I did actually have more of a baked potato yesterday at the Minnesota State Fair. It was a breakfast potato skin with some steack, egg, a potato, and a sauce. It was so good.

Not a bad idea. A lot less grease than hash browns or breakfast potatoes.

I think I’ll have to try leftover Thai on grits. Or oats. Who needs sweet?
I have used my homemade peanut (actually tahini) sauce on baked potatoes, sweet and white. Why not the rest of the pra ram tofu?

Bake a few at a time to keep in refrigerator. If having for breakfast I have microwaved for a minute or two and then top with sautéed mushrooms in olive oil and a dab of sour cream. Delish!

Food is food...if I'm in the mood for last night's leftovers, that's what I'll have for breakfast.

One of the BEST breakfasts I ever made at home was mixing leftover Thai food with stone ground grits!

It's not unusual for me to microwave a sweet potato when I'm rushed in the morning, to eat on the run. I can eat sweet potatoes plain.

You don't nuke a 'baked' potato!

I will eat the half leftover from the day before as breakfast. Salsa and some plain yogurt to top. Maybe leftover dal or chole. Or beans.

I like potatoes but they are so filling I never finish one.

I actually like COLD baked potato - especially in summer, and yes, I have had them for breakfast. If you go running, they are great to eat in a small amount about 1/2 hr before running, or if you eat a larger amount, about 1 1/2 - 2 hrs before your run.
