Low-Carb "Potato (Cauliflower)" Leek Soup

This soup is a Paleo, low-carb, and dairy-free comfort food. No one will know this soup is made with cauliflower and not potatoes. The thyme, bacon and leeks add extraordinary flavor to this velvety soup.

Ingredients
4 oz. preservative free pastured pork bacon diced (about 3-4 slices)
4 ounces yellow onion chopped (about 1/2 medium)
1 fresh leek (about 8 ounces) sliced
1 clove garlic crushed
1 tsp. dried thyme
1 1/2 quarts chicken stock low-sodium, quantity divided
1 head cauliflower cut into florets (about 1 lb.)
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
1 tablespoon parsley chopped

Instructions

1. Heat stock pot or dutch oven over medium high heat. Add bacon and cook, while stirring, until crisp. Remove bacon from pan and drain on plate. Reserve bacon for later. Discard all but one tablespoon bacon grease from stock pot.

2. Place pot used for bacon over medium heat. Add onion and leek. Sprinkle lightly with salt and pepper.

3. Cook onion and leeks, stirring occasionally, until edges begin to brown and the onions appear translucent. Add garlic and dried thyme to onion. Cook for one minute.

4. Add 1 quart of chicken stock. Heat on high, stirring occasionally until stock simmers. Add cauliflower and cover pot.

5. Using high heat, return to a simmer. Once soup comes to a simmer, turn heat to medium low. Simmer until cauliflower is very tender, about 12-14 minutes.

6. When cauliflower is soft, blend soup in batches in a blender or use and immersion blender to blend soup to a velvety texture.

7. If using a blender, cover the top to prevent any escaping of the hot liquid.

8. Return soup to stock pot if using the blender option. Stir in the remaining two cups of stock. Bring soup to a simmer. Remove from heat. Stir in salt and pepper. Taste and adjust seasoning.

9. Stir in all but two tablespoons reserved bacon bits. Garnish with remaining bacon bits, a sprinkle of pepper and a sprig of fresh thyme if desired.

Recipe Notes
If I have leftover soup, I freeze it in pint sized freezer safe canning jars. It makes a perfect quick lunch.

INGREDIENTS
1 tablespoon Unsalted Butter Stick
1 tablespoon Canola Vegetable Oil
4 each Leeks
1/2 cup Chicken Broth, Bouillon or Consomme
1/4 teaspoon Black Pepper
1/3 cup shredded Gruyere Cheese
1/3 cup Parmesan Cheese (Grated)

1. DIRECTIONS
In an ovenproof skillet, melt butter and oil over medium-high heat. Add diced leeks and cook 5 minutes until they begin to sweat (release liquid). Add broth, salt, and pepper. Cover and continue cooking 15 minutes until leeks are tender. Uncover and boil off the liquid in the skillet.

2. Heat broiler. Sprinkle leeks evenly with cheese. Broil 3 to 4 minutes, 5 from heat source, until browned.

Keto Cheesy Baked Leek

This deliciously tender baked leek is coated in a rich and creamy feta and parmesan sauce then cooked until bubbling and golden.

This is a great side dish to roasted meats - perfect for Sunday lunch.

Ingredients
Unsalted Butter; 2 tablespoon

Parmesan Cheese; 2 tablespoons, grated

Feta Cheese; 1 tablespoon

Leeks 1 each

Cream Cheese Spread; 1 tablespoon

Heavy Cream; 1/3 cup

Salt, Sea Salt; ¼ teaspoon

Black Pepper; 1/8 teaspoon

Step 1

Preheat the oven to 400 degrees Fahrenheit.

Step 2

Slice the leek into 3 even segments discarding the outer leaves and the tough base. Slice each segment in half lengthwise. Arrange the sliced leek halves tightly into a small oven-proof dish. Dot with half the butter and transfer to the oven to bake for 10 minutes until just tender.



Step 3

Whilst the leeks are baking, melt the remaining butter in a small saucepan over low/medium heat then add the cream cheese. Stir to combine until melted together.

Step 4

Add the cream, crumble in the feta and sprinkle in half the parmesan. Bring to a simmer and stir to combine. Cook gently until hot through, the cheese has melted and the sauce is thick and creamy.

Step 5

Pour the sauce over the part cooked leeks and sprinkle over the remaining parmesan. Return to the oven to bake for a further 12-15 minutes or until bubbling and golden on top.

INGREDIENTS

2 pounds zucchini, sliced
6 tbsp avocado oil
1 tsp Italian seasoning
1/2 tsp pink salt
1/2 tsp black pepper
NOTES
Preheat oven to 400 degrees. Slice zucchini into large pieces. Drizzle avocado oil, salt & pepper, and Italian seasoning. Mix so that each piece of zucchini is seasoned evenly. Roast in the oven for 20 minutes.

Pork Tenderloin With Mashed Cauliflower
A deliciously tender, pork loin in a wonderful marinade!
SERVINGS

INGREDIENTS

2-3 pound tenderloin (total weight)
1/4 cup olive oil
1/4 cup coconut aminos (or gluten free soy sauce)
1 heaping tsp clove garlic, minced
3 tbsp Dijon mustard
black pepper to taste
Mashed Cauliflower
2 small cauliflower heads (or 1 large)
3 tbsp butter
1/2 cup chicken broth
1/4 cup heavy cream
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
INSTRUCTIONS

Slice pork tenderloins into large hunks. Beat meat with a meat tenderizer. Place in a bowl or ziplock bag and add marinade. This is even a great recipe to let set up to overnight.
To a hot grill with the back burners off, cook pork 3-4 minutes each side. Transfer to the unlit back burners and cook additional 5-10 minutes until done.
Meanwhile, steam cauliflower florets until tender. Drain. Add butter, chicken stock, cream and spices to pot. Add drained cauliflower back to pot and mash. I like to use my stick blender but regular potato mashed will work just fine. Taste for salt. Enjoy!
