Friday's Weigh In

So yesterday's weigh-in showed a 1 pound loss. So I celebrated by peeling and slicing up some Zucchini to make some Mock Apple. I know some people remove the seeds to give it that more realistic look of apple, but that is usually done to trick people to think its the fruit and not a veggie.. The seeds don't bother me when I am the only one eating it.
The skin I peeled from the squash before slicing, well, I tossed it with some oil and Parmesan and baked it till it was crunchy so that I could toss it on my salad the next day. Waste not, Want not.
Usually I toss squash peelings in the air fryer to get crispy, but getting the air fryer out of my closet just seemed too much of a hassle to me...LOL..

I also sliced some zucchini and made more zucchini lasagna to freeze for future meals, leaving me with one big zucchini left. I was going to slice it in disks and blanch then freeze for future pizza bottoms, but I may want to make more Mock Apples. I am tilting more to the mock side. emoticon (it would have been so awesome to have a Star Wars sticker in this place, definitely Darth Vader would have rocked the humor more)

    I had never heard of using zucchini that way. It makes sense though. I love zucchini lasagna! I usually just make zoodles and have them with either a bit of butter and Parmesan, or soy sauce and bell peppers.
