I had a cup of the lentils and brown rice I made for this week's lunches. I bring a big container of it and warm up a cup of it in mic every day. Also, a tossed salad and an orange. It was very good and filling.

A salad of spring mix lettuce, coleslaw mix, and arugula with mushrooms, green bell pepper, a couple tablespoons of trail mix, and some organic chili beans, topped with fat free wasabi dijon dressing - 220 calories. Low, but I know I have a slice of cast iron skillet cookie (with a little bit of light ice cream on top) waiting for me tonight!
