Love the Daddy daughter picture. Wonderful he spends time with her. Good age too.

Thanks for the update on the canned sausage. We make all our own sausage but pack in collagen casings. We smoke our summer sausage. We are going to try our hand next at boudin sausage. It is a south Louisiana recipe. We have everything but the liver. It really is more rice than anything. Reminds me of dirty rice recipe. Lately I've been using my Italian breakfast sausage and making corn meal mush and adding the cooked sausage and then putting in loaf pans. Then it hardens in the refrigerator and you can slice and fry it.

It tasted very good but the sausage patties were mushy after refrying them !!! :{

Well, I already spent a good part of the day clearing up most of our driveway, and it looks like I will be doing it again tomorrow. The snow sure is coming down now! emoticon emoticon

What a wonderful picture.

I am sitting in McDonalds, using their WIFI, while I am waiting to be able to take care of the rest of the things I have to do today. I am not doing a very good job of waiting today. emoticon

Oh well, since I have to wait, I am on SP and looking up things. I do like that. I won't have time to get on tonight, I have a 4-H Leaders meeting. Soooooooo, I am glad to be on SP emoticon

I'm getting the rest of the old paint cans out of the basement today, Paying property taxes, buying Valentine Day cards to be mailed off and a birthday card for Annaliese's 9th Birthday...I already got her an Amethyst charm for her charm bracelet.

This past weekend was the Daddy / Daughter Dance for my Grand Daughter in Raleigh !
She is getting so Mature for only 9 yrs old !!! emoticon She will be 9 this Saturday !!!

It is getting windy here and it looks like some snow may be coming.

I have a large crock pot of chili with lots of onions, carrots & celery in it. I have some beef and lots of beans. I will have some tomorrow and then freeze the rest for another day. I love having it frozen for when I am too pooped to cook!! LOL

Roast is in the crock pot and the horseradish sauce is made and is in the refrigerator. I'm going to shred it, and let it sit in it's juices until time to make the sandwiches. They're saying we're going to get snow Monday, Tuesday, and Wednesday this week. Nothing heavy, but still - 3 days!!

I am preparing for my colonoscopy tomorrow. Not a pleasant subject but I would encourage any of you over 50 to have one. I have a family history of colon cancer. I lost an aunt to the disease and have had 2 cousins with it. The prep is the worst part. The actual procedure isn't that bad.

Other than that, it is a beautiful day and the sun is shining. They are calling for 50's later this week. Hope they are right!

Today has been a busy day! Went to the liquor store to get a bottle of jug wine, then stopped off at the post office to get stamps, then to the package store to mail a package, then to the recycling depot, then to the farmers market, and then to the grocery store, and then home. I bought chicken feet, backs, and necks at the farmers market, and I plan to make a good hearty bone broth this week. Tomorrow I'm doing another Mississippi Roast, only I plan on shredding the meat and serving it with a horseradish sauce on buns for the super bowl! I also bought all the ingredients for Auntie Jo's Special. More snow predicted for this week!

I love to freeze waffles. The batches are too large for us. Then I can have them anytime!!

I have to get on the ball and try canning broth. I have not done that yet, but I keep hearing you all talk about it and I want to try it. I LOVE eating soups/stews.

Balanced one check book this am, only have about 3 more to go. Thought I would take a break and say GOOD MORNING!!

Now it is off to do chores, the animals like to be checked in on.

Your stock sounds delicious Patti, I never thought of doing it in a pressure cooker, but then usually I am doing a huge amount that wouldn't fit, a beef usually has a lot of bones! But I bet the chicken/turkey/rabbit stock would do well in there, or the duck stock.

I never thought to freeze waffles, I hardly ever make them anymore since they usually make so much more then I would eat, I think I will try them!

I have been hoarding my quarts of pie cherries, but I finally used some to do Duck Breast with port wind and cherries, it was out of this world! I need to think of eating Duck more often since it is there in the freezer!

Medical Marijuana oil is not like the stuff you smoke Linda. It's not habit forming at all, check with you doctor and ask him/her about it they will be able to let you know what you need to know about it

And yes Marty I think he's a jewel, love him so much. I know it gets a little sickly when I go on but I'm having fun with it at the moment

I never asked the doctor about medical marijuana, and most likely will not. I know I have issues with addiction, so I do not want to even try it, and risk getting addicted to it. I was once put on Talwin (A drug that is now recognized as a narcotic.), and it took me ages to get off of it. It was a nightmare, and the drug did not help anyway. Also... my brother used to experiment with Marijuana, and he had a bad time getting off of it... So no... I do not want to try it.

Linda have they explored the option of medical marijuana? I'm not sure if it's legal in the state you live, but it's been doing some wonderful things for people with unknown seizures.

Well, I saw my doctor yesterday. So far, we have ruled out my having a brain tumour, but that does not mean that I am tumour free. I could have one somewhere else, that is influencing the seizures. We also have ruled out any chance of it being an imbalance of my electrolytes. Those turned out to be normal. My blood work is also looking normal.

So... what is it? There is a possibility that it could be some scar tissue, from a concussion that I had, when I was in my mid 20's. I have a referral now, to see a neurologist. I guess I just need to be patient, and wait until I see him, to find out more. Hopefully the neurologist, will have an answer...

On a brighter note, after the appointment, I went and did some shopping, and found some great deals, that saved me a lot of money. It was for things I was looking for, and needed anyway, so it is a true savings for me.

Our shopping experience, was exciting as well. Not only did I get some great deals, but I was able to help a lady at Walmart. She was shopping with her kids, and one of the kids had accidently left their sliding van door open. They were parked next to us, so our car hid the fact that the door had been left open.
My friend who was driving our car for me, had first seen it. I asked him to phone the customer service desk there, which he did, and we passed on to them, about what we had found, and gave them the licence plate numbers, so that they could page the person.
About 5 minutes later, the lady with her kids, came running out to the van.

Oh boy! Was she ever grateful that we found her van that way, and were honest, and let her know. One of her kids had left it open, and her laptop was in the van. Thankfully, it was still in there. She thanked us repeatedly, and after closing the van and locking it, went back to shop.
I think God lead us there, since I had not intended to go there. I had been shopping across the street from Walmart, but the item I wanted, was too expensive IMO. So I came across to get what I wanted. Otherwise... we would not have been there, for her to park beside us... and we would not have seen it, and reported it...

What a day!

Barb, three-quarters of your hay left is great! And the groundhog is predicting a short winter, so I heard. Never really understood the whole groundhog thing, butÖ

Patti, do you use the same pressure cooker for your broth that you do for canning? My canner is so old and has never been used for anything else so Iím not sure I would want to.
Also, I have a really good waffle recipe. It uses all white flour, but I suppose you could use part, or all, whole wheat. Iíve never tried it.
Hope you got your basement cleaned up. Sounds like a mess!

Linda, Iím sorry youíre dealing with the seizures and dizziness. That must be really scary!

Linda - I'm so sorry - I thought you were feeling better. Hope your doctor finds something that can help you. Is your dizziness related to your seizures, or is it something different? There are a lot of meds available for vertigo now.

Raining a lot here today. Surrounding areas are all under flood watches. We still had snow on the ground, so with the rain, we're having fog develop along with the rain. It's spaghetti weather!

I am waiting for UPS to deliver a kitchen cart for me today. I have a tiny kitchen and am sick of all the stuff on the counter top. Can't wait to start rearranging my kitchen!

Today I am going to see my regular doctor, to see if he can find something to help me with my seizures and dizziness. After trying practically every drug for seizures out there, I am getting desperate, to find something to stop the dizziness and seizures... Hopefully, he can find an answer for me...

Either/or for me on the chat thread. I do know that some people with slow broadband or God forbid dial up (there are still some out there) will have problems with the thread loading as it gets bigger. But I"m sure they will let us know if this is the case

I getting ready to head to the church to work and then grocery shopping this afternoon.

I never think to share when I get a real bargain. A couple of weeks ago a store here in town ran a produce sale. I got 15lbs of red potatoes for 98 cents! There were other things I took advantage of too but the potatoes are what stick in my mind. This store runs sales like this on meat and cereal too. It is more expensive that the other stores to shop everyday but I do hit these sales and stock up.

OK !!! You All Spoke and I Listened !!!
We Now have a Continuous Daily Chat Thread...

Tammy, are you the one that makes and freezes waffles ?
Can I have your recipe ?
I have some whole wheat, Non-GMO flour I need to use !

I saw on the news at lunch yesterday, that people are already tapping their maple trees and boiling sap !!!
We will tap our trees today !!! 1 month earlier than normal !!!!

Yesterday, I got out my new pressure cooker and made beef stock !
It said it would take 60 minutes in the recipe...
But you have to cook the bones and veggies for 50 minutes in your oven, then add it all to your pressure cooker along with 8 cups cold water...
Turn it on and it took 25 minutes for it to come up to pressure, then the 60 minutes started....When the 60 minutes was over, it took another 30+ minutes for the pressure to go to zero !!!
So that's a total of 165 minutes !!! (that's 15 minutes short of 3 hours ) !!!!!!!!!!!!!!!!!!
But I must say, it was the richest beef stock I have ever made.
After all was done, it made 6 cups of stock...SOOOO...
On with the experiment...
After straining the veggies and beef from the first batch, I added another 8 cups of water and ran the pressure cooker again for a second time to see what kind of stock I would get. I got 8 cups this time and It was not bad so I added it to the first batch that was way to strong and now I have 14 cups of stock... I may boil it down just a bit and then pressure can it today !

I just went and got the pot our of the frig and scooped off the top layer of fat...
AND tasted the stock ... YUMMMMY and Rich...So I guess adding the additional water and running thru the pressure cooker a second time did get a lot more flavor out of the meat and veggies...
RESULTS...
1. if I run it thru the pressure cooker once, I get a really rich stock where I would only have to use half of what a recipe would call for....
2. if I add 8 cups more water and run it thru a second time, I get more flavor from the beef and veggies, but will have to use what the recipe calls for.
3. Next time, only add 4-6 cups of water and run it thru the second time and still have a really rich stock.

I like the continuous chat too.

I did a mad baking session yesterday. I made 3 loaves Banana Blueberry Bread,3 loaves Gingerbread Loaf and 3 dozen Zucchini Chocolate Chip Muffins. I justified it all because it all has 50% whole wheat flour and all have a fruit or veggie in it. Plus I froze 2 loaves of each bread and 1/2 the muffins.

Plus the craving for quick bread and muffins was killing me. Not even Christmas Baling could cure it. I even had a dream one night that my family had a hidden freezer filled with baked goods.

I like the idea of a continuous chat thread!

I have a goal for February: to earn a 1,000 fitness minute reward for this month. I thought I was off to a good start, too. I rode my bike for 60 minutes, and when I got on the computer, I went online, but there was no record of it, and then I looked down at my shoe. aarrggh...!! I forgot to put it on today!! Oh well, I entered it manually, but I was so looking forward to getting a goal getter award today! I'll remember tomorrow!!

The continuous thread works for me! I too find I have to go back to the previous month to catch up. If it is all on one thread it is easier to follow along.

I do more lurking lately, but I also like the continuous chatter, it flows better.

Things have been so busy on the farm lately, just trying to keep above water. You may laugh at this but I just finished the last thing I needed to do to get ready for winter, and here we are at the midpoint. February in Maine is considered to be the midpoint of hay usage, and it has been such a mild winter so far that I have more then 3/4 of my hay in the loft still. The busy part has also been working on cleaning up, picking up and trying to declutter both the barn and the house, it is slow work!

I finally just got the teddy bear done for my niece that was supposed to be a Christmas present, that and the second elephant will be mailed today, there are pictures on my blog, along with a slide show of my animals during chore time, that I made for my parents that now are living with my youngest brother in MA.

I kind of liked the old continuous daily chat thread better. With the new monthly chat, at the beginning of the month, if you were away for a few days, you missed what was said at the end of the previous month, (unless you dug up the previous thread).

Good Morning All and Welcome to February !!!

I have a question ...

We used to just have a Daily Chat thread, then it got changed to a monthly chat thread.
(I think that was so an email went out to the team at the beginning of each month and
"spark" some interest and bring back some team members.) The result was to only bring back a few after all of these months !
My question is ...
Do you like the new monthly chat threads or should we just have a continuous thread ?
Do let me know which you prefer and I will go from there...]

In the mean time...HAVE A FABULOUS FEBRUARY !!!
