I saw a recipe for fruit pizza - you cut a watermelon in wedges, top it with vanilla yogurt and then add berries - my mouth watered at the picture so I can’t wait to try it

Baked apples, fruit compote, or fruit soup. I find that cooking the fruit makes it feel more like a desert and less like a healthy thing that you snack on anyways. All of the above can be made with very low added sugar and fat. Can also be made ahead and stored in the fridge. Increase the cinnamon and play with other spices to make it more interesting.

Have to try that TomorrowC.
I have hear of peanut butter on celery but not bananas.
I like grapes that I take out of the freezer.
They taste like little frozen popsicles. Hope you guys are well.

I recently discovered that my local grocery has frozen mango. I really enjoy it mashed with greek yogurt. It's not ice cream but I find that it's satisfying enough that I no longer crave ice cream. Sometimes I add a tsp. of maple syrup to it for some extra sweetness/flavour.

I stock up on Trader Joe's sipping chocolate powder every time they have it. It's SO dark and delicious, only 90 calories if you make it with water (even better if you can afford the calories for using milk), and it has 4g fiber, 3g protein and 25% DV of iron! Sometimes I'll add raspberries, banana slices, or peanut butter, again depending on if I have calories to spare.

Other go-to desserts for me include cocoa rice krispie treats, berries with nutella, and berry white tea cookies from Adagio.

As you hold on... as long as you do what's in your heart... I believe you can do the right thing.

I make my own homemade applesauce...it is delicious. I wash apples...cut apples in quarters (leave skins on) discard core & seeds. Place in pot w/just enough water to keep from sticking (maybe a 1/2" or so. Sprinkle generously w/cinnamon...cover pot & bring to boil...turn down to simmer & cook till apples are tender & soft & mushy. Uncover & simmer till water & juices are absorbed. Let cool for awhile. Place all of it in a Food Processor (I use my large Ninja food processor). This tastes incredibly like apple pie filling, but w/out the sugar, etc...If you want you can crumble graham crackers in it, I don't, but I have had it like that before. (a regular blender will not break the apple skins down. The Ninja makes this creamy & has no trace of apple skins...comes out so smooth).

carmel apple variation - instead of covering an apple with a thick layer of caramel

cut an apple into slices, and dip in a 1 tbsp nut butter with 1 tbsp caramel sauce. a little protein, fiber from the apple but still the enjoyment of caramel flavor

I've done a tofu chocolate mousse/smoothie with just soft tofu, cocoa powder, sweetener of choice, & maybe vanilla, cinnamon, and/or espresso powder. PB2 powdered peanut butter is good in there too.

That microwaved "baked apple" with cinnamon is awfully good in this weather. emoticon

Not really an "aha", but one of my favorite non-dairy desserts is a tofu-based chocolate mousse. Basically, you melt 1 cup of chocolate chips, then blend a block of silken tofu with 2 tsp vanilla until smooth, add the chocolate, blend until combined, then pour into serving dishes and chill. It tastes best if you let it sit at least overnight.

You can even freeze it for a sort of chocolate ice cream, though I haven't actually tried that.

Another easy dessert I like to bring to parties is Chocolate Covered Katie's Cookie Dough Dip. I pair it with sliced apples and strawberries, and it keeps me out of the brownies and cookies that so often show up at those family parties!

Take life one day at a time - enjoy today before you worry about tomorrow.

One of my favorites is to slice an apple (I use a corer/slicer), leaving the skin on. Put in the microwave for about 30 seconds. I top it with some plain, nonfat Greek yogurt, a few chopped nuts of my choice, then cinnamon.

You can also add a bit of granola mix, if you prefer, but I don't buy it because of added sugars - prefer chopped nuts.

One thing I made up the other night was I had bought some white nectarines and was looking for a "dessert for one". I peeled the nectarine, sprinkled it with cinnamon, placed in a cake pan sprayed with noncooking spray. Covered with foil and placed in a 350 degree oven for 30 minutes. Served with 1/2 cup vanilla ice cream. Oh so Good!!! You can serve it with Cool whip or eat it plain. No added sugar required! ;)

I'm fortunate to live in a region (Delmarva Peninsula) that produces some of the nation's best seasonal fruit; in the summer, all I want are peaches, melons, berries -- most of which are available at roadside stands, farmers' markets, and backyards. The only thing I crave, and have trouble finding, are fresh figs.

The journey of a thousand miles begins with a single step.

A few of my favourite desserts / snacks:

- Bulk bake: chop apples and / or pears in to 1/4" cubes, coat with cinnamon / ginger / nutmeg, and bake at 325 deg F for 60-90 minutes until soft and sweet. Separate in to portions that can be mixed with almond butter or peanut butter and mixed with plain Greek yogurt, or used to top a plain omelet or a low-carb "crepe", or mixed with cottage cheese. Freezes / thaws wonderfully, and can be mixed with cranberries or blueberries for a change in flavour.

- Low carb mini-cheesecake bites ( recipes.sparkpeople.com/recipe-detail.asp?
recipe=3333510
)

- Almond flour cake ( recipes.sparkpeople.com/recipe-detail.asp?
recipe=3399662
) topped with fresh berries, or the baked apples, and unsweetened whipped cream

- Self-crust pumpkin pie ( recipes.sparkpeople.com/recipe-detail.asp?
recipe=454777
) although I change the recipe so that it is sweetened with pureed fruit instead of sugar / sweeteners

- Baked "custards" based on the pumpkin pie technique (I use these as breakfasts, but smaller portions make great desserts), such as:
recipes.sparkpeople.com/recipe-detail.asp?
recipe=3464991

or
recipes.sparkpeople.com/recipe-detail.asp?
recipe=3364156

- Cheese / nut / fruit plate

- Almond flour crackers with a blended fruit dip (I like to whip together cream cheese with plain Greek yogurt and apple butter or plum butter --- avocado blended with berries or nut butters is another great topping)

- avocado with chia or flaxseed "pudding" (lots of recipes available in every possible flavour combination including a rich chocolate with unsweetened cocoa powder)

I don't follow a low-carb way of eating, but do find that a lot of the recipes are delicious, and include great healthy fats that balance out my nutrition and are incredibly satisfying.

Sir Terry Pratchett: "Science is not about building a body of known 'facts'. It is a method for asking awkward questions and subjecting them to a reality-check, thus avoiding the human tendency to believe whatever makes us feel good."

"The Inuit Paradox" ( discovermagazine.com/2004/oct/inuit-
paradox
): "...there are no essential foods—only essential nutrients. And humans can get those nutrients from diverse and eye-opening sources. "

Some might think this is cliché for weight loss, but I genuinely love rice cakes. I keep the chocolate, white cheddar and the apple flavors around. A chocolate rice cake is 60 calories. I generally have 2 and it's pretty satisfying.

Berry “ice cream”

In a blender mix a ripe banana + frozen berries. Voila “ice cream”! Divide into 2 or 3 portions and freeze. Or eat it all, whatever works lol.

That's a great idea. :)

Sometimes I cut up an apple with the corer/slicer, put it in a bowl, sprinkle with cinnamon and microwave until softer (I can't remember how long - start small and add seconds if needed). Then add a little whipped topping and it's kind of like apple pie.

Ok. The other day I mashed my half banana, added the measured portion of pineapple and the measured portion of nuts, and pretended it was a "banana split." It actually tasted really good.

So I thought I'd ask if anyone else had any "aha" healthy dessert ideas.
