I have put veggies at the center of my diet. I have a commitment to eat at least 5 servings of veggies a day, and I go over that goal often.
I start with a smoothie made from a homemade veggie juice with banana, blueberries, and kefir added.

I have a salad or a vegetable soup for lunch.
Celery sticks with hummus are my snack.
Dinner has two veggies along with protein.
Often I have a small piece of something sweet for dessert.
I feel really good about the consistency of my high veggie diet. Since I'm not gaining weight, I don't measure my portions, but I know that there are 5 servings of veggies in there!
According to the USDA
Eating vegetables provides health benefits – people who eat more vegetables and fruits as part of an overall healthy diet are likely to have a reduced risk of some chronic diseases. Vegetables provide nutrients vital for the health and maintenance of your body. Most vegetables are naturally low in fat and calories.
