Funny that - I did exactly that yesterday with my Rotisserie Chicken. After having some with my dinner the previous night, I made a stirfry with some, using
Mushrooms; Celery; Onion; Red Capsicum; Spring Onion; Carrots; Courgette, and Buckwheat, Brown and Red Rice and Quinoa. I put 4 serves into the Freezer and ate the other, and I have some more meat to eat tomorrow.

Sometimes I make an Apricot Chicken Casserole.
For that I use canned tomatoes, carrots, onions, celery and capsicum (chopped), chickpeas, Red Lentils (the red ones help to thicken it) and dried apricots ... the strong tasty ones, not the insipid dessert ones. I use a chicken stock for salt and added flavour base. They freeze well, too.

Where it comes to casseroles, you don't really need a recipe. Just chuck in the various chopped veges you have on hand and work with that.

I never use any soups at all for anything, other than soups I make myself as a complete meal.

You don't really need a lot of ingredients. Put a piece of warmed up chicken on your plate with some vegetables. Chop it up on top of a salad. Slice or tear apart and make a sandwich. Mix it into some pasta with veggies.

If you want recipes I suggest searching Google for "leftover chicken" ideas.

Take your rotisserie chicken and separate the meat from the bones and skin. Discard the bones and skin, and shred or chop any large pieces, if necessary.

You now have cooked chicken meat. Tons of ways to use that where exact amounts of meat don’t matter. Look for recipes for:

- chicken salad
- chicken tacos or enchiladas. Combine with cooked rice, beans and/or salsa and sprinkle with a little cumin and oregano (or taco seasoning) for an easy filling.
- soup recipes—look for brothy ones. You can substitute chicken for other cooked meats
- chili
- casseroles. If the recipe calls for cream of chicken/mushroom/celery, you can easily substitute a basic white sauce: in a sauce pan over medium heat, stir together 2 Tbl. butter or oil with 2Tbl flour for 3 minutes or until fully mixed and bubbly. Stir in 1 cup of milk. Whisk the mixture constantly, and keep it over heat until it just starts to boil--it will thicken. Turn off heat. Done—mix it into your casserole ingredients. Add 1/8 of a tsp. salt and a few grinds of pepper, if needed.

I looked at spark recipes and I just can’t see any ideas, they require a full chicken or chicken breasts.

Hi everyone,
I need some ideas for a recipe using chicken pieces from a rotisserie chicken. I thought about a chicken casserole but I do not have any creamed soup of chicken. Looking for ideas for any recipe involving chicken with few ingredients for tonight’s dinner.
