i totally agree with MLAN613 4 cups of veggies with a lot more nutrition, is equal to 1 cup of starch. And there is something to be said for having a variety of colors and flavors...You don't get bored, it fills you up, and you don't get such strong cravings for more starches 2 hours later.
Over the holidays - my nieces and nephew watched me squeal with glee over the sides of lemony green beans, salad and butternut squash - as a vegetarian I like to think I am setting an example that vegetables are fun

I must be strange because I have NEVER found ANY negative points to my plan, but then my plan is what I have always eaten and loved (lean protein, healthy fats, quality carbs from whole grains and loads a rainbow of fruit/veggies) .... just not quite so much.
