I've been craving taco's too. Maybe after the weekend I will pick up the ingredients to make them.

Tonight we are having chicken masala courtesy of the ex hubby who is a vegetarian but every now and then gets a craving so he cooks it and then ends up with an upset stomach because his body isnt used to meat so it either goes to waste or we take it and since his cooking is amazing, I can never pass it up. emoticon

I want turkey tacos now.....can I come to your place for dinner lol? I think my mom said she was making chicken and corn on the cob. This is acceptable so I'll probably eat it. Now excuse me whilst I go get turkey to make tacos lol!

Tried a version of Bill's zucchini, thanks so much for the suggestion Bill, it was AMAZING! I stuffed cheddar in the middle of the meatloaf in the zucchini. So good! We also had mushroom spinach potatoes.

With Turnips, much like a lot of things, it depends on how you cook them. I just started experimenting with them and have only made them a few times.
I am excited to try a version of what Bill described on saturday!

Today's dinner will be chilled tomato spinach soup and 1 burger.

Our zucchini plant is starting to produce so tonight is stuffed zucchini meatloaf. We like to grow a couple of zucchini really large, then we slice in half, scrape out the seeds, and put meatloaf mixture in the middle. Wrap in foil and put on the bbq for 45 min. or so. It is one of my favorite summer meals.

Sure you can come to my house for dinner! Though it may be a very long drive. I'm in Edmonton Alberta Canada emoticon

The spinach potatoes are amazing. I cook them on the BBQ and rarely ever make them the same way twice.
I start with sliced potatoes and put them in a bowl with olive oil, seasonings (salt, pepper, often parsley, sometimes paprika, onion or garlic powder). Sometimes I add garlic or onions to the potatoes, sometimes I don't. Toss them to mix well. They will be cooked in an aluminum foil "pocket" so you put half the potatoes on the aluminum foil, then a bunch of spinach on that (as much as you can stuff on) and then the rest of the potatoes (so the spinach is in the center). Then bbq on medium heat for about 30 minutes. It is so yummy!

I made roast vegetables and chicken, with organic macaroni. I used CSA vegetables and fresh thyme. It turned out well. There was a mystery vegetable, radishes (which I don't like raw), and a bunch of other vegetables... but neither my kids nor I complained about the radishes. I guess they taste better cooked.

It's Meatless Monday, so we're doing vegetarian stuffed shells. I bought some great colorful giant shells from the gourmet section at TJ Maxx and this is one of my favorite recipes. I bulk up the light-ricotta filling with chopped zucchini and carrots, then load up the sauce with spinach and mushrooms. It's a hearty, delicious meal but not hugely caloric. One of my favorites!

Tonight is pot roast. I got it started in the crock pot a couple of hours ago. I think I'll make some cous cous and maybe green beans to go with it. I know green beans don't sound all that excited, but they are my favorite veggie!

Dinner tonight is likely to be pizza. I need to grocery shop like WHOA right now! *lol*

Tomorrow we're going to have our dinner for lunch (choir concert in the evening for one of the kids) -- I think I'm going to make tacos. A teenage favorite and perfect for me because I prefer taco salad anyhow!

Last night dinner was amazing! On the BBQ, I stuffed chicken breast with garlic, spinach, parmesean and mozza, then wrapped in onion, wrapped in foil and threw on the BBQ, so yummy! There was left over potato mushroom pockets from the night before and grilled eggplant.

Tonight it is Turkey bacon spinach salad and garlic toast

I am so with you Angey--health is what we strive for--weightloss is the bonus!

Tonight's dinner was Parmesan shrimp, a large salad, and orange maple glazed carrots. 345 calories.

I made it too spicy, whoops. so I added 1.5 cup of skim milk that I hadn't planned on. so 480 by the time I was done. Still way within my daily calorie budget =)

Goal 1000 fitness minutes/month!

I may not be to the finish line yet--but at least I am in the race!

A healthy me is up to ME!!!!!

Doesnt have to be boring, to be low cal, seasonings have no calories and many are secretly really good for you.

One of my favorite things now is trying to find delicious healthy food to eat. It is something we will have to learn and stick to for life and I for sure am not eating plain boiled chicken and steamed veggies my whole life and you wouldnt stick to that for long either. Health is so much more important than weight and with health comes weight loss.
