I have 7 gallon bags stuffed with onion peelings. After looking at the video it looks like they only used one bag for 6 or 7 quarts. It doesnít seem to be enough, but only doing it will tell.

I have been saving the onions for a while, last fall I made and canned huge batches of spaghetti sauce, pizza sauce and tomato soup, lots of onions there! Made a lot of tomato paste too, first batch was 3 quarts and I used that for the.sauces, second batch was just as big and I canned that in small jars. I usually give veggie scraps to the chicken but I think I may collect some of them to make vegetable stock, I love having good stock on hand. I made lots of chicken and turkey stock when processing the birds for the freezer.

Maple syrup season is just starting up here, I am thinking I will skip it this year, I still have a lot left and my knee is not going to like the snowshoe thing, it has been troubling since the trip down the barn stairs not on my feet lol. Also too much going on right now with lambing and I have 13 calves I am feeding, and it seems like the AI breeding is picking up lately.

I was gone from SP for a year, but it is a good reminder to stay on reasonable track, so I am back. I missed a lot of people here!

You save your scraps, too ? I tried this last year, saving onion, celery, carrot, parsnip etc. scraps in the freezer. Mostly onion skins and ends...It made the most wonderful onion broth ! So nice to have it on the pantry shelves ! :}
How's your syrup going this season.? So far, we have 7 gallons and still have a week or 2 to go. I tapped some black walnut trees and made syrup ! So Good !

Dug the potatoes up yesterday so will start canning those. Lots of summer squash ready, so need to freeze. I also make summer squash/corn soup and freeze. It is so good in the winter.

I finally finished with the maple syrup, 10 gallons 1 quart and 1 pint! I still need to pick up the lines and pails and wash everything, but it has not been very warm outside!

I am saving my onion skins in the freezer now!

Thanks for looking up the canning sap, I tried a canner load. I took some fresh sap and squeezed a grapefruit, a lemon, a lime and an orange in it, and it was quite tasty!

That sounds interesting, maybe I will can some, right now I have 95 gallons that needs boiling down! Going to get started early tomorrow and see how much I can get done, right now I have almost 3 gallons bottled, we start later then you do of course, been having a lot of weather that never gets above freezing during the day. Last night I collected 25 gallons and today another 20 gallons. I only have 6 trees tapped, but with 3-4 taps in them because they are huge trees.

I have been kind of caught up in lambing lately, only one ewe left to lamb! And doing some decluttering around the house. I do that a lot while boiling down sap! I visited my neighbor a couple of weeks ago and they were boiling, I was shocked to see the horrible burn on Jane's hand, Mike was blowing a tube of hot sap out because it was plugged and Jane was holding the bucket, sounds like a really bad idea to me, it could have hit her face. She had huge blisters on the back of her hand, second degree but with deeper skin damage from what I saw.

I guess I should save my onion skins, I still have about 75 lbs of onions from the garden!

Yep, I think we are done with making maple syrup ! It's been over a week since any sap has flowed...Buckets are still up, but No Sap !!!!
If you were looking at pictures on this thread, that was my onion stock made from onion peels !
We did make a bit over 6 gallons of syrup this year, about half of what we usually make !
That's OK as we give most of it away. I just keep a few gallons for us.
I use it on pancakes, of course, but also for baked hams, when I make my own BBQ sauce and canned pork and beans.
I did a post on drinking sap water. Did you see it ? It's supposed to be really good for you, better than coconut water. Full of minerals that we need ! I canned up 7 quarts to use for summer lemonade !

I looked at your picture and thought you were doing maple syrup, it looks so nice and clear!

I have been doing sap for a couple of weeks on and off, the weather keeps snapping cold and very windy, yesterday was beautiful in the morning, warming up nice and about 2 or so the wind started up and just made the 38 degrees feel freezing. I had been cleaning out the barn and watching on a ewe in the process of labor, she had twin rams and I had to start closing the door between wheelbarrow loads, and moved the mother and lambs to a more sheltered part of the barn away from the door. I collected sap in the morning just to make sure the buckets were empty and got 10 gallons, but I didn't even go out at night with windchills making it below freezing. I finished a gallon and a pint the other day, and am going to finish another batch today, not sure if I will boil because of the wind.

Simmer for 10-12 hours, Strain and then pressure can. Great as a soup or to add to roasts, gravies, sauces, etc. So don't throw away your onion skins, or garlic skins or carrot peels, celery bottoms, etc. Freeze then until you have enough to make a pot of stock...Make a wonderful stock with your scraps ! Can be frozen, too !
16 pints in the pressure canner right now and had enough to put 3 pints in the freezer !

When we went to Raleigh for the holidays, we stopped at a farmers market in VA. and bought 10 lbs of Navy Beans...What was I thinking ???
Well, I canned up 5 lbs and got 16 pints of ready to use beans !
I guess I won't have to buy refried beans for a long while !

Well, today is the next morning after my first attempt at canning ground beef !
I started with 7.25 lbs, of ground beef,

diced 2 large onions...

browned both

(drained the browned beef)

and added the mixture to 2 qts. of my thick tomato juice and 1 pint of my diced tomatoes.

Simmered until boiling and jarred, then pressure canned !

I use Tattler lids for pressure canning !

Has anyone seen this raised burner to use when using large pots ? It sure saves your top of the stove ! I got mine on Ebay for about 30.00.

OH ! The Ground Beef looks Great !

I've been taking some time off of canning as there is only the two of us and we haven't really been making a dent in all the canning I've done. I have some pickles that are 5 years old! ACK!

The last thing I want to do is toss them in the compost pile!! Despite not eating a whole bunch of carbs, I'm going to reincorporate pickles into my dinners. I grew up eating a lot of pickles but didn't have the resources for a long time to spend time in the kitchen (as a tenant in shared accommodations).

Off the top of my head, the canned items that need to be eaten up first are:
mustard pickles (cukes), zucchini pickles, green tomato chow chow (my fave but my former way of eating them was only with mashed potatoes and hamburger gravy), various soups and our own homegrown canned beets and green beans.

Ok, time to go liberate some jars!!!

Here are some of the things I've been doing !

I made 18 Qts of Pasta Sauce from my canned tomato juice, my diced tomatoes, my tomato paste, my dried onions and my dried red peppers, seasoned with my dried herbs (oregano and basil) and garlic all from my garden. Gotta Love It !

Made Lard from pork fat...

PJ bottoms for my Creative Grandson Luke ! He asked for this fabric...Crazy Kid !

Now working on crocheting a hooded scarf...

Warmer But Raining today ! Our Snow will be going Bye Bye ! emoticon Walking between the Rain Drops !

Yikes... These past few weeks have been hard ! We all tried so hard to help our friend since her psychotic break last March ! She had a hard year ! I just can't wrap my mind around what happened...Not only that, but I truly miss my friend...She lived right across the street from me so we saw each other all the time...And now Nothing...An Emptiness that I just can't get a grip on !
I've been keeping myself busy so I don't have time to think ! Canning soups, making 18 qts. of sauce from my canned tomato juice, etc. canning dried beans in to bean and ham soup, baked beans...making onion powder, well, just doing and not thinking !
Sorry, I haven't been on SP lately. But I'm sure you all understand.
Thank You to All of you that have emailed me, sent goodies and kept me in your thoughts and prayers... I'm slowly getting back on track, little by little !
I know I have to get myself back in control and remember all of the fun times we had over the years. I can now smile and not just cry ! I'm finding that Happy Balance !

I put up 16 Sweet red and orange peppers...mostly diced but some strips for stir frying...All in the freezer !

Because I can't stand for longer than 5 or 10 minutes at a time, I have to sit down often, but over the past 2 days, I got 6 heads of cabbage chopped up, blanched and in the dehydrator. In fact, it did not all fit as I only have 16 trays, so making a bit of cabbage soup with the last bit.....

I also bought 20 lbs of russets and 20 lbs of reds that I will tackle after New Years. Dehydrating some in slices (for scalloped potatoes) and some dices (for soups, etc, and some longer (like a french fry only shorter...... Not sure how they will turn out so not making too much of them..... I plan to peel the taters and I'll dehydrate them, to powder for thickening soups and stews.

I finished the last or my 3 ribbon wreaths and got one off in the mail ! The other 2 are for a neighbor and the Amish Lady that does the Family Dinners ! We are going back on the 22nd ! Boy can she cook a wonderful meal !




Today is sewing up my BIL's rag quilt that has been ready for me since last Friday !!!! I got side tracked making the wreaths and just plain being Pooped Out !!!

Yesterday...12 Days are All Done, boxed with shipping label and on the porch for USPS pick-up !!!!

Gosh, these 12 days are Going off today, Priority Mail ! They should be there on Tuesday, which is good because it starts on Wednesday !

I found, by accident, a great way to separate the fat from beef or chicken stock.
I had to refrigerate it over night and I didn't have enough room in our extra frig for the 2 big 16 Qt. stock pots...So I put some of it in a gallon milk just and put it in the frig !
The fat got hard at the top so I punctured a hole in the bottom side and held it over a pot. The fat stayed in the top and the stock went into the pot ! Bonus !!!!



Nice Clear Broth/Stock !!!

I made my 20 lbs. of chicken into stock yesterday..Already strained and ready to can and in the frig.....Today is picking thru all of the chicken and veggies. I will can some of the chicken for pot pies or chicken salad and the rest for dog food....Also, pressure can the stock !
I must say, it is so nice and rich and smells So Good !

Mango Hot Sauce at my house yesterday...Sweet, salty, tangy and HOT, HOT, HOT

4 habaneros
1 c grated carrots
1 lime zested and juiced
12 Thai chiles
10 ounces mango puree (large can equals 28 oz)
1 c onion
4 cloves garlic
1/2 c vinegar
3/4 c sugar
1 t salt

Simmer on stove until veggies are soft. Puree in blender. Put back on stove until simmering.
Water bath can 10 minutes. A single batch yields just a sniff over 3 half pints.

Yesterday I used a large 28 oz can of mango puree, so I did a triple batch. This yielded nearly 5 pints of screaming hot sauce -stuff made me cough! I used 2 pks of green Thai chiles which in the past I felt weren't hot at all...not these ones :) I really enjoy recipes like this, as there is nothing more satisfying than pureeing things in that blender...no chopping involved (well, hardly).

During the day, I started 4 quarts of sauerkraut and put up 2 lbs of dried kidney beans.
I got 12 pints from those 2 lbs. of dried beans. Can't beat that ! I paid .99/lb...

Happy November 1st !!! :} emoticon

I put up 2 HUGE (3.5 lb each) butternut squash and 2 acorn squash into wide mouth quarts !
I will use them for pumpkin pies ! Got 7 qts.
Drain and puree...

Today is making sauerkraut in a jar from 1 cabbage head and maybe, put up some dried kidney beans into pints. I've been using up my Great Northern beans that I put up last year in my chili.

I'm going to try the combination of the 2 squashes...I'm going to cut into cubes, boil and pressure can...(freezers are Full !!!) to use as pumpkin puree...
Remember...it is NOT safe to can pumpkin/squash puree ! But you can freeze the puree !

Well, I'm bummed...
I dehydrated 4 of the 5 pumpkins... And got 1 1/2cup of powder !
I figure 2 pies from each pie pumpkin and for that I need 1/2c powder. My recipe called for 2 cups puree ! So that would be 4 cups powder...Not Close !
These sure were NOT Pie Pumpkins !!!
Thank goodness I froze 1 pumpkin and got 4 cups of puree !

I'm thinking of powdering some fruits and veggies for smoothies. Have you made smoothies from these powders? Not sure how to make them, but would like to learn.

I've powdered tomatoes and onions before. I dehydrate a lot of other things but never thought of powdering them all. I would be interested in info on some of the other stuff like potatoes, green beans and garlic too. Most things I dehydrate have been raw.

I just went through all of my blogs and I didn't do one ! So I will post one soon ! Let me know if you have any questions...
I powder a bunch of things...
Carrots, green beans, parsnips, tomatoes, onions, garlic, potatoes, etc...
It's all done the same way, but the garlic is done raw.
Great for soups, dips, etc.
