So, the 12 weeks ended last week.
Because of my family circumstances I did not even realize it.

What are my conclusions? I am not even close to doing ETL the way it should be done.
Due to the difficulties in my life I had several episodes of bingeing.
Because of that, my weight stayed almost the same. I may be glad I did not gain weight... (?).

However, I did introduce a habit of eating a salad almost every day. I eat a good, ETL-compatible breakfast every day.
I stopped eating dairy at home... (have avoided meat and fish for about 20 years now) and I am learning as I go along to create vegan evening meals.

Beans- I try to change water a few times too if I think about it

White-Green- Eat plenty too of the veggies and fruits- esp. veggies and I find I need to rmember to chew so it is digested properly. It does work! Takes time. emoticon You are doing great.

Thinking about how I always felt like I have to battle an urge to overeat day in day out, I realized that maybe I have more / stronger cravings than others due (maybe) to the fact (?) that I might have a lot of food intolerances / food sensitivities. So I wonder if my body may react more sensitively to food (and drugs) than other people's bodies and this might have caused the endless drive to eat eat eat.
My experiences now that I try to follow the Eat to Live program seem to prove this assumption as I seem to experience a lot less cravings now that I eat mostly vegetables, fruit, beans and nuts (and some other processed foods but limiting them more and more).

That's interesting that your MIL drains the water and then uses fresh water.
I hope that the second week will bring you weight loss Sunny. I know that I had a plateau for 2 weeks and then suddenly lost weight when I started trying to follow ETL more closely.
Are you an American living in Greece? Or are you Greek?

Today it's been 8 weeks since I decided to try to move closer to the ETL program. I am not doing very well this week, I have tons of stress due to my father being in hospital and my siblings behavings like (..... can't come up with a good word but it's not a friendly term, for sure). I had 2 binges and unplanned food in the past 4 days or so.

I do feel that I am getting handier at making salads and dressings somehow. And when I got on the scale two days ago I lost one lbs. My weight may well be going up again now with the overeating. emoticon

I know that I am making efforts. I am serious in those efforts. But still I am struggling, probably because of all the issues I am having and my history of eating disorder (BED).

In Greece we always cook beans, lentils etc from scratch. I soak in lots of changes of water, then follow your procedure unless I'm doing them in the slow cooker. My Greek mother-in-law brings beans to a boil, drains off the first water, then cooks in fresh water. I think she is pouring off some of the vitamins but this method does reduce frothing and is supposed to make them more digestible. You can also google carminative herbs and spices for ideas of what you can add to aid digestion. I will look for canned beans when I travel.
I had a net gain of 800g in the first week. I don't think I'll be able to stay fully on plan while I'm travelling. I did find soy milk so at least I can avoid dairy.
I visited your lovely country when I was in my 20s and doing the Grand Tour of Europe with a two-month Eurail train pass. One of my two majors for my first degree was in Art History so I visited all the works I had studied. The Netherlands has produced some amazing artists.

Ha ha, that's right, I ate the rice cakes because of the gluten intolerance!
If I am correct Dr. Fuhrman prefers us to not eat bread at all, or just 1 slice per day... and limit grains and starches.

Yes, ETL states to not add any salt to food and to get no-salt added products (like canned beans). In my country (The Netherlands) I don't know if it's even possible to get canned beans without salt added. I try to cook my own beans now and then but I do rely on canned beans a lot.

If the beans are problematic for you, you might try cooking your own (if you're not already doing so). If you cook them properly, they might be less difficult to digest.
This is what I learned about cooking beans: let them soak for at least 8 hours, then drain the water and add fresh water for cooking, then let them cook 'hard' without a lid on the pan for 10 minutes and remove as much of the white froth as you can, then cook for about 1.5 hours.
Canned beans are often not soaked long enough, not cooked long enough, and they still contain too much of the 'froth' (saponins, which are more or less toxic for the body).

Eating vegan is in itself no guarantee for weight loss. I've gained since starting ETL on Monday, although I realise it's my body adjusting to the pulses/legumes after avoiding them for so long on various low-carb, high animal-protein diets.
Interesting that you are gluten intolerant, so am I. That explains the rice cakes! I've made the Artisanal Bread in 5' GF mixture so it's easy to bake a quick roll. I'm thinking of trying it in an electric waffle maker or flat as tortillas. In a more profligate past I got an electric ice cream cone maker but only made them once, now I find it useful for cooking tortillas, rotis or wraps.

You mention several times trying to reduce salt. Is this part of ETL? I don't cook very salty foods but I can't cut it out entirely because I have low blood pressure.

This is day 8 of no ricecakes and PB.

And, I finished 7 weeks now of my personal 12 week challenge.

I had a pancake yesterday in a restaurant. It had veggies in it but still I found it way too fatty. I thought about how I handled the restaurant challenge and decided that next time I will have herbal tea instead of cappucino, and pick a different filling for the pancake that will not be so fatty.

Today we were going to have roasted parsnips with a vegetable stew, but we did not like the taste of the parsnips. My husband baked some french fries in the oven and I had just a few of them. Again, too fatty and I feel sorry I had them because I have a feeling that these low nutrient foods are now causing me to have cravings.

This is day 6 already since I cut out rice cakes and peanut butter.

I notice that I feel better in my stomach when I wake up, more 'empty' so to speak.
Having 4 eating moments and no more seems to be a lot easier than it was before, I guess because of the bulk of all the veggies and because my body is getting so many nutrients.

I do have cravings now and then, for example today I had a rather emotional moment and longed for chocolate. But the cravings are not terrible (at all) and I told myself to get home and have a normal snack instead of stopping at a store to get trigger foods.

This is day 2 without rice cakes and peanut butter. Yesterday felt weird. Today too.
Right after the evening meal when I was watchinig TV - the time I always snack on fruit and rice cakes with PB - I had huge cravings, I was trying to come up with an idea of something to eat. Thankfully my husband made chicory coffee and when I drank that, I felt that I was really full. So, while I thought I was hungry I was really having cravings. The 'toxic hunger' dr. F. talks about I suppose.

I thought that given the fact that I am doing a lot of things right (but, also still doing many things wrong such as snacking and using salt), I wasn't bothered by toxic hunger so much. I reasoned that the rice cakes and PB are not the worst of processed foods...
But I do notice these cravings, and feeling very tired and a bit 'blurry', like I can't see straight.

I think I'll go to bed early today.

My food today:
Breakfast with oats and nuts and fruit and soy milk and 1 glass of green smoothie.
Lunch was veggie soup with beans and iceberg lettuce with the dijon date dressing (about 140 calories). Strawberries for dessert.
Snack was 2 tangerines, some beans with 1 Ts hummus (store bought), 2 carrots and a handfull of pumpkinseeds.
Dinner was a dish of eggplant with tomato and garlic and beans. Frozen peach for dessert.

Calculated it: this was 1861 calories.

Wow 6 weeks gone already!

How it's going: I am making salads for lunch now while before I'd just have raw carrot, cucumber and bell peppers.
I am also making the Dijon Date Dressing about once a week and use it for my salad for 3 days. The other days I still use mayonaise.

I've avoided eating sugar for about 18 days now.
I diminished the amount of salt in my soup by using only half the cubicle of herbs that I put into the soup.

I decided last night to get the rice cakes and peanut butter out of the house for 2 months and see how I do then. They are too much of a temptation. I am frustrated because I am not seeing weight loss, probably because of overeating on the rice cakes and PB, plus I had several binges since I started.

I do all right getting in the right foods but I am not doing well (yet?) in avoiding other foods and salt, so I am not seeing weight loss... I will keep on trying to do better.
Back in 2012 when I followed ETL 'to a T' (except for salt) for 12 weeks, I lost 6 kg (about 14 lbs?) of weight and my blood pressure improved a lot. I found it very very hard though to do the ETL program then, I had to struggle hard to finish the 12 weeks.So now I am trying to implement new aspects of the program one by one, and slowly/gradually. But I don't know if I will ever be able to be completely 'compliant'.
I've cut out sugary foods (AGAIN), this is day 9 for me. The foods that are 'non-ETL' that I still eat are oily foods like mayonaise and store bought hummus... Mostly due to lack of time and energy to make those foods at home.
Then, some dairy be it very little... and rice cakes - I resort to rice cakes because I don't eat bread because of my gluten intolerance. Dr. F. is not very fond of bread, but it would be better than rice cakes.
I recently went from eating just raw veggies (bell pepper, carrots, cukes) to making a 'real salad' for lunch and both my husband and I notice that our intestines seem to work better since.

The salt continues to be a struggle for me. I did take a test and my salt intake was not as bad as I thought it was. I keep thinking that I need a period of time when I don't have a lot of stress and then try to go salt-free 'cold turkey' for 3 weeks to go through the 'withdrawals'. I am looking at the summer period, after our vacation, when I will have less obligations and activities.

Another sugar-free day, today is day 6. And today it's been 3 weeks since I started my challenge to do ETL 'as well as I can'. I had not foreseen that I'd get so caught in the sugar trap. But I am continueing to work on doing the ETL program.

I weighed my salad today and discovered that I had eaten about 340 grams of raw veg. 1 lbs is 450 grams. I had another carrot so now I met the goal of 1 lbs raw vegetables, but I am amazed at just how much salad we need to eat to get to that 1 lbs per day. I intend to also weigh the amount of cooked vegetables I eat some time this week.

I am doing a lot better now. I cut out all sugar again this weekend and went through rather horrible withdrawal symptoms, but I can feel my mood getting better now.

I am far from perfect, I just think it is a win when I reach for fruit or a veggie, I celebrate what I do right, and spend less on the choices that delay my journey to health. It is the biggest process for me to learn that I deserve better than I have been treating myself. I hope this next week you are celebrating healthier choices along with me! Best wishes.

2 weeks finished but I did not do well, AT ALL, I once again fell into the trap thinking that 'I can have a little sugar' and then craved more, and more, and ended up bingeing. I cut out all sugar again now and find myself going through a severe case of withdrawals.
Thankfully I DID manage to keep on eating a lot of freggies and beans.

That's a good idea, using the bean stew. I'll try that too!

I feel I'm doing well so far even though I am still far from following the ETL program to a T.
I am beginning to remember to buy a lot more leafy greens for the salads.

I think you are right about the dressing amounts. I never liked drowning my salad even though I am American but it does seem most do-
-maybe I can freeze some or use the littler blender I have.

Plopping a bean stew on top of my salad has made it pretty yummy.

Making smaller amounts may be difficult...
I think I read that it's important to get in some sort of fat with greens to absorb the nutrients better... I like how the ETL dressing recipes include nuts.
I made the dijon date dressing again this weekend. I feel the servings sizes are rather big... maybe Americans are used to eating more dressing than Europeans. I found that comment of Dr. F. about how they'd better skip the greens and drink the dressing straight from the bottle hilarious!

I made a salad just about every day since day 1 on Thursday.

White- green I like to make the approved dressings too- but my DH does not use dressing. I think hta tis great..but he will put honey on it -plain which I think sounds kinda yuk. And he also goes to whole foods with it with a friend and gets a couple of cheese samples ..
anyway-
point is I have to make a smaller amount.
On ething Ilike to do is cook black beans/pinto and use salsa and avocado which is yummy. IO have been making my own salsa so it is salt free.

I like this drifting back into E2L process. Hope I have a good heavy anchor to stay!

The scale said I lost about 2.2 lbs yesterday!
I also seem to notice that I have less desire for a snack in the afternoons after I eat the 'huge salad'!

Yes I started but that does not matter! Do please jump in! Keep me posted Em!

I have several things that I want to work on to move closer to the ETL program, diet wise.

My first goal is to make a salad for lunch - so far I'd just eat raw veggies like carrots and cucumber (with soup and a few ricecakes with hummus and avocado).
I also want to make some ETL-'approved' dressings more often.
AND to diminish the amound of foods that i eat that are not vegetable, fruit, beans or (1 serving of) nuts. First of all sugar and junkfood.

This week I made a salad almost every day, and a dressing once (lasted for 2 days). I emptied the house of sugary foods except for some hard candy, that I've been using to get through the withdrawals... but now they are finished.

I decided that I will challenge myself to work on getting closer (and closer) to the ETL program for 12 weeks. Starting on March 21st, I will continue with serious efforts until June 21st and then evaluate.

It means that I will try to change the habits I have with food that are not in lign with the ETL guidelines. I know that in the past years I've made good changes to my eating pattern but I can still do a lot better.
I know myself and I won't be nearly perfect, at all but I do want to commit to making good efforts and also to not give up should I falter, but to do my best to go back to the plan as well as I can.

I'll probably be posting updates on this thread now and then.

How about you? Anyone feel like joining me in a 12-week attempt to improve your eating habits and diet?
