My day to cook this week...
Yes, much of the time whole food plant based eating means a lot of chopping. A knife that is comfortable for you is a kitchen essential. But the finished product was beautiful and tasted delicious! Noodles with oven roasted sweet potatoes, onions, zucchini and sweet bell peppers topped with Thai peanut sauce, peanuts and green onions. We ate almost all of this huge platter! Just enough left for one person tomorrow!

Served this salad along with the main dish....this is shredded beet, kohlrabi, cabbage, apple and kale with pumpkin and sunflower seeds and balsamic vinaigrette.
