Just wanted to pop in and say what a great thread emoticon

How does it hold up to lack of refrigeration for a week or so? Jerky does fine of course, but I am thinking of what to do with getting the fats in when camping/hiking.

Yes... you would want to use lard, or tallow (beef fat) as it holds up to heat even better (stays firmer). I like 'green' in mine... kale, parsley, herbs. I also use lots of spice (garlic, paprika, salt, pepper, poultry seasoning, cayenne pepper).

I like pemmican with just meat, lard, and seasoning, so I don't worry too much about what anyone else adds... I just grind my meat, melt my fat, stir it in and if I want some variety, I then add pinches and bits of this and that until I like the taste, LOL. Other things I've added include ground up pork rinds and dry cooked bacon.

I don't need mine to be shelf-stable for 50 years, so I add whatever I like.

I'm searching for recipes now. I would suppose I would want to use lard since it would hold up better... so that would be my base. I would like to add something besides the dried meat... I don't want to add the berries. One recipe mentioned dried kale. I wonder how that would taste/hold up? Any suggestions?

i just had to go look it up. I was an interior park ranger and used pemmican all the time, and it ALWAYS had tons of dried fruit...and i'm thinking thats going to drive the carbs way up..but in researching, i see it doesnt have to have the fruit. LOL leave it to the hiking outfitters to give it a boost...plus it always tasted SO good!!!

Cynthia, since you already have the dried pork and a dehydrator, why don't you give the pemmican a try?

Interesting... I hadn't thought about pemmican. I just plugged into this thread and I really don't have anything to add. I hope someone can since I am planning a hike/zipline adventure in the Grand Canyon. No rock climbing emoticon emoticon I dry meat..in fact, I just got a load full of pork jerky out of the dehydrator this morning. I was planning on taking some of that, but then I would be heavy on protein and woefully low on fat. I will definitely be keeping an eye on this thread.

Hi!

For the butter and coconut oil, I'd pre-measure it into Ziplock snack bags, and then just nip off a corner and squeeze it into the cup. As an alternative to butter, you could take along a small jar of ghee (won't matter if it melts), and use coconut oil powder instead of coconut oil:

...and I don't know how much prep you have time for, but have you considered pemmican? Lard stays solid at pretty warm temperatures, and if you again portion it into Ziplock snack bags (and carry a spoon 'just in case'), it really is a delicious and satisfying snack... you can be as carb heavy/light as you choose by varying the amount of dried fruit you use, or leave the fruit out altogether (I like adding herbs instead).

i've seen butter dishes you put cold water into then flip them over on top of the butter and it keeps it cold..no clue how it works but supposedly it does!!
No other ideas on that..i'd take freezer packs and hope it didnt get too hot wherever you are going.
the only fat bombs i do have cream cheese and butter in them..so i'm no help there. please post what you come up with! i work at a lot of horse shows and take a cooler with my food, but it would be nice to have things that dont need refridgeration!

Good evening, everyone!
I quit smoking 2 months ago (woo hoo!) and as a lovely side effect rapidly packed on 15 pounds. Not acceptable! It's rock climbing season, and I am not good enough to be hauling an extra 15 up a rock face - or on the hike in for that matter!
So, I've returned to the Keto diet. I had great success with it in the past and was able to maintain for a year and a half. I've tested and confirmed that I've reached ketosis, though I'm in the low end of optimal range so I need to work at my diet a bit more. It's so hard - carbs are yummy! I know I can do it though!
I find myself faced with a dilemma, however. Next weekend we will be heading out for a 4 day camping trip, and I NEED my bullet coffee! We are well equipped for making coffee, and I have a hand blender that should do the job well. I'm just trying to figure out how to pack up my butter and coconut oil so that I won't have a melted mess. There's just no way to keep things that cold all of the time. I'm thinking I might be best off to pre-measure my butter and oil and package them together somehow. I am open to suggestions on this.
I'm also looking for a version of fat bombs that don't need refrigeration and aren't prone to melting to carry in my pack. I've always gone with trail mix in the pack, but so many of the ingredients are out of bounds on Keto. I could use some ideas!
