Good Morning All....

I did up my corn...from 31 ears of corn, I got 8 pts of corn and 6 pints of creamed corn.
I used the recipe in my Ball Book.

Today, I'm going to pressure can 2 dozen ears of corn...A friend of ours (one of hubby's employees) gave me some.. They are the largest ears of corn I've ever seen...
14" long and solid and sweet !

Tammy, That's a Great Idea !!! I have so much fruit frozen, I would love some pies in there, too !

Yesterday, I made apple sauce from 2 Qts. of my canned apples that were mushy, and peach puree from 5 fresh peaches...
All water bath canned...in 1/4 pint jars for David...
7 peach puree and 5 apple sauce.


Today, I am making a Turkey Dinner...Love the Leftovers !

I freeze them unbaked. I always seen pre-made pies for sale at farm stands so I thought, "why can't I do that". Thankfully it works out for me. When I was just freezing the fruit, I would never get around to making pies, too much work, LOL. I think they take over an hour to bake from frozen. I just keep testing the center to see if it is hot, after 45 mins.

Peach Pie is one of my Favorites...Do you freeze them baked or unbaked ?


Well, yesterday, I tackled the multitude of beets...I got thru 1 bushel basket and called it a day ! I gave away the other 2 baskets...
I cleaned them and cleaned the greens...
From the bushel I did, I diced the larger ones and left the small ones whole.
Picture of 3 pots cooking the different size beets. Small, Medium and large...

I got 13 pints of beets and 5 Qt. bags of blanched greens for the freezer ! :}

My friend brought over 3 bushels of beets yesterday afternoon. You know where I will be today !!!

I got 2 long loaves of Italian Bread for 1.00 each and made 35 1" slices of Texas Toast...Butter and parm cheese on them and froze them...I ended up with 11 bags of 3 slices in each. If you bought it in boxes, there is 8 slices per box at 3.50. So for 2.00 plus 3 sticks of butter (2.50) and 3/4 of a cup or parm cheese (2.00)...Total 6.50 where is bought would be around 20.00...
I sliced them, buttered and cheesed them and froze on a tray before bagging them...

I just finished making 2 batches Peach Freezer Jam, using powdered pectin.

Yesterday I made 6 loaves Quick Bread, 2 each Blueberry, Raspberry and Sweet Cherry, to use up some buttermilk I had leftover. What an adventure making those. I made the batter for 3 loaves at a time. I used only white sugar instead of brown and white, thankfully using the brown sugar measurment. Then I thought the batter was way too thick, but I portioned it out, pressed frozen Blueberrirs into 2 of the loaves and Raspberries into the 3rd. Then started mixing up the second batch of 3 loaves. Realizing my sugar mistake. Then realizing I forgot the oil in the first batch. So I get the second batch into the pans, fold in raspberries into 1 and sweet cherries into the other 2. Finishing off both the white and whole wheat flours. Mix the oil into the first batch of bread. Getting ready to just walk away from it all.

The day before I made Pumpkin Waffles and froze most of them.

Today, Elana and I are going to an Amish Greenhouse to get some peaches and hopefully, some local sweet corn.
Tomorrow, a friend of mine, is bringing me some more swiss chard and beets with the tops...She grows a HUGE garden and shares it with everyone...I give her maple syrup.

Hi All...
I harvested my garlic 2 weeks ago and had them curing on my porch..With all of this humidity, I thought they would be rotten...
But alas, they are perfect !!!

They are very small this year...I got 55 heads and they fit in a pie plate...That many would usually almost fill a peck basket...This is my smallest and largest heads !


All cleaned !

I picked 3 gals. of sand cherries and cooked them down into about a gal. and a half of juice. I made one batch of jelly today but the rest will have to wait. My feet are killing me!

From 1 bushel of swiss chard...


Swiss chard after cleaning and cutting shown in a 10 Qt. bowl....!!!

After cleaning all off that swiss chard, de-stemming it and cutting it in 2" pieces...
then to blanche it...I got out my 16 Qt. stock post and found the basket for our turkey fryer...

It fit Perfectly !!!

From that Huge Bowl of cut up chard...this is how much I got after blanching !!!

Just enough for 2 qt. bags !!!

I had some peaches that we didn't eat so I decides to make a pie...I didn't have enough so I grabbed a bag of apples from the freezer and made a peach apple pie...

Swiss Chard is all cleaned and cut...now to blanch, ice bath dry and package before going into the freezer !

After 52 1/2 hours my blueberries were finally dehydrated. I will blame the rain we have been having.

Yesterday I made Pizza for dinner and had 6 slices leftover to go to the freezer. I have mozzarella to freeze from this venture in cooking.

Today I finally make Swiss Chard Rolls. My hamburger should be defrosted enough.

I also bought buttermilk for waffles (not sure if I am going to make plain, banana or pumpkin), and pepperoni sticks to make Pizza Pepperoni Sticks the next time I get around to making bread, which will be soon because we are down to 1 loaf. I am hoping my zucchini start growing soon. I have a few small ones on the plants. I guess I am not a zucchini grower, I just can't get enough of my plants for what I like to make with them.

And I still have to do my chard...Today is the day ! I will freeze it (as you all suggested) and use it for green and for soup. I'm the only one that will eat it !
Maybe I will try to make a soufflé with it...

A friend of mine gave me a bushel of Swiss Chard, a Huge cabbage, zucchinis and yellow squash and a half bushel of lettuce. So today I will be figuring out how to can or freeze the swiss chard. I've never done that before...

57 Burritos, so many things to do to get there. Yesterday I soaked 3 lbs Pinto Beans to make the Refried Beans. I woke up at 6:30 to cook 3 lbs Bacon, because I need the drippings for the beans. Put the beans in the crockpot all day. Finally done at 4. Then I made the Refried Beans, cooked 5 lbs hambuger and seasoned with taco seasining. Grated 800 gr old cheddar. Mixed the haburger, refried beans, cheese together and made the Burritos.

Still need to freeze the bacon. I just put it into the frig so the kids could have some.

Finally something to report. I did two batches of Blueberry Jam yesterday and have blueberries in the dehydrator. Took me 2 1/2 hours to prick the blueberries to fill it, but it will be worth it in the end. I tried the blanching method a couple years ago. A bunch of the berries burst and sagged over the racks. What a mess to clean.

I love cherry juice. I put mine up in juice this year. I use it in my tea.

Bought 2 packages of celery hearts from the 1.00 bin...(2 hearts per package = total 4 hearts)
I blanched them, dried them and then made powder...
from the 4 hearts, I got 1/4 cup powder !

7 Qts. of Canned cherries in a light syrup from 10 lbs of Bing Cherries
I water bathed them this time as last time I pressure canned them and they were all mush !
Hee is my set up with my cherry pitter...

That pitter is Awesome !!! Not much cherry, just the pits...

7 Qts. Done...I can't wait to see how they came out this time water bathed canned...
I may have to make a cherry pie today ! :}

I put up several gallons of breaded okra. It takes some time to do but so worth it in the winter. You make sure your okra is really dry and then with dry knife slice into bite size pieces. Put in glass microwave dish and cover with saran wrap that is microwave safe and microwave on high for 3 minutes. This dry blanches the okra. Then you mix egg and milk and dump in the okra and then into 1cup flour mixed with 2 cups corn meal which is seasoned like you like it. I put in gallon ziplock and use cayenne and black pepper and since I used corn meal mix, I don't salt it. Then put in the okra that is dipped in egg-milk and shake and then lay on greased baking sheet and bake for 20 minutes at 350. Once baked you put into freezer to freeze and then transfer the frozen breaded okra to a ziplock freezer bag. I use 3 baking sheets and 3 small 9x9 glass dishes when I make it as I don't have to stop between to let all freeze and bake etc.

Good Morning !!!!

Yesterday, I did 28 pints of sweet corn, pressure canned ! With Tattler Lids...Love those things !!!


I missed the cherry season for picking, too ! They were so small that once you pitted them, there wouldn't be much cherry left !!! :{
Our local store has sweet cherries for 1.99/ lb (which is 2.00/lb. cheaper than if I had picked them my self !!! I will be buying some this weekend and canning them !

Put up 13 pints tomatoes yesterday. Today cooking down last year's canned tomatoes with onion, peppers, garlic, mushrooms, fresh from the garden oregano, basil, & Italian parsley. Putting this up in quarts

Made my "Juice" yesterday ! Slow Cooker Pork steaks with onions, red peppers, homemade chicken broth, tomato soup, my diced tomatoes and sour cream over noodles...Made 2 freezer meals with the leftovers !

Corinna...Here's a few for you...
You can use the berries added to apple sauce and can it...I make apple raspberry sauce.
make pie filling and can it or just use them frozen in pies, crumbles, cobblers, muffins, etc.
Make a berry sauce for an ice cream topping.
Make an infused vinegar...Great to use in salad dressings.

Just canned peaches, fireball whiskey peaches, vanilla honey peach butter & peachskin jelly.

My gardens also in the just growing stage ...

Next is soda jelly and tomatoes

Any ideas for berries OTHER than jelly? Raspberries & Marion are currently in freezer awaiting ideas. Lol

Have put up 5 pints of blueberry syrup, 5 pints of blueberry jam. 10 quarts of blueberries in the freezer. 14 quarts of dill pickles, 7 quarts of bread & butter pickles, 6pints of jalapeno pickle relish, 8 pints of sweet pickle relish, 8pints of easy kraut. We picked 2 bushels of pinto beans and have shelled, blanched and put into the freezer about 40 half quart bags. We have 2 more bushels of pintos to pick and then white beans will be next then blackeyed peas. Okra has just started so we will put up pickled okra this year. If our tomatoes do ok (blight is bad this year) we will can some up and I will take last years canned tomatoes and make spaghetti sauce.

The only thing we grow is rhubarb, cause our yard is so small. The rest of the food I put up we either get at the farmers market or at a u pick. So far we've picked strawberries, froze about 12 quarts and I made a batch of jam. We picked up a box of peaches yesterday and, once they are ripe, we will freeze some and I will make peach/rhubarb jam.
