I love me some breakfast!

I was late to this party!!! LOL. It didn't turn out as pretty as the tutorial but holy eggtastic batman! I saw these guys on Facebook showed how to do this and there are other people demonstrating this on YouTube, so I had to attempt it. Dear me, what would we do without these resources during a pandemic or life in general. I think my fail was I imagined making it with my small omelette pan and a small tortilla but got carried away with my stuffins. So here it is:

2 eggs whipped; in the omelette pan. I put a tiny bit of mediterranean oil in, for fear of sticking. Let it set up just a little, then lay the tortilla in the still uncooked top of the egg. Once it's cooked....set up pretty thoroughly, you have to kind of guess but a few minutes, flip over and layer your tasty food on top. I chose asparagus, ham and swiss cheese. Salt and pepper. Then you roll it all up nice and neat. Eat it rolled in your hands. This one was 339 calories. Like I said I love breakfast. After 71 years on this earth I have come to understand I do better if I eat a big protein rich breakfast, my main meal at noon-1 p.m. and light meal around 6 (sometimes just like an appetizer situation) I don't know how that would have been manageable when I worked my 12 hour shift as a nurse. No worries in retirement. Sorry, I took to gloating a little there. I can't wait to try this again using different fixins'.

Today.... Here in Chicagoland we have gorgeous weather. Hossa and I will be out and about in it. I have been shoveling snow off the drive and now I'm shoveling bits back on so it melts faster. Those who follow me know I live only to bask in bright sun and gardening. This weather brings hope that very soon I will be experiencing some dirty fingernail therapy. I ordered some plants yesterday, pulled out my garden maps to work on the plan. I'm thinking about creating a green house kind of removable topper for my salad garden box. Huge dream, maybe. Extend the season a little. Dreaming......

Here's a little guy that makes me feel better about my Covid hair. (I'm a little amazed I haven't shaved my head)

    Have several irises blooming and a four-pack of plants I ordered arrived today. Gardening has kept me sane during shelter in place for sure! emoticon emoticon emoticon

    Protein first thing in the morning is helpful to curb hunger later. Your omelette looked great
    I, too, am planning a garden and will buy some seeds soon. It is a hopeful thing to do when we still have snow all around us.

    Just in from a walk here and I spied some heath already in bloom! Lovely tiny pink sprays.
    Your breakfast looks great, wish I was that ambitious early in the day but I am always too hungry to wait for anything beyond oatmeal with fruit.

    I hear you . . . I worked icu/ccu/er and you didn't always get a chance to even sit, let alone eat.

    Your omelette is to die for! I too need a lot of protein for my first meal and eggs have an extra way of keeping me full longer than other foods.

    Enjoy your sunshine and have fun with Hossa. We had a sunny day yesterday and a high of 45! It's supposed to get into the low 40s again today and the sun is trying to come out. I'm feeling your Spring fever and craving being outside to do something other than to shovel. LOL
