I just tried quinoa for the first time and love it! These are some great recipes guys, think I am going to give them a try!!

I made this Quinoa Spinach Tart this week and it came out great! Basically it's a casserole with a crust made from cooked quinoa, held together with a seasoned white bean puree. The filling is more bean puree with spinach, mushrooms and other veggies, but really you could use any savory "pie" filling, pot pie, quiche, whatever.

I love it!!!! I use it in place of rice in many recipes.

When I first tried it I made up my own recipe. If you try my recipe, please rate it=)

Honestly, I've never tried it. But it is super healthy and I bought some so that is a step up!
Do you eat quinoa? If so, what is your favorite way to cook/eat it?
